Where the new Thai Bird will be
The Castle Hills location is planned for 2211 NW Military Highway, Suite 121, Castle Hills, TX 78213, inside Castle Hills Market. Thai Bird’s official locations page lists the address and currently marks the restaurant as coming soon.
Opening date and current status
Thai Bird had not disclosed a specific grand opening date in the San Antonio Current’s October 1, 2026 report. The restaurant’s own locations page also continues to say coming soon. For updates on the soft opening and official date, check the Thai Bird locations page.
An earlier estimate is not a confirmed date: in a March 24, 2026 interview, chef David Gilbert said the Castle Hills restaurant might open in six to eight weeks. Later reports still described it as upcoming, so that forecast should not be treated as the opening date.

What Thai Bird serves
The restaurant’s signature is Asian-inspired, gluten-free fried chicken, and it also offers a curated wine list, according to the Current. The gluten-free description applies to the signature chicken; it does not establish that every menu item is gluten-free or address allergy or cross-contact precautions.
MySA’s August 11, 2026 coverage described additional planned menu examples, including Thai-inspired rotisserie chicken, tenders, wings, lemongrass tofu, pad Thai and fire-roasted lamb curry. These are reported examples rather than a guarantee of the Castle Hills location’s current menu, which may change.

Who is behind the Castle Hills restaurant
Chef David Gilbert and co-owner Kristin Alvarez run Thai Bird. In a statement about the new location, Gilbert said: “We wanted to create something that brings those flavors together with the comfort of a neighborhood restaurant,” and “Castle Hills gives us the opportunity to introduce Thai Bird to a new community while staying true to what made people connect with us in the first place: really great food, hospitality and a genuine sense of community.” The San Antonio Current published the statement on October 1, 2026.
