One free scan finds every outdated or missing driver and matches the right update for your exact hardware.Free scan · exact hardware matchIf food comes out of a steam oven soft instead of browned or crisp, the first thing to check is the cooking mode: steam-only cooking keeps adding moisture, while dry convection or a suitable steam-and-convection mode can brown the surface. The right choice depends on the dish and your oven’s controls, so use the model’s manual for settings, timing, and cookware guidance.
Why is my food soggy in the steam oven?
Steam is useful when you want food to stay moist, but that same moisture can work against a crisp exterior. A steam-only setting is designed for moist cooking, not the dry surface conditions needed for browning.

Food can also remain soft if heat and air cannot circulate around it—for example, when a tray is crowded or delicate pieces are piled in a deep layer. The mode, recipe, food arrangement, and intended texture all matter; sogginess by itself does not establish that the oven is defective.

| Mode or example label | Moisture and heat | Best fit |
|---|---|---|
| Steam | Moist cooking; not primarily intended to brown the surface | Foods for which a moist result is wanted. Bosch, for example, identifies steam for gently steamed vegetables. Bosch steam-oven guidance |
| Steam and convection, convection steam, or steam assist | Combines moisture with circulating heat; exact operation depends on the model | A moist interior with some browning. Bosch describes steam/convection for juicy chicken with crisp, golden skin; Thermador says steam assistance can be added to certain convection modes, and Wolf describes convection steam as steam plus warm circulating air. Bosch, Thermador, Wolf |
| Dry convection, European convection, or air fry | Dry heat circulates without the same steam emphasis; air-fry uses high dry heat to brown and crisp | Baked goods or foods that need a drier, crisper surface. Bosch identifies European convection for baked goods; Anova describes air fry as high dry heat that browns and crisps. Bosch, Anova |
These labels are examples, not interchangeable standards. A control called “convection” on one oven may not behave exactly like a similarly named control on another. Choose based on the functions documented for your model rather than the label alone.
How do I get crispy food in a steam oven?
- Identify the finish you want. For moist vegetables, custards, or reheated leftovers, steam may suit the dish. For a browned crust or crisp coating, choose a documented dry-heat mode. If you want a moist interior and browned exterior, check whether the manual offers steam-convection or steam assist. Thermador lists steam as an option for reheating, while its support material describes true convection as a dry mode for baked goods. Thermador cooking guidance
- Use dry heat to finish when the recipe and oven allow it. AEG recommends finishing baking with dry heat for a crispier surface. This is a technique to consider for relevant baking, not a universal instruction for every food or appliance. AEG steam-oven guidance
- Arrange food to leave room for circulation. Center pans, distribute food evenly, and avoid piling delicate items too high. Thermador suggests using multiple pans when needed and permitted by the appliance instructions. Thermador cooking guidance
- Consider a perforated tray for suitable baking. AEG says perforations aid heat circulation. Use one only if it is compatible with your oven and the recipe; check the manual before buying an accessory. Some steam ovens include pans—for example, Bosch says its pans are included—so check the original kit first. AEG, Bosch
- Adjust recipe timing cautiously. Thermador gives a rule of thumb of about one-quarter less cook time when converting a traditional recipe to a steam-convection oven. That is Thermador’s general guidance, not a guaranteed conversion for other ovens or recipes. Follow your appliance manual and recipe, and check the food as it cooks. Thermador cooking guidance
What if the food is still soggy?
Check the manual for the exact mode, rack position, cookware, and recipe guidance for your model. If you contact the manufacturer, provide the oven model, the food and recipe, the selected mode, and how the food was arranged. The available manufacturer guidance does not establish soggy food alone as evidence of a fault.

As a product-specific example rather than a general recommendation, Wolf lists 180 to 440°F as the preferred range for its convection-steam mode. That range should not be applied to other ovens. Wolf convection-steam cookbook
