The heat-related sucralose byproduct discussed in the European Food Safety Authority’s 2026 assessment is chlorinated furan-3-one, a thermal degradation product. EFSA says its formation is not expected under the time and temperature conditions of currently authorised food-additive uses, but formation during variable, high-temperature home cooking such as baking or frying cannot be excluded.

That compound is not the same as sucralose-6-acetate, a separate impurity or degradation product that has produced limited-relevance laboratory DNA-damage findings. Neither finding establishes that ordinary foods made with sucralose contain a harmful dose or that consumers are being harmed.

Which sweetener byproduct is the headline referring to?

The specific compound is chlorinated furan-3-one. In EFSA’s 2026 re-evaluation of sucralose (food-additive code E 955), it is described as a thermal degradation product: a new chemical that can arise when sucralose is exposed to heat and chemically changes.

That name matters because news stories and social-media posts sometimes combine several sucralose-related chemicals under one label. The compound associated with possible heat formation is chlorinated furan-3-one. Sucralose-6-acetate is a different impurity or degradation product discussed in laboratory testing. Treating the two as interchangeable gives a misleading picture of both the chemistry and the evidence.

EFSA reported an in-silico signal suggesting that chlorinated furan-3-one could have genotoxic potential. “In silico” means a computer-based prediction, not a measurement of DNA damage in people who ate a particular food. The assessment therefore raises a question about possible hazard and formation conditions; it does not supply a consumer dose, a cancer estimate or a demonstrated health outcome.

How could chlorinated furan-3-one form in food?

Thermal degradation of sucralose

Sucralose is stable enough for its authorised uses, but like many organic compounds it can undergo chemical reactions when heated. A thermal degradation product is formed when heat causes the parent molecule to break apart or rearrange. The exact reaction depends on factors such as temperature, exposure time, moisture, acidity, the surrounding ingredients and the surface or equipment in contact with the food.

The available EFSA material does not establish a single temperature at which chlorinated furan-3-one suddenly appears. It also does not provide a formation rate for a cake, sauce, fried food or any other recipe. Without those measurements, it is not scientifically sound to state that every baked item containing sucralose produces the compound, or that a particular oven setting guarantees that it does not.

Authorised food-additive uses

EFSA’s central qualification is that “the formation of chlorinated furan-3-one is not expected under the temperature and time conditions used in currently authorised uses.” This refers to the conditions under which sucralose is approved as food additive E 955, not to every conceivable way a consumer might heat it.

In the same 2026 assessment, EFSA considered a request to extend sucralose use to fine bakery wares. The agency’s conclusion about authorised-use conditions should therefore be read in that regulatory context: it is an assessment of specified uses and exposure assumptions, not a blanket statement about all high-temperature processing.

Domestic baking and frying

Home cooking is more variable than a controlled additive-use specification. Oven hot spots, pan surfaces, browning, cooking time, moisture loss and recipe acidity can differ from one kitchen and food to another. EFSA’s plain-language summary says that formation during domestic high-temperature uses such as baking or frying cannot be excluded and recommends that the European Commission consider this possibility.

“Cannot be excluded” does not mean “has been shown to occur in ordinary food.” It means the available information does not allow the agency to rule it out under every variable household condition. The sources do not quantify how often it forms, how much would be produced, or whether the resulting amount would pose a human-health risk.

What did EFSA conclude about sucralose safety?

The overall genotoxicity conclusion

After reviewing sucralose, its impurities and degradation products, EFSA’s Panel on Food Additives and Flavourings concluded that there is no concern for the genotoxicity of sucralose when used as food additive E 955. The conclusion incorporates the available evidence, including relevant negative in-vivo mutagenicity results and the interpretation of positive comet-assay findings alongside other endpoints.

EFSA also discussed a plausible indirect mechanism involving oxidative stress when interpreting some findings. In other words, a signal in one test is not automatically treated as proof that sucralose directly damages DNA in people. The panel weighed the entire evidence set rather than relying on one assay.

The scope of that conclusion

The wording is deliberately limited to sucralose used as the authorised food additive. It should not be expanded into a claim that every possible heating scenario, degradation product or unassessed exposure has been proved safe. The same opinion flags the need to consider potential formation of unwanted degradation products during domestic high-temperature cooking.

This distinction separates a regulatory conclusion about the parent additive under defined uses from an uncertainty about what might happen under different household conditions. Both statements can be true at the same time: authorised use of sucralose does not raise a genotoxicity concern, while additional information about high-temperature home cooking would still be useful.

How is chlorinated furan-3-one different from sucralose-6-acetate?

The two names refer to different chemicals and different lines of evidence. The following comparison keeps the contexts separate.

Evidence axis Chlorinated furan-3-one Sucralose-6-acetate
Relationship to sucralose Thermal degradation product Separate impurity or degradation product
Finding described in EFSA’s 2026 opinion In-silico signal for potential genotoxicity Clastogenic signature in a MultiFlow DNA-damage assay in TK6 cells; the assay result was described as of limited relevance
Other test information No consumer formation rate or cooking threshold supplied Negative response in a bacterial mutation test
Food-formation question Discussed in relation to heating and processing conditions Should not be presented as the heat-formed compound in the headline question
What the result establishes A predicted hazard signal that requires context; it does not establish human harm A laboratory result that does not by itself establish harm to consumers

A clastogenic result indicates a pattern associated with chromosome damage in a test system. It is not the same as showing that people who consume sucralose develop chromosome damage. EFSA’s description of the TK6 MultiFlow result as having limited relevance, together with the negative bacterial mutation response, is why the result must be reported as one piece of evidence rather than a stand-alone risk conclusion.

Does baking with sucralose create a dangerous compound?

The most accurate answer is that formation during some high-temperature home uses cannot be excluded, but a dangerous consumer exposure has not been demonstrated. Current sources do not provide the measurements needed to answer the question in recipe-level terms.

What has not been established

  • No precise temperature threshold at which chlorinated furan-3-one forms.
  • No amount formed in a specific baked, fried or roasted food.
  • No validated estimate of how much a person would ingest from a normal serving.
  • No human-health outcome, cancer risk or disease rate attributable to eating food prepared with sucralose.
  • No evidence that detection of a compound, or a computer-predicted hazard, automatically translates into consumer harm.

These are not minor missing details. Risk assessment requires both hazard information and exposure: what the substance can do, how much is present, how it reaches the body and how often people encounter it. The retrieved EFSA summaries identify a possible hazard signal and a formation uncertainty, but they do not quantify the exposure needed for a recipe-specific risk calculation.

Why a simple oven-number rule would be misleading

A claim such as “sucralose becomes dangerous above a particular oven temperature” would go beyond the evidence supplied. Food temperature is not always the same as the oven’s set point, and the chemical environment changes as water evaporates and browning develops. Time, moisture, acidity and the food matrix can all affect degradation. Until measurements cover those variables, a single cutoff would create false precision.

What does “DNA-damaging” mean in this evidence?

The phrase can describe several kinds of findings, from a computer model that predicts structural alerts to a cell assay that detects chromosome-related changes. These are screening or mechanistic tools used to decide whether more investigation is warranted. They are not direct measurements of illness in consumers.

Computer prediction for chlorinated furan-3-one

EFSA’s in-silico signal indicates that the molecule has features associated with possible genotoxicity in predictive models. Such a result can identify a substance for closer scrutiny, but it does not show that the compound is formed in a particular food, survives digestion at a harmful concentration or reaches human tissues in a damaging amount.

Cell and bacterial tests for sucralose-6-acetate

For sucralose-6-acetate, EFSA reported a clastogenic signature in a MultiFlow assay using TK6 cells and a negative bacterial mutation response. The panel described the MultiFlow result as of limited relevance. Different test systems answer different biological questions, so one positive signal and one negative test cannot be collapsed into a simple “DNA damage proven” label.

Why the broader evidence matters

EFSA’s overall conclusion for authorised sucralose use also considered in-vivo mutagenicity results and the interpretation of comet-assay findings in light of other endpoints and a plausible indirect oxidative-stress mechanism. Regulatory toxicology weighs patterns across studies, doses and biological systems. A headline based on one assay omits the evidence that determines how much confidence to place in that assay.

How do process contaminants fit into the story?

The U.S. Food and Drug Administration uses process contaminants as a general term for unwanted chemicals that can form during food processing, including heating, drying or fermenting. This concept explains why regulators examine chemicals that are not deliberately added to food.

However, the FDA’s general definition is not evidence that chlorinated furan-3-one forms in a particular recipe. It supplies background about how processing can create by-products; it does not provide a compound-specific temperature, concentration or health assessment for sucralose degradation.

What should home cooks and product developers do with this information?

For people cooking at home

  • Do not assume that every heated food containing sucralose contains chlorinated furan-3-one; formation has not been demonstrated for ordinary recipes as a general rule.
  • Do not rely on an invented “safe” temperature cutoff. The available assessment does not establish one.
  • Use sucralose according to the product’s labelled directions and the recipe’s intended process rather than deliberately overheating or burning foods.
  • Interpret claims about “DNA damage” in context: ask which compound, which test, what exposure and what population outcome are being discussed.

For manufacturers and formulators

  • Distinguish the parent additive E 955 from each impurity or degradation product in specifications and safety documentation.
  • Characterise the actual time, temperature, moisture, acidity and food matrix used in a process instead of extrapolating from the oven set point alone.
  • Do not substitute data on sucralose-6-acetate for data on chlorinated furan-3-one; they are separate compounds.
  • Where a process uses high heat, generate compound-specific formation and exposure data before making safety claims about the finished food.

What is the bottom line on the DNA-damaging sweetener byproduct?

Chlorinated furan-3-one is the heat-related sucralose degradation product at issue. EFSA’s 2026 assessment says it is not expected under the time and temperature conditions of currently authorised uses, while formation during variable high-temperature home baking or frying cannot be excluded. The assessment does not give a formation threshold, recipe-level amount or demonstrated human-health risk.

Sucralose-6-acetate is a different compound with a limited-relevance laboratory clastogenic signal and a negative bacterial mutation response. Keeping these compounds separate prevents a laboratory finding about one substance from being presented as proof that the other forms in cooked food.

For authorised use of sucralose as food additive E 955, EFSA concluded that there is no genotoxicity concern. That conclusion is appropriately read within its stated conditions and alongside the agency’s call to consider possible degradation products in domestic high-temperature cooking.
