There is no single official refrigerator-storage time for every cake. FoodSafety.gov’s cold-storage chart does not list a duration for ordinary cake, so a blanket claim such as “all cake lasts three to four days” is not an official cake-specific rule. For cake with perishable fillings or toppings, use safe time-and-temperature handling and follow the recipe or package directions.
Why there isn’t one refrigerator time for every cake
Cake can mean a plain sponge, a frosted layer cake, a cheesecake, or a cake filled with custard or cream. Their ingredients and handling differ, so a single duration cannot reliably answer how long every cake keeps. FoodSafety.gov’s Cold Food Storage Chart, reviewed September 19, 2023, gives durations for many foods but does not specify one for ordinary cake.

That means the common three-to-four-day advice for some other leftover categories should not be presented as an official limit for cake. Check the cake’s label or recipe for storage instructions. Safety depends on its ingredients, how it was handled, and the temperature; quality, such as dryness or stale texture, is a separate concern.
Does cake need to be refrigerated?
Use the recipe or package directions for the particular cake. Cakes with perishable ingredients—such as custard, cream, or cream cheese—need especially careful handling. FoodSafety.gov’s general guidance is to refrigerate perishable food promptly; it does not provide a separate cake-specific storage duration.

How to handle cake safely in the refrigerator
- Check the temperature. Keep the refrigerator at or below 40°F (4°C). FoodSafety.gov recommends checking it with an appliance thermometer. Its 4 Steps to Food Safety page, reviewed September 18, 2023, states: “Your refrigerator should be set to 40°F (4°C) or below and your freezer to 0°F (-18°C) or below.”
- Chill perishable cake promptly. Refrigerate perishable food within two hours, or within one hour if the surrounding temperature is above 90°F (32°C), according to the same FoodSafety.gov guidance.
- Cover it. A covered container helps protect cake quality and limit exposure. It does not make the cake safe for longer than its ingredients, handling, and temperature allow.
- Follow the specific instructions. If the label or recipe gives a storage method or time, use that direction for the cake you have.
FoodSafety.gov identifies 40°F–140°F (4°C–60°C) as the “danger zone,” where bacteria that cause food poisoning multiply quickest. If the cake’s time or temperature history is uncertain, smell and appearance alone cannot establish that it is safe; when handling may have been unsafe, discard it.
How long can cake sit out?
For a cake with perishable ingredients, apply the general two-hour rule: refrigerate it within two hours, or within one hour when the surrounding temperature is above 90°F (32°C). These are safe-handling limits for perishable food, not a claim that every kind of cake becomes unsafe at the same moment. Use the cake’s recipe or package instructions where available.

What if the refrigerator loses power?
Power-outage guidance is different from routine refrigerator shelf life. FoodSafety.gov’s Frozen Food and Power Outages: When to Save It and When to Throw It Out, reviewed August 8, 2024, says to keep bread, rolls, cakes, muffins, quick breads, and tortillas after they have been above 40°F (4°C) for more than two hours. It separately says to discard cheesecake and cream-filled pastries in that situation.

For frozen cake during an outage, the same chart says cakes without custard fillings may be refrozen if they still contain ice crystals and feel cold as if refrigerated. Cakes with custard or cheese filling should be discarded if they have been above 40°F (4°C) for more than two hours. These decisions apply to outage conditions; they do not establish how long cake lasts during ordinary refrigerated storage.

Can you freeze leftover cake?
The FoodSafety.gov cold-storage chart does not give a general freezer duration for ordinary cake. Follow the cake’s recipe or package directions. In a power outage, use the chart’s specific guidance for frozen cake: the filling type and whether the cake still has ice crystals and feels refrigerator-cold determine whether it may be refrozen.
