Toasted pumpkin seeds—also called pepitas—bring a sweet, nutty crunch to vanilla ice cream. Dry them thoroughly before toasting so they crisp instead of turning soggy; then choose a quick stovetop preparation or an oven bake.
Why pumpkin seeds work on ice cream

Make brittle for a candy-like topping
For a sweeter, more substantial crunch, turn the seeds into brittle. Heat sugar, water, corn syrup, and salt to make a candied coating, stir in pumpkin seeds, then spread the mixture on a baking sheet and allow it to harden. Break the brittle into pieces and use them over vanilla ice cream.
