Corn vs. Flour Tortillas for Enchiladas: Which Works Better?

Corn tortillas are the strongest general choice for enchiladas, while flour tortillas remain a valid option for recipes and preferences that suit them.

Corn tortillas are the best general-purpose choice for enchiladas. Their savory corn flavor suits a sauced dish, and they can be lightly fried or dipped in sauce before filling. Flour tortillas are also a valid option—especially when a recipe calls for them or you prefer their wheat flavor and flexible texture. The better choice depends on the style you want, not a universal test of authenticity.

How corn and flour tortillas differ in enchiladas

What matters Corn tortillas Flour tortillas
Flavor and ingredients Made from masa, water, and ground nixtamalized corn. Nixtamalization contributes a savory flavor and gives the tortilla its structure, according to Food Network. Typically made with wheat flour, water, salt, and fat. Food Network notes that fat helps flour tortillas stay flexible when cooled.
Preparing for sauce Barbara Sibley, CEO and chef-owner of La Palapa and La Palapa Taco Bar, told Food Network that corn tortillas “withstand being lightly fried and smothered in salsa and are the preferred tortilla for enchiladas.” Can be used in enchiladas, though the cited sources do not establish that they behave identically to corn tortillas during frying or saucing.
Recipe and regional context Widely used for enchiladas across much of Mexico. More prominent in northern Mexican cuisine; some enchilada recipes use them.
Dietary starting point Generally the better starting point for a gluten-free diet, but check the package’s processing statement. Wheat tortillas are unsuitable for people with celiac disease or a wheat allergy.

Choose corn for the classic sauced preparation

Corn tortillas are the stronger default when you want the flavor and handling associated with a traditional sauced enchilada. Sibley’s recommendation, quoted in Food Network’s May 15, 2025 article, is specifically about tortillas that can take light frying and salsa. It is practical culinary guidance, not a claim that every enchilada must use corn.

Preparation varies by recipe. You can lightly fry corn tortillas or dip them in sauce before filling. The National Park Service also describes using slightly stale corn tortillas dipped in sauce as an enchilada base. Its page includes a recipe for making and warming corn tortillas, but explicitly says that thicker style is not suitable for enchiladas; it should not be mistaken for an enchilada-specific tortilla recipe.

Use flour when it suits the recipe or your preference

Flour tortillas are a genuine alternative, not automatically a mistake. A University of Wyoming Extension handout describes enchiladas made with either flour or corn tortillas, and King Arthur Baking lists enchiladas as a use for its 50/50 corn-and-flour tortilla recipe. These examples show that recipes can use alternatives; they do not demonstrate identical results in the pan or oven.

Choose flour if the recipe specifies it, or if you prefer its wheat flavor and flexible texture. A 50/50 corn-and-flour tortilla is another recipe-backed option if you want characteristics of both. That recipe does not establish that a comparable store-bought blend is widely available.

Regional style is context, not an authenticity test

Corn is widely used for enchiladas across much of Mexico, while flour tortillas are more prominent in northern Mexican cuisine. That regional context helps explain why both choices appear in recipes; it does not make every flour-tortilla enchilada inauthentic.

Check the label for gluten and wheat

Corn is generally the more suitable starting point if you need to avoid gluten, but do not rely on the word “corn” alone: check the package’s processing statement and ingredient information. Wheat flour tortillas are not suitable for people with celiac disease or a wheat allergy. If you have either condition, follow the guidance of your clinician and the product labeling you rely on.

What nutrition figures can—and cannot—tell you

Food Network reports figures from the USDA nutrient database of 105 calories for two corn tortillas weighing 48 g total, compared with 147 calories for one flour tortilla weighing 48 g. The total weights match, but the number and size of tortillas differ. This is not a one-tortilla-to-one-tortilla comparison or proof that one type is healthier overall; for choosing an enchilada tortilla, flavor, recipe, and dietary needs are more useful considerations.
