Clean food residue from the cooking cavity separately from mineral scale in the steam system. For both jobs, follow the instructions for your exact oven model: the approved descaler, quantity, program, rinse steps, and surface-care rules differ by manufacturer and sometimes by model.
Cleaning the cavity and descaling are different jobs
A descaling program is meant to remove mineral deposits from parts of the water and steam system; it does not necessarily clean the oven interior. Wolf explicitly distinguishes steam-system descaling from cavity cleaning. Use the cleaning method permitted by your oven’s manual to remove food spills and residue.

Do not assume a descaling product is suitable as an oven cleaner, or that a cavity-cleaning cycle will descale the steam circuit. Treat these as separate maintenance tasks.

- Identify the make and exact model. Find the operating manual for that model and region. Manufacturer support pages can help, but may cover only selected models.
- Check the manual’s preparation and safety instructions. Confirm whether the oven must be cool, whether racks or accessories must be removed, and whether gloves or a particular cloth or sponge are required.
- Confirm the approved descaler and amount. Use only a product the manual specifies or approves. Check compatibility and quantity before adding it to a tank, drawer, or evaporator dish.
- Read the entire descale sequence first. Note how the solution is loaded, which maintenance program to select, how many rinses are required, and what must be emptied or wiped afterward.
How to descale the steam system
- Prepare the solution exactly as directed for your model. Do not borrow another brand’s dilution, volume, or tank-loading instructions.
- Run the dedicated Descale or equivalent program if the manual specifies one. Follow the display prompts and let the process complete.
- Complete every required rinse. Some appliances call for a fresh-water refill and a second rinse; others use a different sequence. Do not skip a rinse or stop at the first apparent completion prompt.
- Remove leftover liquid only as instructed. Depending on the design, cleanup may involve a tank, drawer, evaporator dish, or cavity. One BSH manual, for example, instructs users to remove liquid with a cleaning sponge and then wipe the cavity with a soft cloth; that procedure should not be assumed to apply to other models.
Some programs cannot be interrupted. Wolf says this of its process, so check your own manual and allow enough time to follow the full sequence.

How to clean the cooking cavity
Use the oven manual’s approved surface-care method to remove food soil. Where permitted, use only approved cleaners and non-abrasive tools. Keep descaler away from controls and delicate surfaces unless the manual specifically directs otherwise. Wipe loosened residue away, then dry or ventilate the cavity if instructed.
Why manufacturer instructions cannot be swapped
Official procedures differ in the descaler, amount, loading point, program, rinse sequence, and cleanup. These examples show why instructions should be treated as model-specific rather than combined into a universal recipe:

Vinegar is not a safe universal substitute: Wolf warns against it for its convection steam ovens because it may damage the unit and lacks the protection provided by its recommended solution. That warning is specific to Wolf; check your own manufacturer’s instructions rather than applying it to every brand.

Water hardness and how often you use steam can affect scale buildup. Follow the oven’s maintenance reminder and manual instead of setting a calendar interval for all steam ovens. For context, Wolf describes 6–18 months as a typical interval for its convection steam ovens, with use and water hardness affecting frequency; that guidance is not transferable to other brands or models.

If the program does not finish as expected
- The oven asks for more water or another rinse: Follow the display and manual, using fresh water where directed. Some procedures require multiple rinses.
- You are unsure how much descaler to use: Stop before pouring it in and check the exact model’s manual and the descaler’s instructions. Do not estimate or copy another model’s recipe.
- You cannot find a compatible descaler: Check the manufacturer’s model-specific support or accessories information. NEFF and BSH warn that other descalers may damage their appliances, so do not substitute without confirmation.
- Liquid remains after descaling: Use only the cleanup steps specified for that model; the evaporator dish, tank, and cavity may require different handling.
