A Guide to German Sausages: Bratwurst, Weisswurst, and Beyond

From grill-ready Bratwurst to Bavarian Weisswurst and regional Currywurst, German sausage is a diverse family shaped by place and processing.

German sausage is not one style: regional recipes and different production methods produce everything from grill-ready Bratwurst to gently heated Weisswurst and spreadable Leberwurst. There is no settled official total of varieties, so the most useful way to navigate them is by how they are made, where they come from, and how they are served.

How German sausages are classified

German sausage names can describe a recipe, a region, or a production method. The production categories explain important differences in texture and handling; they do not replace the directions on a particular product’s package.

Brühwurst: cooked or scalded sausage

Brühwurst is made from finely comminuted meat, fat, salt, spices and water or ice, then heat-treated after filling. Munich Weisswurst is a white Brühwurst made with cooking salt rather than nitrite curing salt, according to the Bavarian food authority. This broad category includes sausages with very different ingredients and regional customs.

Kochwurst: cooked sausage

Kochwurst includes products made with ingredients that are cooked during production. Blutwurst (blood sausage) and Leberwurst (liver sausage) are familiar examples. Their textures range from sliceable to spreadable.

Rohwurst: raw, fermented or dried sausage

Rohwurst is salted and may be fermented, dried or cold-smoked. The term describes processing rather than a single flavor or shape. A general sausage reference notes that the three categories are useful guides, not an exhaustive inventory of every regional product.

Bratwurst and Weisswurst: the key differences

Sausage Style and regional association How it is prepared Common serving
Bratwurst A family of regional sausages; meat, texture, seasoning and shape vary. Typically pan-cooked or grilled. Often in bread with mustard, or with sauerkraut or potato salad.
Weisswurst White Brühwurst associated with Munich and Bavaria. Heat gently in hot water just below a boil; avoid letting the casing split. Traditionally served before noon with sweet mustard and pretzels.

In short, Bratwurst is usually cooked directly on a pan or grill, while Weisswurst is a particular Bavarian white sausage that is gently warmed. The before-noon meal is a custom, not a universal rule for when Weisswurst may be eaten.

German sausage varieties to know

Thüringer Rostbratwurst

This is a regional grilled Bratwurst from Thuringia. Michelin’s 2019 guide describes it as a protected geographical indication and cites a historical reference from 1404. Because those legal and product-standard details can depend on the current specification, consult the official EU product specification before treating a particular ingredient or origin threshold as a current legal requirement.

Blutwurst is cooked blood sausage, with recipes and regional names that vary. One familiar serving is the Cologne dish Himmel und Erde, pairing warm Blutwurst with apple sauce and mashed potatoes.

Leberwurst

Leberwurst is a liver sausage that is often soft enough to spread. Recipes and seasonings differ by region; a straightforward serving is cold on bread with mustard and pickles.

Currywurst is a dish, not one fixed sausage

Currywurst consists of sausage pieces served with tomato-based curry sauce and curry powder, but the sausage base differs by region. EDEKA contrasts Berlin versions made with fried Brühwurst, with or without casing, with Ruhr-area versions made from cooked, sliced Bratwurst. If you are choosing a sausage for homemade Currywurst, the regional style you want is a better guide than looking for one universally correct sausage.

How many kinds of German sausage are there?

There is no settled official total in the sources reviewed. Michelin published an estimate of about 1,200 types in 2019, while GermanFoods says close to 1,500 varieties without stating a publication year on its page. Those conflicting estimates are not a verifiable national census. The accurate takeaway is that Germany has a very large number of regional varieties, with no established official count.

Choosing and handling a sausage

  • For grilling or pan-cooking: choose a Bratwurst, checking the product directions for cooking time and whether it is raw or already heat-treated.
  • For a gentle hot-water preparation: choose Weisswurst and warm it below a boil rather than treating it like a grill sausage.
  • For a Currywurst meal: choose Berlin-style Brühwurst or Ruhr-style Bratwurst to match the regional preparation.
  • For a cold spread: Leberwurst is a common bread topping; product-specific storage directions still apply.

Brühwurst has a limited shelf life even under refrigeration, according to the Bavarian food authority. Keep the product refrigerated as directed, respect its use-by date, and follow the manufacturer’s storage and preparation instructions; category names alone do not establish safe handling for every item.
