Try a smaller, more widely spaced batch first; dry ingredients where appropriate; follow your appliance’s own guidance; and shake or turn food when the recipe calls for it.
Why is my air fryer food not crispy?
Crisping depends on hot air reaching the food’s surfaces and moisture escaping. A crowded basket, wet ingredients, or instructions meant for deep-frying can interfere. The right fix depends on the food and the air-fryer model, so start with the simplest checks rather than applying one universal temperature or cooking time.

Check the basket and batch size
If food is piled up or packed tightly, pieces can cook unevenly and stay soft where they touch. Cook a smaller batch and spread it out. For small snacks, Philips recommends a single layer on the basket bottom where practical; follow your appliance’s fill markings and do not exceed its stated maximum.
When pieces touch or sit in layers, shake or mix them during cooking so food from the bottom moves to the top. Philips advises shaking larger batches two or three times and mixing them. Follow your model’s directions for foods that should not be shaken.

Dry wet ingredients before cooking
Surface moisture can make it harder for food to develop a crisp exterior. For fresh fries, Philips recommends cutting suitable, slightly floury potatoes into sticks, soaking them for at least 30 minutes, then drying them thoroughly with kitchen paper before cooking. If adding oil, dry the ingredients first.
Use air-fryer cooking guidance
Deep-fryer instructions are not a reliable substitute for air-fryer directions. Philips warns that deep-fryer preparation times may be too short for its Airfryer. Check the food table or recipe guidance for your specific model, including its manual or HomeID guidance where available. If the food is cooked but still soft or pale, add cooking time cautiously and check its progress rather than assuming a single setting works for every food.

Should I add oil to make air-fryer food crispy?
Not always. Philips says its Airfryer does not require oil, but a little oil on some fresh ingredients can help create a crisp layer. This is most relevant to foods such as homemade fries or some breaded foods. Use a modest amount on the food after drying it; excess oil is not a shortcut to crispness. A refillable oil sprayer is one optional way to apply a light coating, not a required accessory.

Choose foods suited to air frying
Some foods will not match the texture you expect from deep-frying. A Philips manual advises choosing foods intended for oven cooking, or lightly brushing some foods with oil for a crispier result. Philips also notes that high-fat snacks can be difficult to crisp; where suitable, try a lower-fat variety.

Quick troubleshooting checklist
- Food is stacked or crowded: Cook less at a time, spread it out, and stay within the appliance’s fill limit.
- Fresh fries are soft: Soak cut potato sticks, then dry them thoroughly before cooking.
- Food is pale despite being cooked: Check air-fryer-specific guidance and extend cooking carefully if needed.
- Pieces are touching: Shake or mix during cooking if the food and model instructions allow it.
- Homemade fries or breaded food lack a crust: After drying, try a modest amount of oil if suitable for the recipe.
- A high-fat snack will not crisp: Consider a lower-fat alternative where appropriate.
