Drain the potatoes well, mash them, then fold in measured sour cream a little at a time. Wait until it is incorporated before deciding whether to add any milk or broth; adding all the liquid at once makes it harder to control the finished texture.
How to add sour cream without loosening the potatoes
- Cook the potatoes until tender. Drain them thoroughly before mashing. Two recipes that include sour cream call for draining the cooked potatoes first: MedlinePlus’s mashed potatoes and Cleveland Clinic’s creamy mashed potatoes.
- Mash before adding the sour cream. Both recipes add dairy after draining and mashing. A hand masher is sufficient for this basic method.
- Fold in sour cream gradually. Begin with a measured amount, mix it in, and check the consistency before adding more.
- Hold back other liquids until the sour cream is incorporated. If the potatoes still need loosening, add milk or broth sparingly and reassess after each addition.
Adding the sour cream gradually is a practical way to adjust the texture; the recipes below use different quantities, and none establishes a universal ratio.

How much sour cream should you use?
Use recipe quantities as starting points, not guaranteed proportions for every batch. Potato variety, how thoroughly the potatoes were drained, and the texture you prefer can all affect how much added liquid the mash can take.

| Recipe | Potatoes | Sour cream | Other liquid |
|---|---|---|---|
| MedlinePlus | 1½ pounds | 2 tablespoons of low-fat plain yogurt or sour cream | ½ cup broth or milk |
| Cleveland Clinic (published March 21, 2023) | 3 pounds | ½ cup reduced-fat sour cream | ½ cup skim milk |
These recipes show why copying a single sour-cream-to-potato ratio can mislead: their proportions differ. Follow a recipe you like, or add sour cream gradually and judge your own batch rather than treating either quantity as a rule.

Should you warm the sour cream first?
Warming sour cream with butter is one published option. Food Network’s sour cream mashed-potatoes recipe warms the sour cream and butter, then folds that mixture into warm mashed potatoes. The other cited methods add dairy after mashing without making warming a required step. The available recipes do not show that warming prevents runniness better than adding sour cream directly.
Choose the warm mixture if it suits your workflow or the recipe you are following. For easier texture adjustment, either way, add it in stages and avoid pouring in extra milk or broth before you see how the sour cream affects the mash.

What if the mashed potatoes are already runny?
Stop adding liquid and avoid assuming that a specific thickener or extra cooking step will reliably fix the texture. The cited recipes explain how to drain potatoes before adding dairy; they do not provide a tested rescue method for mash that is already too loose. Draining beforehand helps limit excess moisture, but it cannot remove liquid already mixed into the potatoes.

A potato ricer or food mill is optional if you want a very smooth texture. Epicurious recommends one for very smooth mashed potatoes, but it is not the key moisture-control step. For this purpose, drain the potatoes well and adjust the sour cream and any additional liquid gradually.
