Neither an unpleasant nor a normal smell tells you whether pathogens are present. To decide what to do, consider the cheese’s style, who will eat it, and how it has been stored—not taste alone.
Why cheese can smell like ammonia
During ripening, enzymes break down cheese proteins. In soft-ripened cheeses such as Brie and Camembert, that process can produce an ammonia-like aroma. The American Cheese Society says some consumers like a hint of ammonia in these cheeses, while excessive ammonia is almost always considered a defect. Its lexicon lists extensive protein breakdown and extended storage among possible causes; the smell alone cannot identify what happened to a particular cheese. American Cheese Society cheese lexicon

Whether the aroma is expected depends on the style and its ripeness. A sharp, dominant ammonia smell that is unexpected for the cheese may be reason enough not to eat it for quality reasons. It is not, by itself, evidence that the cheese contains a pathogen.
Why cheese may taste bitter
Bitterness is also style-dependent. The American Cheese Society’s May 2025 lexicon notes that a balanced bitter note can occur in some cheeses, including aged Cheddar, while bitterness is considered a defect in fresh dairy products. People vary in how strongly they perceive bitter flavors. American Cheese Society cheese lexicon

Possible causes across dairy products include poor-quality milk or ingredients, excess acidity, low salt, highly active starter cultures, excessive rennet or moisture, microbial contamination, extended storage of milk, or excessive sanitizer use. Those are possibilities, not a tasting checklist: bitterness cannot tell you which cause applies to a particular cheese.
Cheese flavor changes through a mix of processing, milk quality, and enzymatic and chemical reactions during aging. As casein breaks down, it can form compounds including acids, alcohols, aldehydes, amines, and amino acids; some can produce undesirable notes. Can taste or smell tell you whether cheese is safe?
No. USDA Food Safety and Inspection Service guidance distinguishes spoilage bacteria, which may affect odor, taste, or texture, from pathogenic bacteria. Pathogens generally do not change a food’s taste, smell, or appearance. So an off flavor can be a reason to reject cheese on quality grounds, but it does not prove contamination; cheese that smells and tastes normal is not thereby proven safe. Extra caution with queso fresco-type cheeses
FDA’s advice here is specific to queso fresco-type cheeses, not a universal rule for every cheese. These soft, fresh, high-moisture, low-acidity cheeses can support the growth of Listeria, including under refrigeration. FDA advises pregnant people, adults 65 or older, and people with weakened immune systems to avoid queso fresco-type cheese, even when it is made with pasteurized milk. - Check that the label says the cheese is made with pasteurized milk.
- Keep it at or below 40°F (4°C), use it as soon as possible, and discard it if it has been in the 40–140°F (4–60°C) danger zone for more than two hours.
A refrigerator thermometer can help check whether the refrigerator meets that temperature guidance; it cannot test the cheese or establish that it is safe. These temperature limits are FDA guidance for queso fresco-type cheese, not a flavor test or a blanket storage rule for all cheese.

Quick Recap
A practical decision guide
| What you notice | What it may mean | What to do |
|---|---|---|
| A faint ammonia note in Brie or Camembert | It may be associated with ripening; some consumers accept a hint. | Judge it against the cheese’s expected style and your preference. Aroma alone cannot establish safety. |
| Strong, dominant ammonia or unexpected bitterness | It may be a quality defect, but taste or smell cannot identify the cause or detect pathogens. | If it seems unpleasant or unlike the intended cheese, do not eat it for quality reasons. Check handling and product-specific guidance separately. |
| Queso fresco-type cheese, particularly for someone at increased risk from Listeria | FDA identifies this category as able to support Listeria growth. | Follow FDA’s category-specific advice, including avoidance for pregnant people, adults 65 or older, and people with weakened immune systems. |
| Cheese with uncertain temperature history | Safety depends on the product and how long and how warm it was stored; sensory checks cannot settle the question. | Check the label and official guidance for that cheese type. For queso fresco-type cheese, apply FDA’s stated time and temperature limits. |
