To edit a contact on iPhone, open Contacts, tap the person’s card, tap Edit, make your changes, and tap Done. You can add an email address, change a photo, or look for the Notes field on the edit screen.

This is Apple’s standard contact-editing sequence in its iPhone user guide.

Add or change a contact photo
Open the contact, tap Edit, then use the photo control to add or change the picture. Follow the on-screen options to choose and adjust the image.
Change your own photo or Contact Poster
Your own contact card is called My Card. Open Contacts > My Card > Edit, then tap the photo control to customize your photo and Contact Poster. Apple also lets you choose how to share your name and photo, including Contacts Only or Always Ask. See Apple’s instructions for setting up a Contact Poster.

Add an email address
On the contact’s card, tap Edit and add an email address in the email field, then tap Done. To use an address already on the card, tap its email action to start composing a message. If the card has multiple addresses, touch and hold the email action to choose which address is used by default, as described in Apple’s iPhone email instructions.

Open the contact and tap Edit, then look for Notes on the edit screen. Tap the field, enter your note, and tap Done. Apple’s current iPhone editing guide does not specify the Notes field’s exact placement or wording, so it may look different across iOS versions. Apple’s older iPod touch guide does document tapping Notes while editing a contact.

If you can’t find or edit the contact
Contacts may come from iCloud, Google, Yahoo, Microsoft Exchange, LDAP, or CardDAV. If a contact is missing, appears read-only, or seems to be stored in the wrong place, check which account supplies it. Apple’s current controls are under Settings > Apps > Contacts, where you can review accounts and choose the default account for new contacts. See Apple’s account setup instructions.

You can also edit a contact on a tablet or computer at iCloud.com, including its photo and email fields. Changes appear on devices where Contacts is enabled in iCloud settings. Apple explains this in its iCloud Contacts guide.
