The glowing green “balls” in God of War (2018) are Healthstones: pick them up to restore Kratos’s health. In the game, a walkthrough describes approaching one and pressing Circle when the prompt appears. The series has several entries, so controls and pickup options should not be assumed to work the same way in every God of War game.
What green Healthstones do
Green Healthstones replenish Kratos’s health in God of War (2018). A GameFAQs walkthrough recommends saving one until health is low when practical, so less of its healing is wasted. Treat that as a useful rule of thumb, not a requirement: the right moment depends on how much danger you are in.

In God of War (2018), the colors indicate different effects. Prima’s guide to health, rage, and XP stones describes them this way:
