Neither label alone tells you when an item was made or whether it was prepared from scratch. For freshness and selection, compare the specific item’s bake or date code, production method, packaging and available range—not just where it is displayed.
What do “grocery bakery” and “in-store bakery” mean?
The terms can overlap: both kinds of products may be sold by the same supermarket. Here, “grocery bakery” refers to packaged goods in the bread aisle, and “in-store bakery” refers to products sold through the supermarket’s bakery department, counter or display. These are useful shopping categories, not proof of where every production step took place.

Which is fresher?
There is no reliable blanket winner. A bakery-counter item may have been baked recently, but it may also have been made elsewhere and finished in the store. Packaged bread may have a longer usable shelf life, but that does not establish that it was baked more recently—or that it is less fresh when purchased. The date and handling of the particular product matter more than the department label.
“Baked in store” does not always mean made from scratch
In the UK, guidance from the Food Standards Agency quoted by Sustain warns that terms such as “freshly baked,” “baked in store” and “oven fresh” may lead customers to believe a product was produced on site from basic raw materials. The guidance notes that part-baked goods packed in an inert atmosphere or frozen off-site may instead be finished in an in-store bakery. This is a UK-specific regulatory discussion, not a universal legal definition. Sustain’s account of the guidance.

What shoppers use to judge freshness
In its December 2022 announcement of an in-store bakery report, FMI — The Food Industry Association — said shoppers identified knowing when an item was baked and checking its date code as important freshness cues. Those cues are more useful for comparing two products than assuming the counter item is automatically fresher. FMI’s report announcement.

How does selection differ?
Neither format consistently offers the better range. Packaged aisles can make it convenient to compare multiple breads and other goods, while bakery counters may offer specialty or ready-to-serve items. Selection varies by supermarket, location, product category and time of day; a particular store may have a broader choice in one format than the other.
Consumer-perception figures illustrate the trade-off, but they are not laboratory measurements of product quality or shelf life. In Irish consumer research published by Bord Bia in 2018, 55% associated in-store bakery goods with freshness, compared with 21% for packaged bread-aisle goods; 45% versus 21% associated them with better quality. For value, the pattern ran the other way: 16% associated in-store bakery goods with better value for money, compared with 45% for packaged aisle goods. And 8% associated in-store bakery goods with better shelf life, compared with 63% for packaged goods. These are reported perceptions among Irish consumers in 2018, not current or universal product comparisons. Bord Bia’s Bakery Category Research.

Where do shoppers buy different kinds of baked goods?
Buying habits can depend on whether the item is a functional staple or an indulgence. FMI reported that, in its 2022 research, 78% of shoppers purchased functional bakery items at the store where they bought most of their groceries, and 51% said their primary grocery store was their main destination for in-store bakery items. For indulgent goods such as cakes, pies and store-made desserts, 24% looked to specialty bakeries, 11% to grocery stores other than their primary store, and 6% to online options. FMI also reported that 95% ate in-store bakery items at least occasionally and 63% did so weekly. These figures describe the survey findings reported with FMI’s 2022 report announcement; they do not show that one format is fresher or has a better selection in every store. FMI’s report announcement.
How to compare two products at the store
- Check the bake date or date code. Look for a clearly stated date or ask bakery staff when it was baked. If there is no information, do not infer the date from the display location.
- Look for production details. Check whether the product is described as scratch-made, baked from a part-baked product, or thawed and finished. If the label is unclear, ask what the store means by “baked in store.”
- Match the item to the texture you want. A crusty loaf, soft packaged sandwich bread and a pastry serve different purposes. “Freshness” is not the only factor in which one will suit your meal.
- Compare range and availability. Check the varieties and sizes actually available in that store; selection is not a fixed advantage of either format.
- Consider packaging and how long you need it to last. Packaging and product type affect usable shelf life. If you need bread for several days, compare the date and storage guidance rather than assuming a counter item will keep as long as a packaged loaf.
- Read ingredients and nutrition information. A bakery display does not, by itself, tell you what ingredients or nutritional profile a product has. Compare the information provided for the specific items.
What the numbers can—and can’t—tell you
The available comparisons are surveys of shopper behavior and perception, not controlled tests measuring how quickly particular breads go stale. Bord Bia’s figures reflect Irish consumers surveyed in 2018; FMI’s figures were reported in connection with its 2022 in-store bakery report. An older Cornell University study found that, on the particular shopping day it studied, 52% purchased from the in-store bakery and 32% from the store aisle. Because that study dates to 1995 and is tied to its own setting, it is historical context, not a current estimate of where shoppers buy baked goods. Cornell’s Supermarket Bakery Study.
