A potato chip on ice cream sounds like a mismatch, but the appeal has a sensible explanation: salt can shape the impression of sweetness and flavor, while a crisp topping contrasts with ice cream’s soft, smooth texture. Those effects help explain why the pairing can work; they don’t guarantee that everyone will enjoy it.
How salt works with sweet ice cream
Salt contributes its own taste, but it can also change how other flavors come across. A 2010 National Academies review describes studies in foods such as soups, rice, eggs, and potato chips where salt enhanced sweetness, masked some off-notes, or rounded out flavor. That offers a plausible reason a salty topping can feel at home alongside sweet ice cream, but it does not show that salt always makes ice cream taste sweeter. There is no universal amount of salt that makes a dessert taste best. The same review describes a general pattern in which added salt can increase liking up to a preferred point, then reduce it; people differ in where that point falls. A heavily salted topping may overwhelm the ice cream rather than improve it.
Why the crisp texture matters
Ice cream is soft and smooth; a chip brings a dry, crisp bite. That change in sensation is part of the appeal. In a 1993 review, Karen M. R. Rolls and Edmund T. Rolls proposed that moment-to-moment changes in texture while chewing can contribute to palatability. They used ice cream as a sensory model for “dynamic contrast.” This is a proposed explanation, not proof that crunch improves every dessert. PubMed: “Dynamic contrast: a sensory contribution to palatability”.

“Crisp” and “crunchy” are everyday near-synonyms, but they are not interchangeable in all sensory research. A 2023 study found support for an association between salty and crispy textures in its experiments, while results for samples described as crunchy were less consistent. It does not establish that every crunchy food tastes salty or belongs on ice cream. “Crossmodal correspondences and interactions between texture and taste perception”.
Try vanilla ice cream with potato chips
Vanilla is a straightforward place to start: its flavor leaves room for the chip’s salt and toasted potato taste. Chowhound points to a Lay’s Classic Potato Chip Sundae recipe pairing vanilla ice cream with Classic Potato Chips. That example shows the combination in a recipe, not that vanilla is objectively the best flavor. Chowhound’s vanilla ice cream and potato chip topping example.

- Put a small scoop of vanilla ice cream in a bowl.
- Crush a few plain potato chips and sprinkle them over the top just before eating.
- Taste, then add more chips if you want a saltier bite or a stronger crisp-soft contrast.
Chips soften as they sit against melting ice cream, so adding them at the last moment preserves more of their crispness. Pretzels or crackers are reasonable alternatives to try, but there is no established controlled ranking showing which topping works best. Compare them by saltiness, crispness, and how long they stay crisp in contact with the ice cream.
