Google explains that when you sign in to a Google Account through a service such as Gmail, Chrome may ask whether you also want to sign in to the browser. The Don’t sign in preference keeps Chrome signed out in that situation. The documented path is for the computer interface; labels and placement can vary by Chrome version and platform. These are the choices described in Google’s desktop help. An administrator policy can affect which choices are available on managed Chrome.
If Chrome is already signed in, sign out separately
Changing the preference controls later sign-in behavior; it does not end an existing Chrome browser sign-in by itself. To sign out now, open the profile menu and choose Sign out of Chrome. Google documents this as a separate action. Google Chrome Help: Sign out of Chrome – Computer.

Saved passwords filling in on a website: Google Password Manager’s Sign in automatically setting applies to saved credentials on supported websites and apps. Turn it off if you want to confirm before using saved credentials; it does not control whether Chrome itself signs in. Google Chrome Help: Manage passwords in Chrome – Computer.
-
Prompts to sign in to a website through an identity provider: Third-party sign-in prompts are a separate feature, and the site or identity service may also affect what happens. They are not controlled by Chrome’s browser sign-in preference. Google Chrome Help: Learn about third-party sign-in – Android.
If the setting is missing or locked
On a work- or school-managed browser, an administrator may control Chrome browser sign-in with the BrowserSignin policy. That policy can disable, enable, or require browser sign-in, so the preference may be unavailable or not changeable. Contact your organization’s administrator if you cannot adjust it. What this setting does not guarantee
The preference addresses signing the Chrome browser into your account when you sign in to a Google service. It does not establish that every separate Google website session will behave the same way after you sign out of Chrome. Clearing cookies is not the direct fix for browser sign-in: it can affect website sessions without changing this preference.
