Sharpening removes metal with an abrasive to create a new edge; honing then aligns and smooths that edge for use. Between sharpening sessions, regular honing can restore cutting feel when the edge has only shifted slightly. When honing stops helping, the knife needs another sharpening.
Honing and sharpening do different jobs
What honing does
Honing realigns an edge that has bent or displaced during cutting. A conventional steel honing rod removes little or no metal, so it is suitable for frequent maintenance. Ceramic and diamond rods can also align an edge, but their harder, abrasive surfaces may remove a small amount of steel and should be matched to the blade’s hardness and condition.

What sharpening does
Sharpening uses an abrasive stone, wheel, disc or guided sharpener to remove metal from both sides of the blade and form a new cutting edge. It changes the edge geometry, so it is a periodic repair rather than a routine after-every-use task.
Where deburring fits
Sharpening usually leaves a thin burr along one side of the edge. Light finishing or deburring strokes reduce that burr and smooth the scratches from sharpening before the knife goes back into service. Honing is the alignment step that follows this finishing work; it is not a substitute for removing a stubborn burr.

The correct order after a knife becomes dull
- Inspect and clean the blade. Remove food residue and check for chips, bends or damage that ordinary maintenance cannot correct.
- Sharpen at the intended angle. Use the abrasive suited to the knife and hold a consistent angle on both sides. Victorinox’s kitchen-knife guidance uses about 20 degrees per side.
- Deburr and finish. Make light, controlled finishing strokes with a fine abrasive or appropriate finishing surface until the edge feels clean rather than wire-like.
- Hone the new edge. With a steel, ceramic or diamond rod, draw the blade from heel to tip while maintaining the same angle. Victorinox specifies five passes on each side in its procedure and explicitly advises using the honing steel after sharpening.
- Clean and test safely. Wipe away any steel or abrasive residue, then test on suitable food or a sheet of paper while keeping fingers clear of the edge.
For a rod, keep the motion controlled and use light pressure. Heavy force can roll the edge you just created, especially on thin or brittle blades.
How often to hone versus sharpen
Hone routinely
Honing frequency depends on use, knife steel and cutting technique. Victorinox recommends honing ideally before or after each cooking session, or at least every few uses. That schedule is a manufacturer recommendation, not a universal laboratory standard. If a knife still cuts cleanly but feels less crisp, a few gentle passes may realign it.

Sharpen when honing no longer restores performance
When repeated honing leaves the knife unable to slice paper or food cleanly, the edge has lost too much metal or has damage that alignment cannot fix. Victorinox gives roughly 30–40 uses or a few times per year as examples for sharpening, with the actual interval varying by use and knife condition. Treat those figures as guidance rather than a fixed calendar.

Choosing the right maintenance tool
| Tool | Metal removal | Best use | Angle control and finish |
|---|---|---|---|
| Traditional steel rod | Little or none in normal use | Frequent alignment between sharpenings | Requires steady hand control; leaves a smooth working edge |
| Ceramic rod | Aligns and can remove a small amount of steel | Harder steels or a mildly abrasive touch-up | Use light pressure and a consistent angle; can refine the edge |
| Diamond rod | More abrasive; removes metal as it aligns | Hard steels or minor edge restoration | Fast action but greater risk of over-removal if pressed too hard |
| Sharpening stone or guided sharpener | Yes, deliberately | Rebuilding a dull edge | Stone work demands angle skill; guided systems make the angle easier to repeat |
Match the rod’s hardness and abrasiveness to the blade steel. A highly abrasive rod used as if it were a passive steel can shorten the knife’s life by removing unnecessary metal.

Sharpening-stone progression and finishing
A coarse stage establishes the edge, while finer stages refine it. HONE’s documented progression starts with a #400 stage before moving to finer refinement and ceramic finishing. Use the coarse stage only as long as necessary to create a continuous edge, then progress to finer surfaces rather than repeatedly grinding at the coarsest grit. Finish with light strokes to reduce the burr, then hone.

The knife is still dull immediately after honing
Honing cannot recreate missing metal. If the edge remains dull after several gentle passes, sharpen it with an appropriate abrasive and then deburr and hone.

The edge feels rough or catches on food
A remaining burr or coarse sharpening scratches may be responsible. Return to light finishing strokes on a finer surface; avoid trying to fix a pronounced burr with forceful honing.
The edge gets worse after rod work
Reduce pressure, keep the rod angle consistent and limit the number of passes. Diamond and ceramic rods are abrasive, so excessive passes can reshape the edge rather than merely align it.

The blade has a chip or major bend
Routine honing is not designed for structural damage. Remove enough metal with a suitable sharpening method to reach an undamaged edge, or use a professional service when the damage is substantial.
Quick Recap
A simple maintenance routine
- Clean and dry the knife after use; avoid cutting on glass, stone or other hard surfaces.
- Use a steel rod briefly and gently every few uses, or around cooking sessions if the knife sees heavy work.
- Test performance periodically instead of sharpening on a rigid schedule.
- Sharpen only when alignment no longer brings back a clean cut.
- Deburr, hone, wipe the blade and store it so the edge does not contact other metal.
