Onde-Onde vs. Klepon: What’s the Difference?

In Java, klepon and onde-onde are different snacks. Klepon is the boiled, chewy glutinous-rice ball filled with melting palm sugar and coated in grated coconut. Javanese onde-onde is a fried rice-flour ball filled with sweet mung-bean paste and covered in sesame seeds. In Malaysia, Singapore and parts of Sumatra, however, onde-onde or ondeh-ondeh commonly means the coconut-coated palm-sugar ball that Java calls klepon. The naming changes with the region; the food itself is not a matter of one side being correct and the other incorrect.

The difference at a glance

The most dependable way to distinguish these snacks is to look at the cooking method and coating rather than the name alone. A boiled ball rolled in coconut is the klepon-style snack, even when a menu calls it ondeh-ondeh. A fried ball coated in sesame is the Javanese onde-onde.

Texture Chewy outside with a liquid or molten center Chewy center with a firmer fried shell Chewy with a molten palm-sugar center

This regional distinction is described by the Indonesian Chef Association, the Michelin Guide and Scientia Indonesia. It explains why two people can use “onde-onde” for visibly different foods without either using the word incorrectly.

Why the names change by region

Java’s naming convention

In Java, klepon is the name for the green or pandan-scented glutinous-rice ball. The dough encloses a piece of palm sugar, the balls are boiled, and the cooked surface is rolled in grated coconut. The same Javanese vocabulary uses onde-onde for a separate fried snack: a rice-flour shell around mung-bean paste with sesame seeds on the outside.

That local distinction is why a Javanese recipe, market stall or cookbook can say “onde-onde” while showing a fried sesame ball and say “klepon” for the coconut-covered boiled one.

Malaysia, Singapore and parts of Sumatra

In Malaysia, Singapore and parts of Sumatra, onde-onde or ondeh-ondeh commonly refers to the boiled coconut-coated ball. Its filling may be called gula melaka or gula jawa, depending on the local vocabulary for palm sugar. In those places, asking for onde-onde can therefore bring you the snack that a Javanese speaker would call klepon.

The Indonesian Chef Association notes that Sumatra, Sulawesi and Malaysia may use onde-onde for klepon, while Java and some other Indonesian regions reserve onde-onde for the fried, sesame-coated mung-bean snack. These are regional usages, not competing standards administered by a single authority.

Why the confusion persists

The snacks share a round shape and rice-flour-based dough, and the names have traveled with people and recipes across the Malay Archipelago. Once a dish enters another language community, its familiar local name can replace the name used in its place of origin. A menu can also use ondeh-ondeh to make the Malaysian or Singaporean usage clear, while an Indonesian menu may use klepon for the same preparation.

What klepon is in the Javanese tradition

Dough and color

Klepon uses glutinous rice flour, which gives the cooked shell its characteristic elasticity and chew. Pandan or suji is commonly used to color the dough green and to contribute a fresh, grassy aroma. The green color is a familiar visual cue, but color alone is not conclusive: recipes and prepared versions can vary in shade.

Hidden palm-sugar center

A piece of palm or brown sugar is enclosed inside each portion of dough. The sugar melts as the ball cooks, creating the liquid center that releases when you bite through the chewy exterior. In Indonesian usage the sugar is often called gula jawa; in Malaysian usage the comparable ingredient is commonly called gula melaka.

Coconut coating and boiling

The filled balls are dropped into boiling water. They are ready when they rise to the surface, a practical visual signal used in the traditional method. After draining, they are rolled in grated coconut, often seasoned with a little salt. The result is soft and springy rather than crisp.

Because the center is melted sugar, a freshly cooked klepon-style ball can burn your mouth. Letting it cool briefly before biting is a sensible safety step, especially when the balls have just floated out of the pot.

What Javanese onde-onde is

Fried rice-flour shell

Javanese onde-onde uses a rice-flour dough that is formed around a sweet filling and then fried. The hot oil creates a firmer outer shell, so the eating experience is different from the tender surface of boiled klepon.

Mung-bean filling

The interior is a sweet mung-bean paste rather than a cube of palm sugar. It stays as a dense, smooth filling instead of turning into the sudden liquid burst associated with klepon.

Sesame exterior

Before frying, the dough is coated with sesame seeds. The seeds provide the snack’s recognizable speckled appearance and a toasted contrast to the chewy center. If a supposed “onde-onde” is covered in sesame and has a fried shell, it matches this Javanese definition rather than the Malaysian or Singaporean ondeh-ondeh definition.

How the boiled ondeh-ondeh or klepon-style snack is made

The Michelin Guide’s 2016 recipe gives a useful baseline: 200 grams of glutinous rice flour, 100 grams of gula melaka or gula jawa, 100 grams of fresh pandan leaves, 150 milliliters of fresh coconut milk, 100 grams of grated coconut and a pinch of salt water. Michelin lists approximately 1.5 hours for the preparation and a yield of 30 balls. Those quantities and the yield belong to that recipe; they are not a universal production standard.

Prepare the pandan liquid

  1. Blend the fresh pandan leaves with the coconut milk.
  2. Strain the mixture to remove the leaf fibers. The strained liquid supplies both color and pandan aroma to the dough.

Make and portion the dough

  1. Put the glutinous rice flour in a mixing bowl.
  2. Knead in the pandan-coconut liquid until a workable dough forms.
  3. Divide the dough into portions roughly one inch across, following the size described in the Michelin method.

Enclose the sugar

  1. Cut or break the palm sugar into small cubes.
  2. Flatten each dough portion, place a sugar cube in the middle and seal the dough completely around it.
  3. Check each seam for gaps. An opening can let the melting sugar escape into the cooking water.

Boil and coat

  1. Bring a pot of water to a steady boil.
  2. Lower in the filled balls without overcrowding the pot.
  3. Cook until they float. Floating is the doneness cue specified in the recipe.
  4. Lift out the cooked balls and roll them in grated coconut lightly seasoned with salt water.
  5. Allow them to cool briefly before serving because the palm-sugar center may be extremely hot.

The method explains the sensory difference in the comparison table: boiling keeps the outside moist and chewy, while the enclosed sugar liquefies in the heat. There is no frying step and no sesame coating in this klepon-style preparation.

How to identify the snack when a menu uses only “onde-onde”

Because the same word can point to two foods, use a few physical clues or ask one precise question.

  • Look at the coating: grated coconut indicates the klepon-style boiled ball; sesame seeds indicate Javanese fried onde-onde.
  • Ask how it is cooked: “boiled” points to klepon or ondeh-ondeh; “fried” points to the Javanese sesame ball.
  • Ask about the filling: palm sugar means the klepon-style snack; mung-bean paste means Javanese onde-onde.
  • Expect the texture: coconut-coated balls are chewy with a possible liquid center, while sesame-coated balls have a firmer fried shell and a soft mung-bean center.

If you are ordering in Singapore or Malaysia, “ondeh-ondeh” normally removes much of the ambiguity. In Java, “klepon” is the clearer term for the boiled coconut-coated version.

Gula jawa and gula melaka: two regional names for the filling

The palm sugar used in the klepon-style snack is described with different regional terms. Gula jawa is common in Indonesian descriptions, while gula melaka is common in Malaysian and Singaporean descriptions. The naming difference follows the same regional pattern as klepon and ondeh-ondeh.

These terms should not be confused with the mung-bean paste in Javanese fried onde-onde. The two snacks have different fillings even when a seller uses the shared word onde-onde.

Origin, spread and cultural setting

Java as the origin point in one historical account

The Michelin Guide identifies Java as the origin point in its account of the snack and describes its spread through the Malay Archipelago. That wording identifies a historical account, not proof that every later variation must be judged against one exclusive, unchanged recipe.

Regional adaptation

As the snack moved through Sumatra, Sulawesi, Malaysia and other communities, its name and presentation adapted. Michelin also notes adoption and adaptation by Peranakan communities. Indonesian immigration in the 1950s later helped make the snack available in the Netherlands. These movements help explain why the same boiled preparation can have several established names today.

Documented symbolic readings

Indonesiabaik.id, citing Belajar dari Makanan Tradisional Jawa from Indonesia’s Ministry of Education and Culture (2017), presents klepon as a food associated with simplicity because its ingredients are accessible and its preparation is straightforward. That account interprets the hidden sweet filling as a symbol of kindness, the coconut coating as patience and the green pandan color as prosperity and fertility.

Those meanings are documented cultural interpretations, not universal beliefs held by every cook or diner. They add context to the snack’s place in Javanese food culture without changing the practical distinction between boiled klepon and fried Javanese onde-onde.

Common questions answered precisely

Is onde-onde the same as klepon?

Sometimes. In Java, no: klepon is the boiled coconut-coated palm-sugar ball, while onde-onde is the fried sesame-coated mung-bean ball. In Malaysia, Singapore and parts of Sumatra, onde-onde or ondeh-ondeh can mean the same boiled snack that Java calls klepon.

What is inside klepon?

Klepon contains palm or brown sugar, usually described as gula jawa or, in Malaysian and Singaporean contexts, gula melaka. The sugar melts during boiling, producing a liquid center.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Is onde-onde fried or boiled?

The answer depends on the region. Javanese onde-onde is fried. Malaysian, Singaporean and some Sumatran uses of onde-onde or ondeh-ondeh refer to a boiled, coconut-coated ball.

Why is Malaysian onde-onde different?

It is not necessarily a different recipe; it is often a different regional name for the klepon-style snack. Local terminology uses onde-onde or ondeh-ondeh for a glutinous-rice ball filled with palm sugar and coated in coconut.

Who is using the “correct” name?

There is no single universally correct label. As Scientia Indonesia author Reno Wulan Sari puts it, “Kalau begitu, siapa yang keliru? Jawabannya tidak ada. Siapa yang benar? Jawabannya semuanya benar.” The useful qualification is the region: say klepon for the Javanese coconut-coated ball, and specify ondeh-ondeh or the ingredients and cooking method when ordering elsewhere.
