Use the recipe’s own gram amount when it provides one; otherwise, match the ingredient and preparation to a reliable weight chart, then multiply that chart value by the number of cups you need.
Why cups do not convert to one fixed number of grams
A cup measures volume, while a gram measures mass. A cup of flour, sugar, butter, milk, or water can therefore weigh different amounts. Even the same ingredient can vary by preparation: brown sugar may be packed, flour may be sifted, and chopped or drained ingredients occupy volume differently.

For a recipe-specific result, use the gram weight printed with that recipe whenever available. Published charts are useful when a recipe gives only volume, but their figures are ingredient-specific estimates rather than universal conversions.

| Ingredient and preparation | Volume | Weight |
|---|---|---|
| All-purpose flour | 1 cup | 120 g |
| Granulated white sugar | 1 cup | 198 g |
| Packed dark or light brown sugar | 1 cup | 213 g |
| Butter | 1/2 cup (8 tablespoons) | 113 g |
| Fresh milk | 1 cup | 227 g |
| Water | 1 cup | 227 g |
Keep the chart’s ingredient description intact: 1 cup of packed brown sugar is not interchangeable with a cup measured another way. The same chart notes that its values can differ slightly from gram amounts on recipe pages because of rounding and similar factors; when a recipe gives its own weight, use that figure for that recipe.
Calculate a different amount from the chart
Once you have the right ingredient-specific grams-per-cup value, multiply it by the number of cups. For a fraction of a cup, multiply by that fraction.

- Two cups of all-purpose flour: 120 g × 2 = 240 g, using King Arthur Baking’s chart value.
- Half a cup of granulated white sugar: 198 g × 1/2 = 99 g, using the same chart’s value.
These calculations scale the chart’s listed value; they do not override a different gram quantity supplied by the recipe author.

Weigh ingredients accurately
- Put an empty bowl on the kitchen scale and tare it so the display returns to zero.
- Add the ingredient until the scale reaches the recipe’s gram target. If converting from cups, use the ingredient-specific chart value and calculation.
For all-purpose flour, King Arthur Baking uses 120 g as its cup-equivalent. Its flour guidance says that, in its example, being within 5 g above or below a written flour amount will not affect the recipe; that is guidance for the example, not a guarantee for every ingredient or recipe. See its flour-measuring article, published October 13, 2023.

If you do not have a scale, measure by volume carefully
Choose the measuring tool suited to the ingredient. King Arthur Baking’s measurement guide advises using a dry measuring cup for dry ingredients and a liquid measuring cup for liquids. Spoon dry ingredients gently into the cup and sweep off the excess; for liquids, set the cup on a level surface and read the line at eye level.
Measure flour without packing it
Flour is easy to compress, which can put more into a cup than intended. King Arthur Baking’s flour-specific method is to fluff the flour, spoon it into the measuring cup until it overflows, then level it with a straight edge. Do not dig the cup into the flour bag or press flour down into the cup.

Why conversion charts can disagree
Before choosing between two values, check whether they describe the same thing:
Quick wins for a faster PC:
Repair Windows errors before they cause bigger problemsFix Now →Fix the driver behind crashes, sound loss and screen glitchesFind Drivers →- Ingredient and variety: Confirm the ingredient is the same, rather than assuming that every flour or sugar is equivalent.
- Preparation: Look for terms such as sifted, packed, chopped, or drained. Preparation can change how much mass fits into a cup.
- Cup standard and region: Recipes may use different cup definitions. The King Arthur Baking references do not establish one cup standard for every international recipe, so check the original recipe’s region or stated cup size rather than assuming a standard.
- Measuring technique: Scooping or compressing dry ingredients can produce a different weight from spooning them in and leveling.
- Rounding: A chart may round its values, and a recipe may list a slightly different weight. King Arthur Baking explicitly notes this kind of discrepancy in its chart.
When the recipe itself includes grams, follow those for that recipe. If it gives cups only, choose a reference that matches the ingredient, preparation, and cup definition as closely as possible.
