Reported concentrations vary widely by species, cut, sample and cooking method, so the figures below are estimates from separate studies rather than guaranteed amounts in a particular package or serving.
Healthy adults can make taurine from the sulfur-containing amino acids cysteine and methionine. No general adult taurine target has been established in the cited evidence, and estimated dietary intakes describe what people consume—not a recommended allowance or proof that anyone is deficient.

What taurine is and why food values are hard to compare
Taurine is a sulfur-containing compound that the U.S. Food and Drug Administration-hosted GRAS Notice 586, Taurine (May 13, 2015) describes as a conditionally essential nutrient. The notice explains that healthy adults can synthesize taurine from cysteine and methionine. That means a healthy adult does not automatically need to reach a fixed number from food each day.

Food-composition studies do not use one universal testing format. Some report milligrams per 100 grams of wet weight, some distinguish raw from broiled samples, and dairy data are reported per 100 milliliters. Species, muscle type, feed, storage and preparation can all change the measured value. A number from one study therefore should not be presented as the guaranteed content of every retail serving.

The most useful way to read a taurine value is to keep four details attached to it:
- Amount and type of statistic: a measured range, a single study value or an “up to” upper value.
- Basis: wet weight, raw or cooked food, or liquid volume.
- Food identity: species, cut and muscle type.
- Preparation: boiling, broiling and other methods can produce different measurements.
Reported taurine amounts by food category
The following figures bring together the ranges and examples reported in the cited sources. They are not a ranking produced from one standardized laboratory survey.
| Food category or example | Reported taurine amount | How to interpret it |
|---|---|---|
| Meat and poultry | 11–306 mg per 100 g wet weight | Broad category range in FDA-hosted GRAS Notice 586 (2015); not a guaranteed value for every cut or cooked serving. |
| Seafood | 11–827 mg per 100 g wet weight | Broad category range in the same notice; species and product differences are substantial. |
| Scallops | Up to about 800 mg per 100 g | Upper reported amount in a 2021 Nutrients review, not a typical value for all scallops. |
| Dairy products | 2–8 mg per 100 mL | Volume-based range in GRAS Notice 586; do not silently convert it into a serving estimate. |
| Estimated adult non-vegetarian intake | 40–400 mg per day, often nearer the lower end | Estimate in Schaffer and Kim’s 2010 review; an observation of intake, not a recommended daily amount. |
Because the seafood and meat figures come from broad categories, two foods that appear close on a table may not be directly comparable. Use the range to understand the order of magnitude, not to promise a precise dose.

Seafood is a leading dietary source in the available data. The FDA-hosted notice reports a very broad seafood range, reflecting the fact that fish and shellfish are not chemically interchangeable. The 2021 Nutrients review reports an amount of up to about 800 mg per 100 g for scallops. “Up to” is important: it identifies a reported upper value, not the taurine content of every scallop species, harvest area, frozen product or restaurant portion.

How to choose seafood for a practical diet
- Use variety rather than chasing one number. Different species can contribute taurine, and the evidence does not establish a single best seafood.
- Match the choice to your dietary and budget needs. Fresh, frozen and canned products can all be convenient; their taurine content should not be assumed identical without a measurement for that product.
- Keep serving size separate from concentration. A reported value per 100 g is a concentration reference, not a promise that a package, fillet or bowl contains exactly that amount.
- Follow local food-safety guidance. Taurine content is not a reason to eat raw or undercooked seafood, or to ignore advice for pregnancy, allergy or immunocompromised health.
Meat and poultry: useful sources with variation by cut
Meat and poultry contain taurine, but the category spans many muscles and species. GRAS Notice 586 reports a broad range for meat and poultry on a wet-weight basis. A separate review by Schaffer and Kim (2010) gives selected beef and chicken examples that show why a single “meat value” is misleading.
| Food sample in the cited review | Raw value | Broiled value | Important qualification |
|---|---|---|---|
| Beef | About 43–46 mg per 100 g | About 38 mg per 100 g | Values come from particular cited studies, not every beef cut. |
| Chicken, dark meat | About 83–170 mg per 100 g | About 199 mg per 100 g | Dark meat was higher than the light-meat examples in that table. |
| Chicken, light meat | About 18 mg per 100 g | About 15–18 mg per 100 g | Values are from selected studies and samples. |
The apparent increase from raw to broiled dark chicken in that table should not be read as proof that broiling creates taurine. Cooking changes water content and the studies may have used different samples; the review itself does not establish a universal cooking effect.
Making meat or poultry fit your meals
- Choose the cut you already enjoy and can buy consistently; the evidence does not justify paying a premium for a label that promises a fixed taurine amount.
- When comparing poultry, note whether a source refers to dark or light meat and whether the number is raw or cooked.
- Use ordinary nutrition priorities—food safety, overall dietary pattern, saturated-fat considerations and personal preferences—alongside taurine content.
Dairy contributes smaller amounts
The FDA-hosted notice reports 2–8 mg of taurine per 100 mL for dairy products. These volume-based values are lower than the broad meat, poultry and seafood concentrations reported per 100 g, although the units and food matrices differ. Milk, yogurt and other dairy foods can therefore contribute some taurine without being treated as concentrated sources.

Plant foods: what the cited data do and do not show
One peer-reviewed composition review reported no detected taurine in its samples of corn, potato, soybean, wheat flour and white rice. That finding applies to those sampled foods and methods. It should not be expanded into a claim that every plant or algal food contains no taurine, because the cited dataset did not test every plant species, variety or processing method.
Protein content alone is not evidence that a food supplies taurine. Beans, soy foods and grains can be valuable for protein, fiber and other nutrients while still not being established taurine sources in the cited measurements.
If you eat a vegetarian or vegan diet
Do not add animal foods solely to chase an unestablished taurine target. A varied plant-based pattern can meet many nutritional needs, but the sources summarized here do not establish individual taurine status, a universal plant-food value or a requirement for supplements. Anyone with a medical condition, unusual nutritional needs or concern about supplementation should discuss the issue with a qualified clinician or registered dietitian.

Cooking and taurine retention
The 2021 seafood review says that cooking seafood in water causes the greatest losses. Taurine can move into the cooking liquid, so discarding that liquid may remove part of what was measured in the raw food. The available evidence does not quantify a reliable percentage for a particular recipe, species or cooking time.

Practical kitchen choices
- Use the cooking liquid when it suits the dish. Soups, stews, sauces and broths can retain liquid that would otherwise be poured away.
- Prefer methods that do not require discarding water when practical. Baking, grilling, steaming or pan-cooking may reduce the specific loss pathway described for boiling, but the sources do not assign a guaranteed retained amount to any method.
- Avoid overinterpreting raw-versus-cooked tables. Concentration can change as water leaves or enters the food, and different studies may test different samples.
- Prioritize safe internal temperatures and handling. Taurine retention is not a reason to undercook seafood, poultry or meat.
How to add taurine-containing foods without overcomplicating your diet
There is no evidence in the cited sources that a healthy adult must construct a menu around a daily taurine number. If you simply want to include foods that contain taurine, use this sequence.
- Start with your existing pattern. Identify whether seafood, poultry, meat or dairy already appears in meals you enjoy. A sustainable pattern is more useful than a short-lived food chase.
- Add one seafood meal if it fits. Choose a species and portion that meet your budget, allergy, cultural and safety requirements. Scallops are one example with a high reported upper value, but the evidence does not make them mandatory or guarantee that value in your purchase.
- Rotate poultry or meat options. Treat cut and muscle type as meaningful variables, especially when comparing dark and light poultry meat.
- Use dairy as a supporting food. Milk, yogurt and similar products provide smaller reported amounts and can be selected for their broader nutritional role.
- Keep preparation realistic. If seafood is cooked in water, use the liquid in the finished dish when appropriate; do not sacrifice food safety or enjoyment for an unmeasured retention claim.
- Review the whole diet. Taurine concentration is only one attribute. Include vegetables, fruits, legumes, grains and other foods that meet your overall nutrition goals, even when a cited sample did not contain detectable taurine.
How to compare products and nutrition claims
Package labels usually do not list taurine, and the cited studies do not establish a standardized database value for every common food. USDA’s National Agricultural Library identifies FoodData Central and other food-composition resources, but a directly comparable taurine entry is not established for every food in that database.
When a website or supplement label presents a taurine number, check whether it identifies:
- the original study or analytical method;
- the species, cut or product tested;
- whether the result is raw, cooked or dried;
- the denominator (100 g wet weight, serving, or 100 mL);
- whether the number is a range, average, single measurement or upper value; and
- the date and region of the product data.
A claim that combines a scallop upper value, a meat range and a dairy volume value into one “top foods” ranking is mixing unlike measurements. Keep each figure with its own units and qualification.

Is there a taurine intake target?
The cited evidence does not establish a general recommended daily allowance for healthy adults. Schaffer and Kim’s 2010 review estimated that non-vegetarian adults consume roughly 40–400 mg per day, usually nearer the lower end. That estimate describes observed intake; it does not define an adequate intake, a therapeutic dose or a deficiency threshold.
GRAS Notice 586 states that healthy adults can synthesize taurine from cysteine and methionine and calls taurine conditionally essential. The notice also notes that newborn infants and some disease states may have different dietary considerations. Those statements are population-level context, not a personal diagnosis or prescription.
When individualized advice matters
Speak with a qualified clinician before changing food or supplement intake for an infant, pregnancy, kidney or liver disease, a metabolic disorder, a medically prescribed diet or any condition that affects amino-acid metabolism. The sources summarized here do not establish that a reader has low taurine, that increasing food intake improves a particular condition, or that supplementation is necessary.
Common mistakes to avoid
- Treating an upper value as typical. “Up to about 800 mg per 100 g” for scallops is an upper reported amount, not a guarantee.
- Converting units silently. Dairy is reported per 100 mL, while meat and seafood ranges are reported per 100 g wet weight.
- Assuming cooked food equals raw food. Water loss, water uptake and transfer into cooking liquid can all alter concentration.
- Ranking foods from unrelated studies. Separate studies may use different species, samples and laboratory methods.
- Inferring taurine from protein. A protein-rich plant food is not automatically a taurine source.
- Inventing a daily goal. Estimated intake is not a recommended allowance, and no general adult target is established in the cited evidence.
- Using a food table as medical advice. Infants and people with certain diseases may have different considerations that require professional guidance.
What the evidence can support
Across the cited sources, the defensible conclusion is straightforward: seafood often supplies the highest measured concentrations, meat and poultry are meaningful sources with wide variation, and dairy contributes smaller amounts. Several common plant foods had no detected taurine in one dataset, but that result is not a survey of every plant or algal food. Healthy adults can synthesize taurine, and the available intake estimates do not create a universal target.
Use the numbers as context for choosing a varied diet, keep units and study conditions visible, and avoid promises about the taurine content of a specific serving unless that product has been directly analyzed.
