Yes. In a 2026 laboratory study, researchers engineered lettuce chloroplasts to produce porcine myoglobin, a muscle protein associated with meat’s color and sensory properties. The result is a proof of concept for producing a potential food ingredient in a plant—not lettuce that grows meat, a ready-to-eat product, or evidence that the approach is commercially viable.
What did the researchers make?
The team used chloroplast transformation to express porcine myoglobin in lettuce and tobacco, and bovine myoglobin in the green alga Chlamydomonas reinhardtii. The authors describe the lettuce result as the first known expression of a heterologous hemoprotein in lettuce. Their paper, “Sustainable production of myoglobin meat protein in plant chloroplasts,” was published in Frontiers in Plant Science on 6 August 2026; the article page records a correction dated 10 August 2026. Myoglobin is an oxygen-binding hemoprotein found in vertebrate muscle. It is one component that contributes to meat’s color and sensory qualities. The experiment produced the protein in plant cells; it did not create muscle tissue or a complete meat substitute.

How much myoglobin did the lettuce produce?
The study estimated that porcine myoglobin made up 1.5% of total soluble protein in lettuce. It also reported a lettuce yield of 48 ± 2.6 milligrams per kilogram of fresh weight, or 810 ± 60 milligrams per kilogram of dry weight.

- Cut-and-Come-Again Harvesting: Loose leaf and butterhead varieties allow repeated harvesting throughout the season, providing continuous fresh greens for salads, sandwiches, and wraps while reducing waste and grocery trips.
These figures describe different things: the percentage is a share of the plant’s measured soluble protein, while the per-kilogram figures describe yield relative to crop weight. They should not be treated as interchangeable measures or as evidence of commercial output.
How did lettuce compare with the other plant host?
In tobacco, the study reported porcine myoglobin accumulation at 2.7% of total soluble protein—higher than the 1.5% estimated in lettuce. Lettuce’s significance is that it is an edible crop host tested in the study, not that it produced more protein than tobacco.

The researchers also assessed heme binding in purified protein from tobacco leaves: approximately 35%, compared with 80% for the E. coli-expressed protein used as a comparison. That result is for purified tobacco-derived protein, not lettuce, and does not establish the heme-binding performance of myoglobin from the lettuce plants.

No. The work demonstrates production of one animal protein in lettuce chloroplasts, not meat tissue, a nutritionally complete food, or a substitute ready to replace meat. The researchers propose plant-produced myoglobin as a possible ingredient for plant-based meat products, but present the work as a foundation for future food applications.

The authors say yields need further optimization to match animal muscle. They also identify heme availability as a possible bottleneck. The study does not establish commercial-scale production, production cost, market availability, or environmental savings for this system.
Is engineered myoglobin lettuce safe to eat or approved?
The fact that researchers used lettuce as an edible host does not mean that the engineered plants are approved or suitable for consumption. The available sources do not establish a product-specific regulatory determination for the lettuce line described in the study.

What would need to happen before this becomes a food ingredient?
The study is an early technical demonstration, not a commercial product announcement. The authors call for yield optimization, and their results leave practical questions about production and food use unanswered. Before any such ingredient could be evaluated as a real food product, developers would need to establish relevant production performance and address food-safety and regulatory requirements for the specific plant line and intended use.
Imperial College London described plant chloroplasts as a possible production platform alongside microbial fermentation, but that is a prospective application rather than evidence of established scale or commercial advantage. Read Imperial College London’s account.
