Tartaric acid delayed setting in laboratory tests of calcium sulfoaluminate belite (CSAB) cement, giving the material more time before it began to harden. In the 2022 study, an appropriate dosage extended initial setting time from 5 minutes to as much as 154 minutes; at dosages of 0.5% or less, the authors reported little effect on strength through two years. Higher amounts affected strength development. The finding concerns specific CSAB cement mixtures—not ordinary Portland cement, and not a general recipe for construction.
What the study found
A 2022 paper in Construction and Building Materials examined tartaric acid in CSAB cement composites from the fresh state through two years. The authors found that tartaric acid delayed setting more strongly than the comparison retarders they tested: citric acid, sodium gluconate, borax, and molasses. Their results show a useful balance in the tested mixtures: more time before initial set at suitable dosages, with strength outcomes depending on how much acid was added. | Reported tartaric acid dosage | Finding in the 2022 CSAB cement study |
|---|---|
| No more than 0.5% | The authors reported little effect on strength from 2 hours through 2 years. |
| No more than 0.75% | At a suitable dosage in this range, initial setting time increased from 5 minutes to as much as 154 minutes without compromising long-term strength. |
| 1% or more | The authors reported significant effects on strength development. |
These are results for the study’s mixtures, not universal dosage limits. They do not specify how every cement formulation, water content, temperature, or jobsite condition would respond.
Does tartaric acid make cement stronger?
Not by itself, and not at every dosage. The main finding is that suitable amounts delayed setting while preserving long-term strength in the CSAB composites tested. At no more than 0.5%, the authors reported little effect on strength over the period they studied; at 1% or more, strength development was significantly affected. The evidence supports a dosage-dependent effect, not a claim that adding the acid generally increases cement strength.

What does “wine-derived” mean?
Tartaric acid is a chemical that can be produced from waste generated by wine or juice production. The study points to that as a possible source, linking a potential industrial byproduct to a cement additive. It does not establish that the tartaric acid used in the experiments was recovered from wine or juice waste, nor does it demonstrate a commercial supply chain or lifecycle-emissions benefit.
Why test this in CSAB cement?
Calcium sulfoaluminate belite cement is a distinct cement type from ordinary Portland cement. The paper identifies rapid setting as a barrier to wider use of CSAB cement, which makes a retarder potentially useful: extending the initial setting window may ease handling of the tested material. But a result for CSAB cement composites cannot be assumed to apply to Portland cement or to every CSAB formulation.

Why other tartaric-acid cement findings differ
Tartaric acid does not have one universal effect across all materials called cement. Earlier studies examined glass-ionomer dental cement, which has a different chemistry from structural CSAB cement. A 1979 study reported that tartaric acid in optimum proportions accelerated setting and produced maximum cement strength, while excess acid retarded reaction and weakened the material. A 1988 rheological study found that an intermediate amount of (+)-tartaric acid first created a lag in setting and then a sharp rise in viscosity, extending working time and sharpening the set. Those dental-material findings are not direct evidence for structural CSAB cement; together, they underscore that material chemistry, concentration, and acid form matter.

What the result does—and does not—justify
The study provides laboratory mixture evidence over a two-year observation period. That is meaningful for the tested composites, but it does not establish performance across job sites, all formulations, or service lives longer than the period observed. It also is not a practical instruction to add food-grade or retail tartaric acid powder to concrete: the paper does not verify consumer products, a construction-suitable specification, a commercial formulation, or a field dosage.
