Dial in a Breville espresso shot by weighing the coffee and espresso, keeping your preparation consistent, and changing one variable at a time. Start with a 1:2 coffee-to-espresso ratio, use grind size to control flow, then taste and adjust. The right settings depend on the beans and machine; the Barista Express BES870 manual’s setting 5 is a starting point for that model, not a universal Breville setting.
What you need before dialing in
- A scale: Weigh the dry coffee dose and espresso output. This makes shots comparable; a scale is useful, but no particular model is required.
- Fresh whole beans: Breville recommends fresh-roasted coffee. Different beans—and changes in their age—can require a new grind adjustment.
- A consistent setup: Choose the correct one-cup or two-cup basket for your machine, and use the same basket throughout the process. Warm and prepare the machine as its manual directs; Breville’s recipe begins with a hot-water purge through the group head.
Dialing in is a controlled adjustment process, not a search for one number that works with every bean. Breville’s dial-in guide and dial-in tutorial both emphasize adjusting the recipe to the coffee and evaluating the result.

Choose a dose and target yield
Begin with a 1:2 ratio by weight: for example, 20 g of dry coffee in and 40 g of espresso out. Breville’s espresso recipe also gives 19 g in and 38 g out as a starting double-shot recipe. These are compatible examples, not requirements for every Breville machine, basket, bean, or taste.

Set the grinder for your Breville model
Barista Express BES870
For the BES870 specifically, the Barista Express manual recommends starting at grind-size setting 5. On its selector, lower numbers are finer and higher numbers are coarser. The manual describes the target texture as fine but not powdery and gives an initial grind-amount dial position around 3 o’clock; the amount may need adjustment for the beans and basket.
Use these as BES870 starting points, not fixed settings. Basket choice, beans, and manual revisions or regional versions can affect the guidance. If you own another Breville model, follow that model’s manual instead of assuming its grinder scale or basket-fill guidance matches the BES870.

Prepare the puck consistently
Dose the same amount each time, distribute the grounds evenly, and tamp level. Follow the manual’s guidance for the tamped basket fill and grind amount. Do not use tamp pressure as a substitute for controlling dose and grind. If a shot behaves unusually, inspect and rinse the basket as directed in the manual in case residue or blockage is affecting flow.
Pull a shot and adjust one variable at a time
- Prepare the machine and basket. Warm and flush the group head as directed by your model’s manual, then fit the chosen basket.
- Weigh the dose. Use the same dry-coffee weight for each comparison and prepare the puck consistently.
- Start from the model’s suggested grind. For a BES870, begin at setting 5, then adjust the grind amount as needed to achieve an appropriate basket fill.
- Pull and measure. Start the shot, weigh the espresso, and stop at your chosen yield. Record the dose, yield, grind setting, elapsed time, and taste.
- Change grind size to correct flow. If the target yield arrives too quickly, make the grind finer. If it arrives too slowly, make it coarser. Change only one setting before pulling the next shot.
- Taste and repeat. Keep dose and yield fixed while comparing grind changes. Once flow and taste are in a good place, adjust the ratio only if you want a different style or concentration.
Breville’s dial-in guide gives 25–30 seconds as a typical target, while its recipe suggests 20–30 seconds for its starting double-shot guide. Treat time as a signal, not a pass/fail rule: the BES870 manual’s own visual extraction guidance should be read in the context of the manual version for your market, and taste remains essential. A shot that reaches a time target can still taste wrong.

Troubleshoot by flow and taste
The shot reaches the target too quickly
If the espresso runs fast and tastes thin or sour, make the grind finer for the next shot while holding dose and yield constant. A finer grind generally slows the flow. Breville also lists a slight dose increase as a possible correction, but do not change dose and grind together; first compare the grind adjustment on its own.
The shot drips or takes too long
Make the grind coarser and keep the dose and target yield fixed for the comparison. If the dose is high, reduce it slightly in a separate test. Changing one thing at a time helps identify whether grind or dose was causing the slow flow.

The shot hits the time target but tastes sour, bitter, or weak
Do not keep chasing the stopwatch. Recheck the dose and yield, then make a single recipe adjustment and taste again. Bean origin, roast, and age affect the result, so the preferred grind and ratio can change from one coffee to another. The available guidance does not establish one timing threshold that guarantees a balanced shot for every bean and Breville model.

Shots vary from one pull to the next
Keep the basket, dose, distribution, tamp, target yield, and machine preparation consistent. Record each change and result. If those steps are stable but the flow remains erratic, check the basket for residue or blockage and follow the machine manual’s cleaning instructions.
How to refine the recipe after the first good shot
Once you can repeatedly reach the target yield with controlled flow, use taste to decide whether to keep the 1:2 recipe or change it. A shorter yield produces a more concentrated style; a longer yield produces a larger, less concentrated drink. Ristretto and lungo are alternative recipe styles, not universal corrections for a shot that is extracting poorly. Adjust the yield deliberately and evaluate the new result rather than changing yield, dose, and grind all at once.
