You’ve Probably Eaten This Insect-Derived Ingredient for Years Without Realizing It

The ingredient is carmine, also labeled cochineal extract: a red color additive derived from insects. In the United States, check the ingredient list for either name; in the European Union, the corresponding additive designation is E 120. Its presence is not proof that a food is unsafe, but FDA says it may cause allergic reactions in some people.

What is carmine?

Carmine and cochineal extract are insect-derived color additives used to give products color. The U.S. Food and Drug Administration (FDA) classifies cochineal extract and its lake, carmine, as colors exempt from batch certification. That exemption does not mean they are unregulated: color additives remain subject to applicable approval, identity, purity, and use requirements.

In the EU’s additive regulation, E 120 is named “Cochineal, Carminic acid, Carmines.” The regulation describes carmine as the hydrated aluminium chelate of carminic acid and notes that commercial products may also contain proteinaceous material from the source insect. That description does not establish that every commercial preparation has an identical composition.

How to recognize it on a food label

For U.S. foods, look in the ingredient statement for carmine or cochineal extract. FDA requires foods containing either additive to name it there; it cannot be listed only under a generic term such as “Artificial Color” or “Color Added.” The requirement followed an FDA final rule issued in 2009 and became effective January 5, 2011.

Ingredient lists are the most practical way to check a particular product. Formulations can vary, so the name of a food or brand alone is not enough to establish whether it contains carmine.

Names differ by jurisdiction

These are jurisdiction-specific naming conventions, not a universal labeling rule. The cited EU regulation identifies E 120; it does not establish labeling requirements elsewhere.

Does carmine cause allergies?

FDA says cochineal extract and carmine may cause allergic reactions in some people. The agency required them to be declared by name after reports of severe reactions, including anaphylaxis, associated with foods and cosmetics containing these additives. The rulemaking describes them as allergens for a small subset of the allergic population, but does not provide a numerical prevalence estimate.

They are not among the major food allergens under U.S. law. That distinction does not mean no one can react to them; FDA’s separate name-declaration requirement reflects their potential to cause allergic reactions. If you suspect a reaction, seek advice from a qualified healthcare professional rather than using a label as a diagnosis.

What FDA’s safety standard does—and does not—say

FDA describes its general standard for color additives as a “reasonable certainty of no harm” when an additive is used as proposed. The agency also cautions: “Because of inherent limitations of science, the FDA can never be absolutely certain of the absence of any risk from the use of any substance.” This is general context about FDA’s safety standard, not a carmine-specific finding that every individual is risk-free.

Why someone might avoid it

People may choose to avoid carmine because it comes from insects, or because of a personal sensitivity or allergy. Those are different reasons: insect origin is an ingredient preference, while a suspected allergic reaction is a health concern. The label identifies the ingredient; it cannot determine which concern applies to an individual.
