Use the counter for a simple room-temperature approach; use a paper bag when you want to encourage a mature-green or partly ripe tomato to ripen. The bag can hold some of the tomato’s naturally produced ethylene near the fruit, but there is no controlled household comparison showing that bag ripening is faster or tastes better than counter ripening.
Counter or paper bag: how to choose
| Method | Best suited to | What to do | What is established |
|---|---|---|---|
| Counter | Tomatoes already progressing toward ripe, or fruit you can simply leave at room temperature | Keep them away from direct sunlight and hot spots; check their condition. | Room-temperature storage is a straightforward option. UC Davis recommends the counter rather than refrigeration to maintain best flavor after purchase, but does not compare counter ripening with paper-bag ripening. | Paper bag | Mature-green or partly ripe fruit that could use encouragement | Set the tomatoes stem end up in a paper bag, punch several holes around it, fold the top over, and check daily. | The bag helps keep some natural ethylene near the fruit. Illinois Extension says its method may take one to five days depending on how under-ripe the tomatoes are; that is guidance, not a guaranteed timeline. University of Illinois Extension |
Neither method is a proven flavor winner over the other. The evidence supports using the bag as an optional ripening aid, not as a way to improve flavor.

How to use a paper bag
- Choose mature-green or partly ripe tomatoes. A mature-green tomato has reached full size and has a glossy, whitish-green color; fruit picked before maturity may not ripen normally, according to UConn Extension.
- Place the tomatoes stem end up in a plain paper bag. Punch several holes around the bag for ventilation, then fold the top over. These are the household instructions from Illinois Extension.
- Keep the bag at room temperature, out of direct sunlight and away from a hot spot. Check the fruit daily and remove any that have spoiled.
- Expect timing to vary with maturity and conditions. Illinois Extension gives one to five days as an estimate for its bag method, depending on how under-ripe the tomatoes are—not a promise for every tomato or home.
The reason to try the bag is ethylene: tomatoes produce this ripening hormone, and mature-green tomatoes respond to it. A paper bag helps retain some of the fruit’s own ethylene around it; it does not create a guaranteed acceleration.
Temperature matters more than the container
Both methods depend on suitable conditions. The University of Florida IFAS Extension gives 55–77°F (12.8–25°C) as a recommended range for tomato ripening in its handling guidance; it gives 68–72°F (20–22°C) as the optimum for characteristic red color development. These are source-specific guidance figures, not results of a home comparison between a bag and a counter.

Warmer is not necessarily better. UF/IFAS warns that temperatures above 77°F can produce more orange color and premature softening. UC Davis identifies 68°F as the optimum ripening temperature for sensory and nutritive quality in its postharvest guidance, and says fruit ripened off the vine above 77°F can be more yellow and softer. Illinois Extension cautions that temperatures above 80°F can make tomatoes spoil quickly. Keep the fruit away from direct sun and heat rather than trying to speed it up with a warm window or appliance.

UC Davis recommends storing purchased tomatoes on the counter rather than in the refrigerator to maintain best flavor, and says counter storage should last at least one week. That is storage guidance comparing the counter with refrigeration; it is not a taste test of counter ripening against paper-bag ripening. The sources cited here do not establish that either home ripening method produces better flavor.

If a tomato is already ripe and you are deciding where to keep it, the UC Davis recommendation is about counter storage versus refrigeration. If it is still mature-green or partly ripe, choose the bag when you want to retain some ethylene around it, or the counter when you prefer the uncomplicated room-temperature method.
