What a 2005 Study Really Found About PFOA in Teflon-Coated Frying Pans

A 2005 report in Chemistry World found no detectable PFOA extracted from the commercially obtained coated and non-coated cookware its authors tested at 100 °C and 125 °C. That is a useful result for those specific experiments—not a blanket declaration that every non-stick frying pan is safe at every temperature or in every condition.

The report, published on 8 September 2005, examined a focused question: could PFOA be released from pan surfaces during cooking-like use? Its answer under the tested conditions was no. Because the original paper and current regulator guidance are not part of the available record here, the finding should be read as historical science reporting rather than present-day safety advice.

What “Cooking up a storm in a frying pan” was about

The headline belongs to a Chemistry World news article by Niamh O’Connor, published on 8 September 2005. Its subject was not frying performance, recipe technique or a comparison of cookware brands. It was a report on work by Charles Powley and colleagues at DuPont investigating whether PFOA could be released from non-stick pan surfaces under conditions intended to resemble cooking.

PFOA was the chemical being sought in the extracts. The report describes experiments using commercially obtained coated cookware alongside non-coated cookware. Water and water-ethanol mixtures were used as extraction liquids, and the tests were carried out at 100 °C and 125 °C. Chemistry World reported that no PFOA was extracted under any of those conditions.

That wording matters. “No PFOA was extracted” means the investigators did not find it in the samples produced by those test conditions. It does not mean that every cookware coating has the same composition, that every pan behaves identically, or that the experiment covered all possible forms of misuse, damage or overheating.

What the reported experiment actually tested

Commercial cookware, with a comparison group

The work did not rely only on laboratory coating coupons. According to the news report, the team obtained cookware sold commercially and examined both coated and non-coated pans. Including non-coated cookware provided a comparison for the extraction procedure, while the coated pans addressed the question that had prompted concern.

Two liquids intended to model contact with food and moisture

The extraction used water and water-ethanol mixtures. Those liquids are relevant to a broad range of cooking ingredients, but they are still test liquids selected by the investigators. They are not a complete reproduction of every food, oil, seasoning, cleaning product or residue that might contact a frying pan.

Two temperatures

The reported test temperatures were 100 °C and 125 °C. These are the conditions attached to the “no PFOA extracted” result. They should not be silently converted into a maximum operating temperature, a universal safe-use threshold or a guarantee for a different pan.

The result in the researchers’ own words

Chemistry World identified Charles Powley as a member of the DuPont research team and quoted him saying: “The results showed conclusively that no PFOA was extracted from commercially-obtained cookware under any of the conditions examined.”

The important qualification is in the final clause: “under any of the conditions examined.” The quotation is strongest when kept attached to the stated cookware, liquids and temperatures. Removing that qualification would turn a bounded laboratory observation into a claim the report did not make.

How the temperature discussion should be read

The article also referred to earlier reports that placed polymer degradation at 360 °C to 500 °C. It described that range as well above temperatures normally encountered during cooking at the time of the report.

This is historical context, not a modern instruction to heat a pan to a particular temperature. A degradation range attributed to earlier reports is not the same thing as a manufacturer’s operating limit, a regulator’s current advice or a guarantee that all coatings respond alike. Pan construction, coating formulation, empty-pan heating, burner output and the condition of the surface can all affect what happens in practice. The 2005 article does not establish a universal safe-temperature number.

What the finding can—and cannot—tell you about health

What it supports

  • In the reported experiments, PFOA was not extracted from the tested commercial cookware at 100 °C or 125 °C using water or water-ethanol mixtures.
  • The result addresses release into the extraction liquids, which is a narrower question than every possible route of exposure.
  • The report provides a historical answer to a specific concern about PFOA and cookware surfaces.

What it does not establish

  • It does not prove that all coated frying pans, past or present, use identical materials.
  • It does not test every cooking temperature, especially temperatures beyond the reported 100 °C and 125 °C conditions.
  • It does not examine every food, oil, solvent, cleaning method, abrasion pattern or damaged coating.
  • It does not provide current regulatory advice for any country or region.
  • It does not rank one coating, material or manufacturer as safer than another.
  • It does not settle broader questions about cookware emissions, particles or chemicals other than the PFOA extraction question reported in the article.

These limits are not evidence that the pans were hazardous. They define the boundary around what this particular report can support.

Why a “no extraction” result is narrower than “no risk”

An extraction experiment asks whether a target chemical moves from a material into a selected liquid under selected conditions. A health-risk assessment normally requires more: a defined product population, validated analytical methods, exposure estimates, toxicology, uncertainty analysis and, where relevant, current manufacturing and regulatory information.

The Chemistry World account gives the reported outcome, but the original study was not retrieved with it. That means the article should be attributed to the news report rather than presented as an independently reviewed reading of the paper. Details such as detection limits, sample numbers, exact extraction times and statistical treatment are not established here, so they should not be invented.

The distinction is especially important because the article is more than two decades old. Manufacturing practices, labeling, replacement products and official guidance may have changed since 2005. A historical report can show what was observed then without answering every present-day question about a pan bought now.

How to use this article when evaluating a frying pan

If your question is specifically whether the 2005 report found PFOA coming out of the tested pans under its cooking-like conditions, the answer is no. If your question is whether a particular pan sold today is safe for every use, this report is not enough evidence. A sensible evaluation keeps those two questions separate.

Identify the exact product and material

“Non-stick” describes a performance category, not one universal formulation. Before relying on a study, identify the pan’s coating or cooking surface, its manufacturer instructions, the intended cooktop and any stated heat limits. A result for commercially obtained cookware in 2005 cannot automatically be assigned to an unnamed modern product.

Match evidence to the use condition

Check whether the evidence covers the temperature, food or liquid, heating duration and surface condition you care about. The reported study used water-based and water-ethanol extraction at 100 °C and 125 °C. It did not establish outcomes for every dry-heating scenario, high-heat searing method or damaged surface.

Separate product selection from safety claims

Retail listings commonly differ in diameter, coating or material, cooktop compatibility and intended use. Those are legitimate buying criteria, but a larger pan or a different finish is not automatically safer because of this report. The available vendor descriptions do not constitute an independent, head-to-head safety study.

Look for current primary information

For a present-day decision, consult the pan’s current care instructions and the relevant official regulator for your location. Those sources can address labeling, temperature limits and product-specific requirements that a 2005 news report cannot. Do not treat the historical temperature comparison as a substitute for that check.

Common misreadings of the 2005 account

“No PFOA was extracted” means “nothing can ever be released”

No. It means the target was not extracted in the reported tests. Different chemicals, products or conditions require separate evidence.

“360 °C to 500 °C” is a recommended cooking range

No. That range was attributed to earlier reports about polymer degradation. It was not presented as a user setting, and it should not be used as a target temperature.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

The report proves every non-stick pan is identical

No. The tested cookware was a particular commercial sample. Product categories contain variations in materials, construction and instructions.

The article is current regulatory guidance

No. It is a 2005 news report. Present-day rules and advice must be checked against current official sources for the relevant jurisdiction.

A retailer’s feature list is a safety ranking

No. Size, cooktop compatibility and coating descriptions help with shopping decisions, but they do not reproduce the extraction experiment or establish a health ranking.

What a complete modern answer would need

A current answer to the broader question—whether a specific Teflon-coated or other non-stick frying pan poses a health threat—would require more than the historical report supplies. Useful evidence would include the exact product and formulation, current manufacturing information, validated testing across realistic temperatures and foods, detection limits, and an assessment by the appropriate regulator.

It would also need to distinguish normal use from foreseeable misuse. Empty-pan heating, prolonged high heat, visible coating damage and use outside the manufacturer’s instructions are different scenarios from the water-based tests reported in 2005. Whether any of those scenarios matter for a particular product is a question for current product documentation and primary safety evidence, not something this article can infer from the two temperatures alone.

Bottom line for readers of the original headline

The 2005 Chemistry World report described a focused experiment in which no PFOA was extracted from the commercially obtained coated and non-coated cookware tested at 100 °C and 125 °C with water and water-ethanol mixtures. That is the defensible conclusion. It is reassuring within those boundaries, but it is not a universal verdict on every frying pan, every coating or every cooking condition, and it is not a replacement for current official guidance.
