Choose vinegar slaw for a tangy, less creamy topping that echoes vinegar-seasoned pork; choose creamy coleslaw for a richer, often sweeter contrast. Both work in a pulled-pork sandwich. USDA MyPlate even pairs pulled pork with red cabbage and carrot slaw dressed with oil and vinegar.
How the two slaws change a pulled-pork sandwich
| What matters | Vinegar slaw | Creamy coleslaw |
|---|---|---|
| Dressing example | USDA MyPlate’s pulled-pork recipe uses oil, vinegar, salt, and pepper. | Purdue Extension’s example combines mayonnaise, vinegar, sugar, and optional celery seed. |
| Eating experience | Tangy and less creamy; a crisp, acidic counterpoint can keep the sandwich from feeling as rich. | Creamy and rich, and often sweeter; proportions and sweetness vary by recipe. |
| Choose it when | You want a sharper topping or one that fits with vinegar-seasoned pork. | You want a familiar creamy texture and a sweeter contrast. |
The table describes those recipes and the likely flavor contrast, not a tested ranking or a rule about which style belongs with pulled pork. The USDA recipe is a direct example of vinegar slaw on the sandwich; either style can be chosen to suit the pork and your preference.

What the recipe examples actually use
Vinegar slaw
USDA MyPlate’s pulled-pork sandwich recipe combines shredded red cabbage and carrots with canola oil, vinegar, salt, and pepper. It also uses white or apple cider vinegar in the pork preparation, so the slaw can complement that tang. The recipe says coleslaw mix may be used instead of red cabbage. For a similar version, apple cider vinegar is one of the listed options for the pork; the slaw dressing itself is described simply as vinegar.

Purdue Extension’s creamy coleslaw uses mayonnaise, vinegar, sugar, and optional celery seed. That combination illustrates a creamy, sweet-tart profile, but it is not a universal formula. The recipe also suggests replacing some of the mayonnaise with plain fat-free Greek yogurt to reduce fat.

Does vinegar slaw have fewer calories or less fat?
Not necessarily. Health Canada describes its vinegar coleslaw as “the lower fat version” of its mayonnaise-prepared coleslaw, which supports a comparison between those particular recipes—not every vinegar slaw and every creamy slaw. The ingredients and quantities, as well as serving size, determine the nutrition of a specific recipe. Compare those details rather than assuming that the dressing style alone settles the question.
USDA MyPlate publishes 311 calories per serving for its pulled-pork sandwich recipe. That figure covers the whole sandwich, not just the slaw, and is not a comparison between vinegar and creamy coleslaw.

Make and serve the slaw safely
Cabbage can be shredded with a knife, grater, or food processor; a special tool is not required. Health Canada’s coleslaw recipe lists these preparation options.
Keep prepared slaw chilled. FoodSafety.gov advises refrigerating leftovers within two hours, or within one hour if the temperature is above 90°F (32°C). USDA FSIS recommends keeping the refrigerator at 40°F (4°C) or below and refrigerating perishable foods promptly in its Food Safety Basics guidance. Vinegar dressing does not make slaw shelf-stable.

- Coleslaw dressing makes delicious coleslaw, a favorite side
- Great as an alternative applications for marinades, dips, glazes and finishing sauces
- With no artificial flavors or colors; gluten-free
- Offers premium quality with shelf-stable convenience
- Ideal for bound salads
Mayonnaise in a slaw is not by itself a reason to leave the dish unrefrigerated or to assume it is unsafe. USDA FSIS says that mayonnaise is made with acid, such as vinegar or lemon juice, and “tends to prevent bacterial growth.” The agency notes that meat, poultry, fish, or eggs held unrefrigerated too long are usually the more relevant source of bacterial growth in the chilled foods discussed. Follow safe refrigeration guidance for the prepared dish and its perishable ingredients.

- If nutrition is the deciding factor, compare the actual recipes and portions rather than relying on the names of the styles.
