Uneven results usually have a mode-specific cause: microwaves can leave cold spots, air-fry and convection modes need clear airflow, and a grill can brown food from above before its underside cooks. First identify the mode you used, then check placement, quantity, settings, and the accessories allowed by your exact model. If the food contains meat or poultry, verify doneness with a thermometer rather than judging by color.
Start by identifying the cooking mode
A microwave-air-fryer combo does not heat food the same way in every setting. Microwave-only cooking uses microwave energy; air-fry and convection modes circulate hot air; grill functions apply heat from an element, often above the food. Combination modes may sequence or combine these methods under model-specific rules. A fix that helps in one mode may be unsuitable in another.

| Mode | Why results may be uneven | First checks |
|---|---|---|
| Microwave-only | Food quantity, shape, power level, and placement can contribute to cold spots. | Arrange food evenly; follow the manual for turntable use; stir, rotate, or turn partway through when appropriate; allow standing time. |
| Air-fry or convection | Crowding, blocked airflow, missed preheating, or incorrect basket or rack placement can affect browning. | Check preheat instructions, spacing, accessory position, and whether food should be turned. |
| Grill | Heat concentrated from above can brown the top before the bottom cooks. | Follow the cooking chart and accessory instructions; turn food when directed. |
| Combination | The appliance may have specific power limits, sequences, and accessory rules. | Use the mode and accessory directions for the exact model; do not assume another brand’s rules apply. |
Fix uneven heating in microwave-only mode
Microwave ovens can leave cold spots even when a turntable is operating. USDA FSIS warns that these cold spots can allow harmful bacteria to survive. Food quantity and shape matter too: a small amount cooked at an unsuitable high power level may heat unevenly, while a thick or dense portion may need different timing from a small, flat serving.
- Confirm the mode and power. Make sure the appliance is set to microwave-only, not air-fry, grill, or a combination program. Check the manual or recipe for a suitable power level and duration for the amount of food.
- Arrange food evenly. Spread portions in a covered microwave-safe dish as directed. Add liquid if the food needs it, and vent the cover according to the food and appliance instructions.
- Use the turntable as instructed. Center the dish or place it where the manual specifies. A rotating turntable helps distribute exposure, but does not guarantee that every spot will heat evenly.
- Stir, rotate, or turn midway. Choose the action that suits the food: stir foods that can be stirred, or rotate and turn solid portions when appropriate. Follow the recipe or appliance guidance.
- Allow standing time. Let the food stand for the period specified by its instructions before checking doneness; cooking continues during this time.
Accessory rules are model-specific. Electrolux, for example, advises removing wire or metal shelves and trays for microwave-only operation on its appliances and placing food directly on the floor or turntable. Do not apply that instruction—or assume an accessory is microwave-safe—without checking your own model’s manual. See Electrolux’s uneven-cooking guidance and USDA FSIS microwave food-safety guidance.

Fix uneven browning in air-fry and convection modes
Air-fry and convection results depend on hot air moving around the food. Overfilled baskets or trays, foil covering an airflow path, and a rack or basket in the wrong position can interfere with circulation. Some models also require preheating, and thicker pieces may cook differently from thin ones.
- Check preheating. Preheat if the manual or selected program calls for it. Panasonic notes that incorrect temperature, time, function, cookware, placement, and food thickness can all affect convection results.
- Leave room for air. Avoid crowding food, and do not cover the turntable or convection rack with foil if the manual warns that doing so interferes with airflow.
- Position the supplied basket or rack as directed. On the Maytag model covered by its air-fry instructions, the basket’s foldable feet should be opened, the basket centered on the turntable, and the basket kept clear of the cavity wall. Other models may differ.
- Turn or flip when prompted. Follow the appliance prompt or recipe where it calls for turning food so the exposed surfaces can brown more evenly.
- Use suitable cookware. Panasonic suggests low-rimmed oven-safe trays, glass, or ceramic for convection on its appliances, subject to the specific model’s instructions. Do not treat this as a universal cookware rule.
See Maytag’s air-fry instructions, Maytag’s convection guidance, and Panasonic’s advice on uneven cooking for the model-specific details behind these checks.

Fix top-browning or uneven results in grill and combination modes
A grill element can brown the surface facing it before the opposite side has cooked through. Haier’s combi-oven guidance distinguishes this from microwave cold spots and recommends turning food; where the oven has convection and the recipe suits it, hot-air cooking may be an alternative. Use the cooking chart for your own appliance rather than transferring another model’s timing or rack position.
Combination settings can add another constraint: the appliance may limit microwave power or permit only particular accessories. Electrolux states that microwave power in Combi mode cannot exceed 600 W on its appliances; that is not a universal limit. Accessory rules also differ between microwave-only, grill, convection, and air-fry settings. Check the manual before changing a rack, tray, or cookware item.

Check food safety, not just browning
A browned surface does not prove that the center has reached a safe temperature. After cooking and the prescribed standing time, check food with a food thermometer in several places, including the thickest parts of irregular portions. USDA FSIS gives 165 °F as the safe minimum internal temperature for poultry.

Unless the thermometer is specifically labeled safe for microwave cooking, do not leave it in food while the appliance is running. Remove the food before checking, using an instant-read thermometer according to its instructions. See USDA FSIS guidance on microwave cooking and its kitchen thermometer guidance.
When to stop troubleshooting
- Check visible food residue and clean the appliance only as its manual directs. IFB lists a dirty waveguide cover as one possible cause of uneven cooking on its supported models; that is not a diagnosis for every combo oven.
- If the appliance sparks unexpectedly, shows damage, or continues heating abnormally, stop using the questionable accessory or setting and consult the model documentation or manufacturer service channel. Maytag warns that accessory racks can cause arcing with the microwave function on supported models.
- Do not open the appliance or attempt consumer repairs to high-voltage microwave components. For persistent or electrical faults, contact the manufacturer or an authorized service provider.
For model-specific safety and service details, see IFB’s troubleshooting guidance and Maytag’s guidance on microwave sparking.
