Homemade vinegar can be used in cooking and salads if it was prepared and handled carefully, but its acidity is not standardized. Do not use it for canning or shelf-stable pickles: use vinegar labeled 5% acidity and follow a tested recipe. If homemade flavored vinegar develops mold, bubbling, cloudiness, or sliminess, discard it without tasting.
When is homemade vinegar safe to use?
Ohio State University Extension says homemade cider vinegar is suitable for salads and cooking, and for pickles that will be kept refrigerated or frozen. This guidance does not establish the safety of every batch: preparation, handling, and condition matter, and a normal-looking appearance cannot prove that vinegar is safe.

For cider vinegar fermentation, Ohio State describes keeping the cider between 60°F and 80°F and allowing airflow through cheesecloth rather than sealing the vessel with a regular lid. Suggested vessel materials include glass, food-grade plastic, wood, enamel, or stainless steel; avoid metal that can corrode. These are process instructions, not a way to verify the finished vinegar’s acidity or safety. See Ohio State University Extension’s cider vinegar guidance.
Which signs mean flavored vinegar should be discarded?
Penn State Extension advises throwing homemade flavored vinegar away without using or tasting it if mold, bubbling, cloudiness, or sliminess develops. Oregon State University Extension also advises discarding flavored vinegar showing mold or signs of fermentation. Do not taste a suspect batch to check it.

A film or growth should not automatically be identified as harmless. Penn State explains that the “mother” in unfiltered commercial apple cider vinegar consists of naturally grown yeast and bacterial cells and is harmless to eat; that description does not identify every film or growth in a homemade batch. For flavored preparations, Penn State recommends sterilized containers and equipment, clean ingredients, and refrigeration and quick use for wine- or rice-vinegar preparations. Oregon State notes that harmful bacteria may survive and multiply slowly in some vinegars, making sanitary preparation and proper storage important. Read Penn State’s flavored vinegar guidance and Oregon State’s infused vinegar guidance.
Can homemade vinegar be used for pickling or canning?
No—not for home canning or pickles stored at room temperature. Homemade vinegar’s acidity varies with its starting material, so it cannot be relied on to supply a known level of acidity in a preservation recipe. Penn State Extension advises using vinegar labeled 5% acidity, also called 50 grain, and following a tested recipe exactly. Ohio State likewise cautions against using homemade vinegar in foods to be canned or stored at room temperature.

Do not reduce the vinegar or add more water than a tested recipe specifies. If you want a less sour result, Penn State says to use sugar rather than reducing the vinegar, and only where the recipe permits that change. Guidance and tested recipes are available from Penn State Extension’s advice about vinegar and Ohio State University Extension.

Why a pH reading is not a substitute for 5% vinegar
Penn State Extension identifies pH 4.6 or below as a processing threshold discussed for boiling-water or atmospheric-steam processing. It is not a home test that, by itself, proves a vinegar recipe safe. The National Center for Home Food Preservation cautions that pH and percent acidity are different measures: a vinegar pH of 5.0 does not mean it is 5% acidity. A home pH reading also cannot validate an untested recipe. Use measured ingredients, vinegar labeled 5% acidity, and research-tested preservation instructions. See Penn State’s home food preservation and acidity guidance and the National Center for Home Food Preservation’s pickling guidance.
