Mammalian milk is made by mammary glands. Crop milk is a food produced in the crop lining of certain birds, especially pigeons and doves, when specialized cells fill with nutrients and are shed into the crop. “Milk-like secretion” is a broader comparison term: it describes an animal substance that resembles milk in its feeding role or selected components, without proving that it comes from mammary tissue or has the same chemistry.
The distinction at a glance
All three terms can involve feeding young animals, but they do not identify the same biological process. The source tissue, the way the material forms, the parent that produces it, and the way offspring receive it are the useful dividing lines.

| Feature | Mammalian milk | Pigeon and dove crop milk | Broader “milk-like secretion” |
|---|---|---|---|
| Source tissue | Mammary gland | Specialized cells in the crop lining | Depends on the species and secretion; the phrase alone identifies no tissue |
| How it forms | Mammary secretion during lactation | Crop epithelium grows, cells accumulate nutrients, then separate and are shed | Must be established for each animal rather than inferred from the name |
| Who produces it | Mammals | Both male and female pigeons and doves | Varies by species |
| How young receive it | Usually by nursing from a mammary gland, with details differing among mammals | Parents regurgitate the crop material to squabs | Delivery method varies and is not implied by the label |
| Why it is called milk | It is the conventional name for mammary nourishment | It nourishes hatchlings and shares selected nutritional and immune-related features with mammalian milk | It resembles milk in a stated function or property, not necessarily in anatomy |
This is why “crop milk” is an informative analogy rather than a claim that birds have mammary glands. A secretion can be milk-like in what it does while being made by entirely different tissue.

What mammalian milk is
Mammalian milk is produced by mammary glands during lactation. Mammary tissue takes substances from the parent’s circulation, synthesizes milk components, and releases the resulting secretion through the gland’s ducts. The offspring then obtain it by nursing or, in some species, by another form of direct consumption from the mammary area.

The term mammalian milk is useful when the glandular origin matters. Mammalian species differ greatly in the relative amounts of water, fat, protein, carbohydrate, minerals and protective molecules in their milk, so “milk” is not one universal formula even within mammals. What unites these secretions anatomically is production by mammary glands, not a single fixed composition.
That distinction also prevents a common error: a nutrient-rich substance fed to young is not automatically mammalian milk. Function alone cannot identify the tissue that made it.
How pigeon and dove crop milk forms
The crop is a storage organ, not a mammary gland
A bird’s crop is a sac-like enlargement near the throat. Its ordinary role is to hold food temporarily after it has been swallowed. In breeding pigeons and doves, the crop lining changes into a specialized food-producing tissue shortly before the young hatch.

Prolactin changes the crop lining
Prolactin is the key hormonal signal described in the classic review by Nelson D. Horseman and John D. Buntin in the Annual Review of Nutrition (1995). It stimulates growth and development of specialized epithelial cells lining the crop. This is a different organ and cell system from a mammary gland, even though prolactin is also involved in mammalian lactation.
The shared hormone should therefore be interpreted carefully. It shows that prolactin can coordinate parental feeding adaptations in different vertebrates; it does not make crop tissue and mammary tissue equivalent.

Nutrient-loaded cells become the food
Research on pigeon crop milk describes lipid-filled, protein-rich keratinocytes. These cells proliferate in the crop epithelium, accumulate nutrients, and then separate from the lining. The detached cells and their contents form a soft, curd-like material. In other words, pigeon crop milk is primarily a cellular product: the food consists of shed crop-lining cells rather than an ordinary liquid secreted by a mammary organ.
The material also contains nutrients and, in the 2012 study by Gillespie and colleagues, bacteria and immunoglobulin A (IgA). Those findings concern pigeon crop milk and should not be treated as a formula for every bird described as producing a milk-like substance.
Parents regurgitate it to squabs
Newly hatched pigeon and dove young are called squabs. During their earliest days, a parent brings crop milk back up and transfers it directly to the chick. Both male and female pigeons and doves produce the crop material and participate in feeding, so the idea that only a female bird can make “milk” is incorrect for these species.
Why the term “milk-like” is broader
Milk-like secretion is a comparative description, not a precise anatomical category. Scientists or educators may use it when a secretion nourishes offspring, is unusually rich in protein or fat, or has a studied immune-related effect that recalls mammalian milk. The comparison must say which feature is shared.
For example, pigeon crop milk is milk-like because it is a specialized early-life food and because studies have identified nutritional and immune-related similarities with mammalian milk. It is not milk in the mammalian anatomical sense because its source is the crop epithelium.

The phrase does not establish a common evolutionary origin for every secretion that receives the label. Similar parental-feeding solutions can arise in different lineages, and the available evidence does not provide one complete evolutionary history for all substances people might call milk-like. A responsible description names the species, source tissue and documented similarity instead of treating “milk-like” as a biological diagnosis.
Which birds produce crop milk?
Pigeons and doves: the best-developed example
The strongest evidence concerns the family Columbidae, which includes pigeons and doves. The mechanism, hormonal control, parental behavior and cellular composition are all described most fully for these birds. Woodpigeons are a familiar example: their crop-wall cells begin producing the material shortly before hatching, and the shed cells nourish the young during the first part of life.
Flamingos and emperor penguins: reported, but less completely documented
Educational material from the British Trust for Ornithology reports crop-milk production in woodpigeons and notes similar nourishment in greater flamingos and emperor penguins. The peer-reviewed literature also describes production by both sexes in flamingos and by male emperor penguins. However, the same sources emphasize that substantially less information is available for these groups than for pigeons and doves.
Use “reported crop-milk-like nourishment” for flamingos and emperor penguins rather than implying that every detail of pigeon crop biology has been demonstrated in them. The Annual Review literature frames crop-milk feeding as an unusual avian adaptation, while other accounts broaden the list of birds with analogous secretions. These statements can coexist when the difference in evidence depth is made explicit.
What is in pigeon crop milk?
A 2012 paper by Gillespie and colleagues reports a composition of approximately 60% protein, 32–36% fat and 1–3% carbohydrate for pigeon crop milk, alongside minerals. These percentages belong to that paper’s discussion of pigeon crop milk; they are not a universal recipe for crop milk, a value for all pigeons under all conditions, or a directly comparable measurement across bird and mammal species.

The high protein and fat proportions fit the needs of rapidly growing hatchlings, but composition alone does not explain the distinction. The more decisive fact is how the food is made: nutrient-loaded cells are produced in the crop lining and then shed. The study also reports bacteria and IgA, findings relevant to the interaction between crop milk, the chick’s developing gut and early immune protection.
No single cross-species statistic can be responsibly substituted for these pigeon-specific figures. Different studies may use different sampling methods, stages of the breeding cycle and definitions of the material being measured.

Shared job: supplying a vulnerable newborn
Both mammalian milk and crop milk solve the same immediate problem: a parent must provide concentrated nourishment to offspring that cannot yet obtain or process ordinary food independently. This shared function is the clearest reason the word “milk” is used in both cases.
Selected nutritional and immune parallels
Pigeon crop milk contains substantial protein and fat, and research has examined effects on immune-gene expression and the chick’s microbiota. Those are meaningful parallels to mammalian milk, which also supplies nutrients and biological factors in addition to calories. A parallel in one component or effect does not mean the two secretions have the same complete composition.
Different anatomy and delivery
Mammalian offspring generally nurse from mammary tissue. Pigeon and dove parents instead regurgitate material generated in the crop. That difference affects the cells present in the food, the way it is produced during the breeding cycle and the behavior required to deliver it.

How to interpret a claim that something is “milk”
When a book, documentary or article uses the word milk for an unusual animal secretion, check five questions:
- What tissue makes it? Mammary gland, crop lining or another structure?
- What exactly is shared with mammalian milk? Feeding role, fat content, protein content, immune molecules or a measured physiological effect?
- Which species were studied? Evidence for pigeons cannot automatically be transferred to flamingos, penguins or unrelated animals.
- Who produces and delivers it? Both sexes may participate, and regurgitation is not the same as nursing.
- How strong is the evidence? A detailed peer-reviewed mechanism is different from a brief report that a species has a similar-looking secretion.
This checklist turns a potentially confusing label into a specific biological claim.
Common misconceptions corrected
“Birds produce milk just like mammals.”
Some birds produce a milk-like food, but the tissue and cellular process differ from mammalian lactation. Calling it crop milk is accurate when the crop origin is retained in the explanation.
“Only female birds make crop milk.”
Both sexes produce crop milk in pigeons and doves and both help feed the squabs. Reports for other birds should be stated species by species.
“Milk-like means chemically identical to milk.”
The label normally signals resemblance in function or selected properties. It does not establish identical chemistry, identical immune effects or a common glandular origin.
“The pigeon percentages apply to all crop milk.”
The 60% protein, 32–36% fat and 1–3% carbohydrate figures come from a 2012 discussion of pigeon crop milk. They should remain attributed and pigeon-specific.
The practical verdict
Mammalian milk is defined by its mammary-gland origin. Pigeon and dove crop milk is made in the crop when prolactin-driven epithelial cells accumulate nutrients, detach and are regurgitated to squabs by either parent. “Milk-like secretion” is the umbrella phrase for other cases where the feeding role or selected traits resemble milk but the anatomy and mechanism must still be identified. The safest comparison always states the source tissue first and the similarity second.
