There is no universal plant-based, drop-in substitute for carmine. Beet-derived color, anthocyanin-rich extracts such as sweet potato, red radish, black carrot and elderberry, and tomato lycopene can all provide red hues—but the best fit depends on the food’s acidity, processing, target shade and flavor. For home recipes, food-grade beet powder is one option to test, not a guarantee of a carmine-matching result.
Why look for an alternative to carmine?
Carmine and cochineal extract are made from insects. The U.S. Food and Drug Administration says, “One, cochineal extract (and its lake, carmine), is derived from an insect.” FDA requires cochineal extract and carmine to be identified by name on U.S. food labels because some people may have allergic reactions. People may also seek a color that fits a vegetarian or vegan product. But “natural” does not mean unregulated: in the U.S., color additives must be approved for their intended uses, and additives exempt from batch certification still have identity, purity and use requirements. FDA: Color Additives in Foods.
Which natural red color alternatives are available?
These ingredients are starting points for evaluation, not interchangeable formulas. Their hue and performance depend on the specific extract, food and process.

|---|---|---|
| Dehydrated beet or beetroot red (betanin) | Beet-derived color; FDA describes dehydrated beets as bluish-red to brown. Beetroot red is also assessed as E162 in the EU. FDA; EFSA. | It may not match carmine’s shade. Color and flavor contribution depend on the product and dose; no universal home-recipe dosage is established. |
| Sweet potato, red radish, black carrot or elderberry extracts | These anthocyanin-rich sources are used as options for red coloring. Supplier Oterra describes sweet potato color for selected heated applications and sweet potato/black carrot combinations for bright red shades in low-pH applications. Oterra. | Shade and stability vary with the extract and formulation. Supplier application guidance is not an independent guarantee for another recipe or product. |
| Tomato lycopene | Lycopene is listed as E160d in the EFSA color overview. Oterra describes it as heat-stable and reddish in selected neutral-pH applications. EFSA; Oterra. | It is not a universal fit for every food base or desired red. |
| Fungus carotene | Oterra includes it among possible alternatives and describes a beet/fungus-carotene blend for selected applications. Oterra. | The cited support is supplier-authored. Check ingredient identity, authorization, labeling and suitability for the intended market and use. |
Oterra’s 2024 supplier overview lists these options and emphasizes that color choice depends on application. Treat its descriptions of heat stability, pH behavior and flavor as guidance for the examples it discusses—not as comparative, independent testing across all foods.
How to choose a color for a recipe or product
1. Match the food’s acidity
Start by asking whether the food is acidic or close to neutral pH. Anthocyanin colors can shift with the food environment. Oterra describes certain sweet potato and black carrot combinations for bright red shades in low-pH applications, while its examples report sweet potato color appearing redder at higher pH. Those observations are application-specific, so test the actual color in the intended recipe or product. Oterra.

2. Account for heating and light

Oterra describes heat-stable performance for selected sweet potato and lycopene applications and good heat and light stability for some combinations. These are not blanket promises for every extract, concentration or food matrix. Oterra.

“Red” can mean pink, bluish-red, purple-red or orange-red. FDA’s description of dehydrated beets as bluish-red to brown illustrates why a color’s source name alone cannot predict its appearance in a finished food. Evaluate the actual shade in the target recipe, rather than assuming beet color will reproduce carmine.

4. Check flavor and the food matrix
A coloring ingredient may bring its own flavor or affect the finished product. The available evidence does not provide standardized flavor or dosage comparisons across these ingredients. For a home recipe, add a food-grade beet powder cautiously and assess both taste and color; it may alter the shade and flavor, and no universal amount is established.
5. Confirm rules for the market and intended use
For a commercial product, verify the specific ingredient’s permitted food categories, limits and labeling rules in every market where it will be sold. A color’s use in one food or country does not establish that it is allowed for every product or jurisdiction. FDA explains U.S. approval and intended-use requirements; EFSA explains that EU food colors must be authorized before use and identified on labels by name or E number. FDA; EFSA.

Regulatory status: beet color and the 2026 FDA action
Existing U.S. rules for dehydrated beets should not be confused with FDA’s separate 2026 beetroot-red order. FDA reports that it issued final orders on February 6, 2026, approving beetroot red and expanding approved uses of spirulina extract in human foods. On March 20, 2026, it delayed the effective dates of those orders while evaluating objections. The beetroot-red order therefore should not be described as already effective on the basis of that announcement; check FDA’s current status and applicable listings before relying on it.
