Researchers engineered experimental potato tubers to produce much more β-carotene by adding three bacterial genes and directing their activity to the tuber. In selected lines, β-carotene reached 47 µg per gram of dry weight—about 3,600 times the comparison level reported in the 2007 study. That is a measured composition result in research plants, not evidence that the potatoes are sold commercially or improve vitamin A status in people.
How does a transgenic potato boost carotenoid levels?
Potato tubers naturally contain carotenoids, a group of pigments that includes β-carotene. In the 2007 proof-of-concept study, researchers added a three-gene pathway from the bacterium Erwinia to help tubers make more of these compounds. The genes encode enzymes that move a precursor, geranylgeranyl diphosphate, toward β-carotene.

- CrtB encodes phytoene synthase.
- CrtI encodes phytoene desaturase/carotene isomerase.
- CrtY encodes lycopene β-cyclase.
The researchers placed the genes under control of the potato tuber-specific patatin promoter. This targeted expression to the storage tuber rather than turning the pathway on throughout the plant. The paper reports that tuber-specific golden lines did not show appreciable changes in leaf carotenoid content or visible leaf morphology. The 2007 PLOS ONE study examined 86 independent transgenic lines containing six promoter-and-gene combinations.
How much β-carotene did the engineered potato contain?
Two selected lines, pP-YBI 17 and pP-YBI 30, showed the standout golden phenotype. In the reported material, total carotenoids rose about 20-fold to 114 µg/g dry weight, while β-carotene rose about 3,600-fold to 47 µg/g dry weight. The tubers looked deep yellow or golden.

These are concentrations per gram of dry tuber, not fresh-weight values for a retail potato. The fold changes describe the study’s comparison, not a guaranteed level in every engineered plant or a serving-size nutrition claim. Only two of the nine lines carrying the full tuber-specific construct showed the striking phenotype; the result was not uniform across the transformed plants.
Why did the result depend on the gene combination?
Adding a carotenoid gene did not automatically produce the same outcome in every line. The strongest β-carotene accumulation was associated with all three pathway genes under tuber-specific control. The study found that constitutive expression could interfere with transformation success and leaf carotenoid accumulation, helping explain why the researchers focused expression on tubers.

A later analysis of 24 lines and six transgene combinations likewise reported that high β-carotene accumulation required high expression of all three genes under the Pat promoter. The 2010 Plant Physiology analysis examined transcriptional and metabolic patterns associated with the golden phenotype.
How does this approach compare with other engineered potatoes?
Other studies also sought to increase potato carotenoids, but they used different genes or mechanisms. Their figures should not be ranked against the three-gene result by fold change alone: cultivars, constructs, baseline levels, storage conditions and measured compounds differ.

Does golden potato provide vitamin A?
β-carotene can be converted to vitamin A, but the 2007 paper’s direct finding was the amount of β-carotene in experimental tubers. Its estimate of potential dietary contribution relied on an assumed β-carotene-to-retinol conversion ratio. The authors explicitly noted that data on the bioavailability of β-carotene from potato were unavailable. The study therefore does not demonstrate that eating these potatoes improves vitamin A status or health in people.

The named golden lines were experimental research plants, described as having been transformed and vegetatively propagated. The cited studies do not establish that these lines are available to consumers or gardeners, or that they have regulatory approval for sale. Availability and regulatory status can depend on jurisdiction; anyone evaluating a current claim should check the relevant official regulator.
