Most sea cucumbers are deposit feeders: they swallow or collect seafloor sediment, digest the organic material mixed through it, and return the largely mineral residue as feces. Their food is not mud itself. It is the sediment’s edible fraction—microalgae, bacteria, decaying plant and animal material, and tiny organisms. By moving sediment through their guts, sea cucumbers expose organic matter to microbes, alter exchanges between seabed and seawater, and help recycle nutrients. The direction and size of those effects depend on the species, habitat, sediment and food supply; some sea cucumbers swim in the water column and do not feed on the bottom at all.
What do sea cucumbers eat?
Sea cucumbers eat organic particles associated with the seabed. A typical bottom-feeding species takes in a layer of sand, mud or fine detritus, then separates usable material from mineral grains during digestion. The sediment is therefore a carrier for food, not the principal food itself.

- Microalgae and other tiny algae: photosynthetic cells living on or among sediment grains can be an important energy source.
- Bacteria: cells attached to particles may be digested directly, while other microbes live in the gut and help break food down.
- Detritus: fragments of dead algae, plants and animals, including material that has settled from the water column.
- Small organisms and particles: microscopic marine animals and other organic particles collected around the mouth.
NOAA describes deep-sea deposit feeders using tube feet to “eat” seafloor mud, extract nutrition that remains after material sinks from the productive upper ocean, and expel undigested mud. In shallower habitats, species described as scavengers use modified tube feet around the mouth to gather tiny algal particles and microscopic marine animals. These are different ways of obtaining the same broad resource: concentrated organic matter in particles and deposits.

1. Collecting or swallowing a sediment layer
Tube feet around the mouth act as small grasping and sorting structures. Depending on species and sediment, a sea cucumber may pick up individual particles, draw in a surface film, or ingest a mouthful of mud and sand. The animal’s body and feeding tentacles can cover a broad patch of seabed as it moves.

2. Sorting organic material from mineral grains
Inside the digestive tract, enzymes and microbial activity act on organic coatings, algal cells, bacteria and detritus. Mineral grains have little nutritional value and are not “burned” as food. Most pass through the gut and are deposited again as processed sediment. The animal gains energy and nutrients from the comparatively small organic fraction.
3. Egesting altered sediment
Fecal casts are often visibly different from the surrounding seabed because grains have been compacted, mixed and stripped of some organic material. This continuous ingestion and egestion is a form of bioturbation: an animal physically reworks sediment that would otherwise remain in relatively stable layers.
A closer look at the food and gut microbes
A 2024 Nature Communications study of Holothuria leucospilota illustrates why a single food label such as “detritus eater” is incomplete. In the sampled animals, algae were the dominant eukaryotic food source identified in gut material. Bacterial groups were also less abundant in feces than in the surrounding sediment, a pattern consistent with bacteria being consumed.
The same study describes a two-way relationship with the gut microbiome. Some resident bacteria produce digestive enzymes that help the animal process complex compounds. Other bacteria entering with sediment are digested and become nutrients. This is evidence from one species and study system, not a universal recipe for every sea cucumber. Gut communities and diets can change with habitat, season, sediment chemistry and the animal’s feeding mode.

The reported throughput can be substantial. The 2024 article cites earlier work reporting that an individual H. leucospilota may ingest and defecate up to 88.8 grams of seabed sediment per day. That figure is species-specific and should not be used as a general rate for all sea cucumbers.
How feeding turns sediment into recycled nutrients
Nutrient recycling is a chain of physical and biological steps rather than a simple “cleaning” service.
- Organic-rich particles enter the gut. Sediment carries algae, bacterial cells and detritus into the digestive tract.
- Digestion changes the material. Some organic compounds are absorbed by the sea cucumber; others are transformed into smaller molecules or remain in feces.
- Fecal deposits redistribute carbon and nutrients. Processed grains are placed at a new location and in a different physical and chemical form.
- Microbes continue decomposition. Bacteria break down particles that the animal has ground or partly digested. NOAA summarizes this link: “The particles they grind down to smaller pieces are further broken down by bacteria and become part of the ocean’s nutrient cycle.”
- Dissolved nutrients cross the sediment–water boundary. Compounds such as ammonium can move out of pore water into overlying seawater, where algae and other organisms may use them.
Whether this sequence increases or decreases a particular nutrient flux depends on oxygen availability, grain size, organic loading, temperature, microbial communities and the density of animals. More rapid decomposition can release nutrients, but intense grazing can also remove microalgae that would otherwise produce oxygen and take up nutrients.

What a controlled coastal-sediment experiment found
MacTavish, Stenton-Dozey, Vopel and Savage tested the New Zealand sea cucumber Australostichopus mollis in a 2012 experiment. They used sediment enriched with feces and pseudofeces from Greenshell mussels, then compared cores with sea cucumbers against matched enriched cores without them. Measurements included sediment organic matter, bacterial abundance, benthic microalgae, oxygen exchange and dissolved nutrient fluxes.

| Measured outcome | Result in that experiment | How to interpret it |
|---|---|---|
| Ammonium exchange | Sea cucumbers increased ammonium efflux from sediment. | More inorganic nitrogen moved from the sediment toward the overlying water under the tested conditions. |
| Bacterial abundance | Higher with sea cucumbers in the enriched sediment. | Bioturbation and fresh fecal material supported microbial activity or habitat. |
| Microphytobenthos | Grazing reduced microphytobenthos. | Bottom-feeding animals consumed part of the benthic microalgal community, with consequences for oxygen production. |
| Surface-sediment organic matter | After 14 days, mussel-biodeposit cores without sea cucumbers averaged 10.4% organic matter; matched cores with sea cucumbers averaged 7.9% in the top 0.5 cm. | Sea cucumbers lowered stored organic matter in this enriched treatment; these are experimental means, not typical ocean values. |
| Animal growth | Mean sea-cucumber biomass increased 1.6% over 14 days. | This was an experimental detail, not a universal growth rate. |
The experiment demonstrates why broad claims such as “sea cucumbers remove pollution” are misleading. The animals reduced organic matter and increased ammonium release, while also grazing down microalgae. Those outcomes can occur together. A farm, estuary, reef or deep-sea plain may show a different balance because its sediment, oxygen regime, food source and sea-cucumber species differ.
Why species and habitats produce different answers
Deposit feeders on the seabed
These animals process surface or shallow subsurface deposits. Fine mud and organically rich sand can provide abundant particles, but the nutritional quality varies. A deposit feeder in a deep basin may rely on slowly sinking marine detritus; one in a shallow lagoon may consume microalgae and material from seagrass or mangrove areas.
Scavengers that collect particles
Some species use their oral tentacles to pick up discrete particles rather than swallowing large volumes of sediment. Their diet can include tiny algae and microscopic animals concentrated at the sediment surface. “Scavenger” describes this collection behavior, not a diet limited to carrion.

NOAA notes that some sea cucumbers swim, including species that do not live on the seafloor. A pelagic species cannot be assumed to perform the same sediment-reworking work as a bottom-dweller. Its feeding particles, gut passage and effect on nutrient exchange must be evaluated in the water-column setting.

Different sediment types
Grain size controls how much organic material is retained, how easily oxygen penetrates and how fecal deposits move. Clay-rich mud, coarse sand, coral rubble and layered deep-sea ooze offer different food concentrations and microbial habitats. The same number of animals can therefore have very different effects in two locations.
Independent reader supportYour contribution helps us test, update, and keep practical guides available for everyone.Food, feces and the sediment–water boundary
Sea-cucumber activity changes where microbes encounter oxygen and organic substrates. Ingested particles are mixed through the gut and returned as casts, while crawling and feeding disturb the upper sediment. This can bring reduced compounds upward, move oxygenated material downward and expose new surfaces for bacterial colonization.
Microbial decomposition may release ammonium and other dissolved products. At the same time, benthic microalgae can take up nutrients and produce oxygen at the illuminated sediment surface. If grazing removes a substantial share of that microalgal layer, oxygen production may fall even while bacterial abundance rises. The net effect is therefore a balance among animal respiration, microbial decomposition, algal production and physical diffusion.

Lower sediment organic matter does not by itself prove cleaner water; higher bacterial abundance does not by itself prove improved conditions; and increased ammonium efflux may represent enhanced recycling or an undesirable nutrient pulse, depending on the receiving ecosystem.

How to evaluate a claim about sea cucumbers and “cleaning”
- Identify the species. Check whether it is a deposit feeder, particle-collecting scavenger or pelagic swimmer.
- Identify the setting. Note depth, sediment type, temperature, oxygen conditions and whether the site is a natural seabed or an aquaculture system.
- Identify the food source. Natural detritus, algal deposits and mussel biodeposits are not interchangeable.
- Check the measured endpoint. Ask whether the study measured organic matter, bacteria, microalgae, ammonium, total oxygen exchange or several of these.
- Check the scale and design. A laboratory core or mesocosm can reveal mechanisms, but it does not automatically predict an entire reef, bay or farm.
- Separate processing from removal. Moving organic matter into feces or dissolved nutrients is recycling; it is not necessarily permanent removal from the ecosystem.
Common misconceptions, corrected
“Sea cucumbers eat mud.”
They often ingest mud, but nutrition comes from organic material mixed with it. Mineral grains are mostly indigestible carrier material that passes through the gut.
“Every sea cucumber lives on the seafloor.”
No. Some species swim in the water column, so bottom-feeding behavior cannot be generalized across the class.
“More sea cucumbers always improve water quality.”
The measured coastal experiment found simultaneous increases in ammonium efflux and bacterial abundance, lower organic matter and reduced microphytobenthos. Benefits and trade-offs depend on conditions.
“A published grams-per-day value applies to all species.”
The maximum of 88.8 grams of sediment per individual per day is reported for H. leucospilota through an article citing earlier work. Body size, temperature, food concentration and species identity can all change throughput.
The ecological takeaway
Sea cucumbers are living sediment processors. By collecting deposits, digesting their organic fraction and returning altered sediment, they connect detritus, microbes, dissolved nutrients and the water above the seabed. Their feeding can accelerate decomposition and change nutrient exchange, but it can also reduce benthic microalgae and alter oxygen dynamics. The scientifically defensible conclusion is conditional: many sea cucumbers contribute to nutrient cycling, yet the magnitude and desirability of that contribution must be judged for the particular species, sediment and ecosystem.
