Yes—firm, full-sized mature-green tomatoes can ripen indoors after the growing season. Pick them before frost, keep them clean and dry in a cool, dark place, and check them often. Fruit that is still small or matte green may not ripen successfully off the vine.
Which green tomatoes are likely to ripen?
Look for maturity, not just green color. Choose fruit that is full-sized or nearly full-sized, glossy green or greenish-white, firm, and free of bruises, spots, or disease. Colorado State University describes mature-green tomatoes as shiny, with a white-to-light-green star at the blossom end. Matte-green fruit has not reached maturity and is unlikely to ripen well indoors; use it in green-tomato recipes instead.
Tomatoes that have already begun to blush can also finish ripening indoors. Harvest both mature-green and blushing fruit before the first frost or freeze.
How to ripen tomatoes indoors
- Harvest before frost. Pick only sound, firm fruit. Discard tomatoes that are soft, bruised, spotted, or diseased.
- Remove stems and dry the fruit. Clean gently, then allow each tomato to air-dry completely. Surface moisture and condensation can encourage mold.
- Choose a cool, dark storage spot. For gradual ripening, Iowa State University Extension recommends wrapping tomatoes individually in newspaper and placing them in a single layer at 60–65°F. Nebraska Extension recommends 55–60°F for cool, dark storage. These are source-specific recommendations; a practical target is roughly 55–65°F, with warmer conditions generally speeding ripening.
- Inspect frequently. Remove any tomato that begins to decay so it does not affect the rest. When a tomato starts to show color, unwrap it and move it to room temperature to finish ripening.
- Pick ripe fruit promptly. If you want to slow the remaining batch, remove tomatoes as they ripen rather than leaving them among the green ones.

Ripe fruit can speed ripening because mature-green tomatoes respond to ethylene. No sunlight is needed. Avoid very cold storage: temperatures below 50°F can lead to bland or off-flavor fruit, and prolonged chilling can interfere with even ripening. Too much humidity or condensation encourages mold; very dry conditions can cause shriveling. UC Davis’s controlled commercial humidity guidance is not a household target.

How long will indoor ripening take?
Timing depends on temperature, how mature the fruit was at harvest, and indoor conditions. PlantTalk Colorado estimates about two weeks at 65–70°F and three to four weeks at 55°F. A 2023 Colorado State University Extension article gives roughly a couple of weeks near 70°F and about a month near 55°F. Treat these as estimates, not guarantees: cooler storage slows ripening, and individual tomatoes vary.

Indoor-ripened mature-green tomatoes may not taste as good as fruit ripened on the vine. Iowa State University AnswerLine and Colorado State University Extension both caution that off-vine fruit may not develop its full flavor. Choosing mature, healthy fruit and avoiding chilling gives it a better chance of ripening well, but does not guarantee vine-ripened flavor.
