Review the itemized bill, identify any mandatory service charge, and tell the server or cashier clearly that you are paying cash. Hand over the amount, wait for the change and receipt, count both, and state separately whether any money beyond the bill is a tip. Cash does not automatically become a tip just because you leave it on the table.
When several people are sharing the check, agree on each person’s amount before anyone pays. The group remains responsible for covering the full bill and any intended tip, even when one person hands over all the cash.

1. Check the bill before handing over money
Ask for the itemized bill if it has not already been provided. Confirm the food and drinks, subtotal, tax, and every fee. Look specifically for a service charge, gratuity, or auto-gratuity. A mandatory service charge is added to the bill before it is presented; it is not the same as a voluntary tip that the customer chooses and sets.

What to verify
- All items belong to your table and prices match what was ordered.
- The subtotal and tax are shown, where applicable.
- Any service charge or auto-gratuity is identified and included in the total.
- Credits, discounts, deposits, or payments already made are reflected.
- The final amount due is clear before you count out cash.
If a fee is unclear, ask the server to explain it before paying. Do not assume that a line labeled “service charge” is an optional tip, and do not add a second gratuity until you know how the restaurant handles that charge.

2. Tell staff that you are paying cash
Say, “I’ll pay in cash,” and hand over the money only after the total is confirmed. This signals that the transaction should be settled in cash rather than left open for a card payment. If you need a particular combination of notes or coins, mention it when you pay.
If you are paying for a group, state the arrangement at the same time: for example, “I’m paying the full check in cash,” or “We are splitting this: $30 from me, $25 from them, and the rest on a card.” Giving the amounts before the server processes the payment prevents an accidental partial payment or an incorrect tip calculation.
3. Decide whether you want exact change or a return
Unless you explicitly tell the staff to keep the difference, expect the restaurant to return change. The Federal Trade Commission advises cash customers to bring coins so they can pay exact change when possible. Exact payment can make the transaction quicker, but it does not alter your right to receive change when you pay more than the total.
Three clear ways to communicate your intention
- Exact payment: “The total is $47.25; here is $47.25.”
- Change returned, then a separate tip: “Please bring $10.75 change. I’m leaving $5 as a tip.”
- Keep the change: “The total is $47.25; please keep the change from $60.”
Do not rely on where you place the cash to communicate your intent. A server may reasonably treat an unmarked amount as payment awaiting change, while another person may assume it is a tip. A short, direct statement removes the ambiguity.

4. Hand over the cash and wait for the transaction to close
Give the cash to the server or cashier and wait while it is counted. Keep the bill at the table so you can compare the total with the amount handed over. If the restaurant uses a till or payment tray, leave the money there as directed rather than walking away before the staff confirms the amount.
For an illustrative bill of $86 paid with $100, the expected change is $14. If you intend to leave $8 as a voluntary tip, say so and wait for $14 in change; the tip is then handled separately. If you instead say “keep the change,” the full $14 difference is being offered beyond the bill.
5. Count the change and check the receipt
Before leaving, count the returned notes and coins and compare them with the bill. Check that the written or electronic receipt shows the same total you authorized and that any service charge is recorded correctly. If the restaurant gives you a cash-register docket, receipt, or bill, keep it until you have confirmed the amount and tip.

If the amount is wrong
- Raise the discrepancy immediately and show the bill and the cash returned.
- Ask the server or cashier to recount the drawer transaction rather than arguing about intent.
- Request a corrected receipt if the recorded total or service charge is wrong.
- Write down the date, table, amount paid, and staff member if the issue is not fixed before you leave.
Once you have left, the receipt and your notes are the clearest evidence of what was charged and what you paid.
6. Treat the tip as a separate decision
The Internal Revenue Service defines a tip this way: “A payment is a tip only if the customer voluntarily decides to pay it and determines the amount.” That means cash handed over beyond the required bill is a tip only when you choose both to give it and how much to give.
A mandatory service charge or auto-gratuity does not meet that definition of a voluntary tip. Read the bill to see whether the charge already covers service for your party. Local rules and restaurant policies may determine how a mandatory charge is distributed, so ask staff if the wording is unclear.

Ways to leave a voluntary tip in cash
- Give the server the tip after receiving and checking your change.
- Place the tip in the designated tip area if the restaurant provides one.
- Tell the server the exact amount when paying at a counter.
- If the receipt has a tip line but you are tipping in cash, write “cash” or leave the line blank according to the restaurant’s instructions; do not accidentally authorize a second tip on a card slip.
No universal percentage is required by the authorities cited here. The amount is a personal choice shaped by the service, local custom, and any charge already listed on the bill.

7. Splitting a bill when one person pays cash
Agree on the allocation before money changes hands. The right method depends on whether the group wants an equal split, an itemized split, or one person to pay and collect reimbursements later.
Equal split
Divide the final amount, including tax and any mandatory service charge, among the agreed number of diners. Decide how to handle a remainder of a cent and any tip. Announce each person’s amount, then have the cash payer confirm that all contributions cover the entire bill.
Itemized split
Each diner pays for their own food and drinks, plus their share of tax, service charge, and any voluntary tip. Ask the server whether the register can process separate payments. If it cannot, calculate the amounts before the first payment and give the cash payer enough money to settle the complete check.

The person who pays cash should say that they are settling the full total, not making a partial payment. The other diners can reimburse that person in cash or by an agreed electronic method. Settle the reimbursement before leaving when possible, and record who paid what so the tip is not accidentally omitted.
Best Value
Cash plus card
Tell staff exactly how much will be paid in cash and how much by card. Ask whether the restaurant permits split tender and whether the card portion can include the tip. The combined amounts must equal the bill, mandatory charges, and any voluntary tip the group has chosen.
8. Compare common payment arrangements
| Arrangement | What to say before payment | Tip treatment | Record to keep |
|---|---|---|---|
| Exact cash | “Here is the exact total.” | Give any voluntary tip separately or state that the exact amount includes it. | Itemized receipt or docket. |
| Cash with change | “Please return the change.” | Wait for the change, then leave the chosen tip. | Receipt and counted change. |
| Cash plus card | State the cash amount and card amount before processing. | Confirm which payment carries the tip and avoid authorizing it twice. | Cash receipt plus card receipt. |
| Separate checks | Confirm each diner’s check and payment method. | Each person handles the tip on their own check unless the group agrees otherwise. | Each person’s receipt. |
| One payer for the group | “I’m paying the full check; we will reimburse separately.” | Agree on the total tip before collecting reimbursements. | Full receipt and a simple record of reimbursements. |
9. What to do when something goes wrong
You do not have enough cash
Tell the server before attempting payment. Ask whether the restaurant accepts a split payment or whether someone else can cover the remainder. Do not leave cash on the table and assume staff will pursue the balance; the full bill still has to be settled.
You paid too much and walked away
Return promptly with the receipt and explain the amount handed over and the change expected. The restaurant may be able to check the till, but recovery is harder without a receipt or a clear record.

Receipt obligations differ by jurisdiction and business type. Ask whether an electronic receipt is available and note the transaction details yourself. Keep any bill, docket, or payment confirmation you receive.
A service charge appears unexpectedly
Ask for an explanation before adding a tip. If the charge was not disclosed or appears inconsistent with the menu or posted policy, request a manager and keep the bill. The legal remedy depends on where the restaurant operates.
10. Local rules and restaurant policies matter
The safe procedure is broadly useful, but cash-acceptance requirements, denomination limits, receipt obligations, tax treatment, and tipping customs vary among countries, states, and cities. The cited guidance comes from U.S., Australian, and U.K. authorities and should not be read as a universal legal rule.
A restaurant may have a published policy about large notes, foreign currency, split tender, or separate checks. Check the menu, posted notices, or the server’s explanation before ordering if that policy could affect how you pay. If a dispute concerns a legal requirement rather than a simple counting error, contact the relevant local consumer-protection agency.
