In the 2022 study, the researchers reported 80–97% yields of the desired product and at least 93% enantiomeric excess across the tested conditions. These results apply to the specific reaction and mixtures studied—not to food production or reactions inside living cells.
What the researchers demonstrated
Tobias Schnitzer, Jonas W. Rackl and Helma Wennemers designed a short peptide catalyst to promote stereoselective carbon–carbon bond formation in varied chemical environments. Their study, published in Chemical Science in 2022, examined reactions between aldehydes and nitroolefins, including a representative conjugate-addition reaction. The authors asked whether a peptide catalyst could remain effective when other molecules in a mixture might interfere with the catalyst, reactants or intermediates.

The catalyst is identified as H-DPro-αMePro-Glu-NHC12H15. It is a designed synthetic peptide, not an enzyme or a naturally established catalyst. The work is reported in the Royal Society of Chemistry paper “Stereoselective peptide catalysis in complex environments – from river water to cell lysates”, first published on 14 June 2022 in volume 13, pages 8963–8967. The journal marks the article open access.

Milk and beer were laboratory reaction media, not products being made, preserved or treated. The study’s highlighted biological matrix was cell lysate—material obtained from disrupted cells—not intact, living cells. The findings therefore show that the catalyst could perform the studied reaction in certain complex mixtures; they do not demonstrate food or beverage applications, or catalysis inside a living organism.

Chemistry World’s account names a varied set of tested media: waters from different sources, milk and milk substitutes, fruit and vegetable juices, coffee, tea, honey solution, soft drinks, alcohol, vinegar and olive oil. It also reports activity in beer and cell lysate. These are specific reported test conditions, not evidence that the catalyst will work in any arbitrary liquid or mixture.

Why the peptide’s structure matters
The authors connect the catalyst’s performance to its conformation. In particular, they describe the α-methylproline residue as helping control the trans/cis ratio of a tertiary amide and contributing to a conformationally well-defined peptide. In practical terms, the design aims to keep the small catalyst in a useful arrangement for steering the reaction toward a preferred product stereochemistry, even in media containing other potentially interacting molecules.

The study is not a head-to-head comparison with enzymes, nor does it establish that this catalyst is naturally present or available for routine use. Its significance is narrower: it demonstrates that a tailored short peptide can catalyze a stereoselective organic reaction in several complex environments, not only in comparatively simple solvents.

The work raises a broader research question about whether small catalytic peptides could have played a role in the evolution of enzymes. Corresponding author Helma Wennemers told Chemistry World: “The findings show the utility of peptide catalysts for organic synthesis and provoke the question of the potential role of small catalytic peptides in the evolution of enzymes.” That is a question prompted by the results, not evidence that this particular synthetic catalyst evolved naturally.

Chemistry World also quoted Ivan Korendovych, identified in its report as a Syracuse University researcher in biocatalysis and chemical biology: “This is a quite exciting validation of the broad applicability of peptide catalysts that will likely foster their further development and, more broadly, will encourage creation for testing of the already available catalysts in complex environments.” The study supports testing peptide catalysts in more challenging mixtures; its tested media and reaction conditions define the scope of what has been demonstrated.
