The experience combines a circulating sushi belt, an express lane for made-to-order dishes, table ordering, plate tracking and rewards. Its latest reported results also show why growth needs context: new restaurants lifted total sales even as comparable sales slipped, while tariffs continued to pressure food costs.
Why Kura Sushi’s growth needs more than one measure
Kura Sushi USA reported $85.9 million in sales for its fiscal third quarter ended May 31, 2026, and said it opened seven U.S. restaurants during the quarter. Comparable restaurant sales declined 0.4%. Those figures describe different parts of the business: total sales include the contribution of new locations, while comparable sales track the existing restaurant base.

The quarter’s comparable-sales components were also mixed: traffic rose 0.4%, while price/mix fell 0.8%. That is a useful reminder that a restaurant can add locations and grow its sales without every existing location selling more. In FY2025, Kura Sushi USA added a record 15 locations and ended the year with 82 restaurants across 22 states and Washington, D.C. The company said that year’s sales were affected by a volatile consumer environment and tariff pressures. Kura Sushi USA’s FY2026 Q3 results and its FY2025 results provide the company-reported figures.
Expansion is a plan, not a completed result
In its July 7, 2026 release, Kura Sushi USA reaffirmed a FY2026 plan to open 16 restaurants, target annual unit growth above 20%, and spend about $2.5 million in average net capital expenditures per unit. These are forward-looking company targets, not completed openings or guaranteed returns. The investment figure is a company-wide average, not a promise that every new restaurant costs the same amount.

Quarterly performance is not a trend line
Results in the preceding quarter moved in a different direction. In FY2026 Q2, comparable sales rose 8.6%, split evenly between 4.3% traffic growth and 4.3% price/mix growth, but Kura Sushi USA reported a net loss of $1.7 million. In Q3, comparable sales declined slightly and the company reported net income of $0.4 million. Two quarters moving in different directions do not establish a durable acceleration or decline.
How the conveyor-belt system works
Kura’s format is not just a belt of ready-to-eat plates. The company describes a dual-layer conveyor: one belt circulates dishes for diners to select, while a second express belt carries made-to-order items to tables. Table ordering and the two delivery modes let the restaurant combine visible selection with dishes prepared in response to an order.

The company has also described drink-delivery robots, an AI-supported waitlist, a rewards app, DoorDash delivery and QR plate scanning intended to produce real-time consumption analytics and support demand forecasting. These features are company descriptions; they do not independently establish how much labor they save, how much they improve repeat visits or whether they increase profit. See Kura Sushi USA’s 15-year anniversary account for its description of the system.

Technology and novelty do not remove the ordinary pressures of operating a restaurant: ingredient costs, wages, pricing, traffic and the expense of opening new locations all affect the economics. The company’s own quarterly disclosures illustrate how those forces can pull in different directions.

Food costs and pricing
In FY2026 Q2, Kura Sushi USA said food and beverage costs rose to 30.4% of sales from 28.7%, primarily because of tariffs on imported ingredients; menu price increases partly offset the pressure. In Q3, the company said cost of goods sold as a share of sales was 200 basis points higher than in the year-earlier quarter, attributing the increase to tariffs. A restaurant can raise prices to absorb higher input costs, but its price/mix and traffic results show why passing costs on is not a simple or guaranteed solution.
Labor ratios need careful interpretation
For Q2, the company reported labor costs at 30.7% of sales, down from 34.8% a year earlier. Kura attributed the lower share to operational efficiencies, pricing and better sales leverage, partly offset by wage inflation. That is a company explanation, not proof that a particular robot, app or conveyor feature caused the change. A labor-cost percentage can also fall when sales rise, even if labor spending itself does not fall.

Restaurant-level profit is not net income
In Q3, Kura Sushi USA reported $16.4 million in restaurant-level operating profit, equal to 19.1% of sales, and said the margin improved 90 basis points year over year. The company identifies restaurant-level operating profit as a non-GAAP measure. It is not the same as GAAP net income, which was $0.4 million in that quarter, and it should not be read as the profit left after all corporate costs.
For comparison, FY2025 restaurant-level operating profit was $52.1 million, or 18.4% of sales, and adjusted EBITDA was $19.1 million. Both are company-reported measures, and restaurant-level operating profit is non-GAAP. These figures help describe restaurant operations but are not interchangeable with net income or a direct measure of the return on each new restaurant.

Keep the U.S. operator separate from its Japanese parent
Kura Sushi USA’s dollar-denominated quarterly results cover the U.S. operating company. They should not be combined with Kura Sushi, Inc.’s consolidated figures, which cover a different entity and reporting period. In its English-language release of September 11, 2026, the Japanese parent reported nine-month FY2026 net sales of ¥189,684 million, up 4.4%, and operating profit of ¥2,845 million, down 45.2%. Under the release’s segment presentation, North America external sales were ¥37,204 million and the segment recorded a loss of ¥645 million. These are consolidated Japanese-GAAP disclosures, translated from Japanese; they are not stand-alone results for Kura Sushi USA. The parent’s English investor-relations releases provide that separate reporting context.
What may transfer to other conveyor-dining businesses
Kura offers a useful case study, not proof that every conveyor-belt restaurant can reproduce its growth. A business considering the format can assess it across several connected questions:
- Expansion and existing-store demand: Are new openings driving total growth, and are comparable locations sustaining traffic?
- Investment and returns: What does a new unit require in capital, and how do restaurant-level results relate to corporate profit?
- Service design: Does the circulating selection work smoothly alongside made-to-order delivery, table ordering, waitlists and off-premise service?
- Technology and labor: Which tasks are actually supported or automated, and do labor costs change for reasons the company can substantiate?
- Food and pricing resilience: How exposed is the menu to imported inputs, and can prices rise without weakening traffic or sales mix?
- Entertainment and repeat use: Do rewards and promotions bring diners back? The existence of a loyalty feature alone does not establish retention.
Kura Sushi USA CEO Hajime Uba characterized the company’s scale, technology approach and team agility as advantages in the FY2026 Q2 release. That is management’s view of its strengths, rather than independent evidence that Kura leads the category. The company’s growth makes conveyor dining a more visible restaurant format; the available company disclosures do not establish a broader industry market trend or show that technology alone resolves the business model’s cost and profitability challenges.
