Gochujang is not automatically wheat-free or gluten-free. Recipes vary, and the food category can include wheat-related ingredients. If you have a wheat allergy, check the exact package’s ingredients and wheat allergen declaration. If you avoid gluten, look for a gluten-free claim that meets U.S. FDA rules; fermentation does not remove gluten. When the label leaves a meaningful question unanswered, contact the manufacturer.
Wheat allergy and gluten avoidance are different label questions
If you have a wheat allergy
Wheat is one of the major food allergens covered by U.S. FDA labeling rules. When wheat is used as an ingredient in a covered packaged food, its source must be identified in the ingredient list, in a parenthetical after the ingredient, or in a separate Contains statement. Check the full current package rather than relying on a product name or an older online listing. FDA’s food-allergy labeling guidance explains the requirements.

If you avoid gluten
Gluten occurs in wheat, rye, barley, and crossbreeds of these grains. In the U.S., “gluten-free” is a voluntary package claim with a defined regulatory standard: unavoidable gluten must be below 20 parts per million, and ingredients derived from gluten-containing grains are subject to restrictions. A gluten-free claim is not the same as a wheat-free claim. FDA describes circumstances in which a product can meet the gluten-free rule while declaring wheat processed to meet that rule, with explanatory labeling. See FDA’s gluten-free labeling requirements.
If you suspect celiac disease
A label can help you assess a product, but it cannot diagnose celiac disease. The National Institute of Diabetes and Digestive and Kidney Diseases advises people who think they may have celiac disease to talk with a doctor about testing before starting a gluten-free diet. Read NIDDK’s guidance on celiac disease testing.

Why the exact gochujang package matters
The Codex Standard for Gochujang (CXS 294-2023) describes gochujang as a red or dark red pasty fermented food and lists ingredient categories that can include soy sauce, fermented soybean paste, and fermented wheat protein. Those categories make wheat-related ingredients a relevant possibility; they do not establish that every gochujang contains wheat. The standard describes the food category, not the recipe of every retail tub. Read the Codex gochujang standard.
Nor does fermentation make a product safe for gluten avoidance. FDA says fermentation is not considered a process that removes gluten, and conventional analytical methods may not accurately detect or quantify gluten in fermented foods. FDA’s rules therefore address gluten-free claims on fermented or hydrolyzed foods and products containing such ingredients. Do not infer gluten status from the word “fermented.” FDA explains gluten-free labeling for fermented and hydrolyzed foods.

A practical checklist for comparing two tubs
- Read each current ingredient list and wheat declaration. Look for wheat or wheat-derived ingredients, and check any separate Contains statement. U.S. allergen rules require the source of a major allergen such as wheat to be identified when used as an ingredient in covered packaged foods. FDA food-allergy labeling guidance.
- If you avoid gluten, check for a gluten-free claim. In the U.S., FDA’s definition requires unavoidable gluten to be below 20 ppm and restricts ingredients derived from gluten-containing grains. Do not substitute “wheat-free” for a gluten-free claim, or the reverse. FDA’s gluten-free rule.
- Do not count on fermentation to remove gluten. FDA does not consider fermentation a gluten-removal process. FDA’s guidance on fermented foods.
- Do not treat a missing “may contain” or shared-facility warning as proof of no cross-contact. Such advisory statements are voluntary, not required by law. FDA’s food-allergy guidance.
- Ask the manufacturer if an important point remains unclear. This may include a formulation question, an allergen declaration, gluten-free status, or cross-contact information. FDA advises consumers to contact the manufacturer or check its website with questions about ingredients and gluten status. FDA’s questions and answers on gluten-free labeling.
- For possible celiac disease, speak with a doctor about testing before changing your diet. NIDDK’s testing guidance.
How to make a product-level decision
Use the same questions for each product: Does its current label identify wheat or wheat-derived ingredients? Does the package make a gluten-free claim? Has the manufacturer answered any unresolved ingredient or cross-contact question? Does the product fit your clinician-guided dietary needs? These checks help you compare labels; they do not establish that any particular brand is safe for every person with wheat allergy, celiac disease, or gluten sensitivity.
