Block the sky above the water
In cold biomes, the Minecraft Wiki’s Tutorial:Crop farming says that covering water with a solid block guards it against freezing. Place the cover so it obstructs the sky directly above the water you want to protect.

This is the simplest approach when the water does not need to remain open to the sky. A general summary of water mechanics also associates freezing with snowy biomes and sky exposure, but the available evidence does not establish a universal, current rule for every edition and version. Keep light for crops with a raised cover
If crops need light, the same tutorial describes putting a block one air space above the water and placing a torch, jack o’lantern, or glowstone on that block. The overhead block shields the water from direct sky exposure while the light source can help illuminate the farm.

- Leave one air block above the water.
- Place a block above that air space.
- Put a torch, jack o’lantern, or glowstone on the overhead block.
This is a construction option from a secondary wiki tutorial, not a guarantee for every game version. Do not rely on a particular light-level number as a universal freezing threshold: the available sources do not establish one across Java and Bedrock.
If the water still freezes
- Check that the water is in a cold or snowy biome; the advice concerns freezing in those conditions.
- Check that the cover actually blocks direct sky exposure at the water’s location.
- If you are relying on a light source rather than a solid cover alone, check the mechanics for your edition and version before assuming a specific light level will prevent freezing.
Java and Bedrock water-light behavior has differed, and water’s effect on light has changed historically. Mojang’s Java snapshot notes document a change to water’s light blocking, so exact light calculations should not be carried across editions or versions without checking.

Why frozen-biome descriptions do not answer this question
Descriptions of frozen rivers and frozen oceans explain how those icy landscapes generate; they do not provide a method for keeping a player-built water source from freezing. Minecraft Help lists frozen rivers among snow-biome variants, while Microsoft’s frozen-ocean reference describes generated terrain and icebergs.
There has also been a historical Bedrock freezing bug: Mojang’s MCPE-75719 issue record identifies an issue affecting version 1.14.60 that was fixed in 1.16.0.61 Beta. That record is historical, not a definitive guide to current freezing rules.
