Store-bought pesto depends on the product. Keep a refrigerated product cold, including when unopened. If a sealed jar is shelf-stable but says “refrigerate after opening,” refrigerate it once opened. Follow that package’s stated use-after-opening period; there is no single duration established for every brand and formulation.

How long does homemade pesto last in the fridge?
Use homemade pesto within three days for the practical, conservative target. Oregon State University Extension’s pesto recipe, updated November 2022, says to refrigerate leftovers within two hours and use them within three days or freeze them.

A separate Oregon State Extension refrigeration guide, revised July 2024, says pesto and flavored oils should not be stored for more than four days. Treat four days as an upper limit, not a guarantee of safety or freshness; the recipe’s shorter three-day window is the better everyday rule.
How long does opened store-bought pesto last?
Use the opened-jar directions on the specific product. Check whether it needs refrigeration and how soon it should be used after opening; products differ in formulation and processing, so one jar’s instructions should not be applied to another.

A 2021 study, “Domestic Use Simulation and Secondary Shelf Life Assessment of Industrial Pesto alla genovese”, tested two commercial shelf-stable pestos whose labels indicated five days after opening. In a simulation involving five households and two use scenarios, researchers observed microbiological stability through at least 20 days for those products. That limited result does not establish a 20-day storage period for other pestos and is not a reason to disregard your jar’s label.

Yes. Freezing is a practical way to keep pesto longer than the few days recommended for refrigeration. Oregon State Extension recommends freezing pesto in small portions, such as in an ice cube tray or muffin tin. Once the portions are firm, transfer them to an airtight freezer container.

Oregon State’s recipe gives up to one year in the freezer as a use-planning guideline. That is not a point at which continuously frozen pesto suddenly becomes unsafe: FoodSafety.gov’s Cold Food Storage Chart, last reviewed September 19, 2023, explains that food kept continuously at 0°F (-18°C) or below remains safe indefinitely, although quality can decline. Pesto is not separately listed in the chart, so the one-year figure is the pesto-specific extension guidance.

Refrigerate pesto within two hours at room temperature. If it has been in temperatures above 90°F (32°C), the general limit for perishable food is one hour. These are FoodSafety.gov’s general rules for refrigerating perishables, and Oregon State’s pesto recipe also specifies refrigeration within two hours.

Do not rely on smell or appearance to decide whether pesto left out too long is safe. Oregon State Extension warns that mishandled food may be unsafe even when it looks or smells normal. FoodSafety.gov also advises never tasting food to determine whether it is safe, including in its power-outage food-safety guidance.
