How Umami Makes Food Taste More Savory

Umami is a distinct basic taste that gives food a savory, brothy and deeply satisfying character. Glutamate is the main taste-active compound behind it. When glutamate activates umami receptors—especially the T1R1/T1R3 receptor—your brain registers the characteristic savory taste. Foods such as kombu, tomatoes, mushrooms, aged cheese, soy sauce, meat and fish can provide glutamate naturally, while monosodium glutamate (MSG) provides it as a concentrated seasoning.

Umami can also become stronger when glutamate is paired with certain compounds called 5′-ribonucleotides, particularly inosinate and guanylate. That is why combinations such as a glutamate-rich ingredient with meat, fish or mushrooms can taste more savory than either ingredient alone. A separate effect called kokumi may add thickness or mouthfulness in complex foods, but its mechanism remains incompletely understood.

What umami actually is

Umami is one of the five basic tastes, alongside sweet, sour, salty and bitter. It is not the same thing as aroma, texture or the overall flavor of a dish. Flavor is the combined sensory experience produced by taste, smell and other sensations; umami is specifically a taste signal detected by receptors in the mouth.

The word is often translated as “savory,” although no single English word captures every aspect of it. Umami is commonly associated with broth, cooked meat, ripe tomatoes, mushrooms, fermented sauces and aged cheese. It can make a dish seem more substantial and rounded without necessarily making it saltier.

Glutamate is the principal taste-active compound associated with umami. The cited taste-biology reviews identify the T1R1/T1R3 receptor as an important human umami receptor. When glutamate-containing compounds stimulate this receptor, umami taste pathways are activated. The receptor biology is summarized in the reviews Pharmacology of the Umami Taste Receptor and Molecular insights into human taste perception and umami tastants.

Umami is therefore not simply “the taste of meat.” Plants, sea vegetables, fermented foods and dairy products can all contribute glutamate. This is why a vegetarian broth made with kombu, mushrooms and tomatoes can taste deeply savory even without meat.

How glutamate creates a savory signal

Glutamate activates umami receptors

Glutamate is an amino-acid-related compound found naturally in many foods. In the mouth, free glutamate can interact with umami receptors on taste cells. The resulting signal tells the nervous system that the food has an umami character.

The receptor does not identify whether glutamate came from a seaweed, tomato, cheese or seasoning packet. It responds to the taste-active molecule. The source still matters to the finished dish because whole ingredients bring their own aromas, textures, salt, acidity and other tastes.

MSG is a practical glutamate source

Monosodium glutamate, or MSG, is the sodium salt of glutamic acid. In cooking, it supplies glutamate and is used for its umami and seasoning effects. It is not a separate category of taste from the glutamate naturally present in food; it is one way to deliver that same umami-related compound.

MSG is best understood as a concentrated seasoning rather than a substitute for every ingredient in a recipe. A small amount can provide glutamate without adding the bulk, liquid or texture that would come from a large quantity of tomatoes, mushrooms or broth. Conversely, whole ingredients contribute more than glutamate: kombu brings marine aromas, cheese brings fat and fermentation notes, and tomatoes bring acidity and sweetness.

Taste is only part of palatability

Umami can explain the savory taste supplied by glutamate, but it does not automatically explain every reason a food seems more delicious or satisfying. In a 2023 perspective in npj Science of Food, Takashi Yamamoto and Chizuko Inui-Yamamoto write: “However, the mechanism behind how MSG makes food more palatable remains poorly understood, although many food scientists seem to believe that the umami taste itself plays an important role.” The article is available at https://www.nature.com/articles/s41538-023-00178-2 and its DOI record at https://doi.org/10.1038/s41538-023-00178-2.

That distinction matters: the umami effect of glutamate is well established by the cited taste-biology evidence, while the broader mechanism by which MSG may improve a food’s overall palatability is more complicated.

Where the glutamate in savory foods comes from

Glutamate occurs in both plant and animal foods. The cited taste-receptor reviews identify the following ingredients as familiar glutamate-containing sources:

Ingredient or group How it contributes Other sensory contributions
Kombu Provides naturally occurring glutamate for brothy umami. Marine aroma and a distinctive seaweed character.
Tomatoes Supply glutamate along with a recognizable savory taste. Acidity, sweetness, color and tomato aroma.
Mushrooms Contribute glutamate-related umami, especially in cooked or concentrated preparations. Earthy aroma and meaty texture.
Soy sauce Provides glutamate generated or concentrated through fermentation. Saltiness, fermentation aromas and color.
Cheeses Can contain glutamate associated with ripening and protein breakdown. Fat, acidity, salt and aged dairy aromas.
Some meats and fish Provide glutamate and can also supply umami-related nucleotides. Species-specific aromas, fat and texture.
Beans Offer a plant-based source of glutamate. Starch, protein and a characteristic legume flavor.

The presence of glutamate does not make every preparation taste identical. A fresh tomato, a reduced tomato sauce and a fermented soy product have different balances of acidity, aroma, salt and texture even though all can contribute to umami.

Why ingredient combinations can taste more savory

Glutamate and 5′-ribonucleotides

Umami perception can show synergy between glutamate and certain 5′-ribonucleotides. The best-known examples are 5′-inosinate and 5′-guanylate. The article Umami the Fifth Basic Taste: History of Studies on Receptor Mechanisms and Role as a Food Flavor describes how Japanese scientists identified glutamate, inosinate and guanylate as umami substances and how their combination can intensify umami perception. See Umami the Fifth Basic Taste: History of Studies on Receptor Mechanisms and Role as a Food Flavor.

In practical terms, synergy means that two ingredients can produce a stronger savory impression together than you would predict by considering each one in isolation. Meat and fish can contribute inosinate; mushrooms and some plant foods can contribute guanylate; kombu, tomatoes, soy sauce and cheese can contribute glutamate. The exact result depends on the ingredients, their preparation and the rest of the recipe. There is no universal rule that every pairing will produce the same increase.

Why broths and sauces benefit from layered sources

A broth that combines kombu with mushrooms, or a sauce that combines tomatoes with aged cheese, draws on more than one umami source. Glutamate activates the core umami pathway, while compatible 5′-ribonucleotides can reinforce the signal. Fermentation, drying and aging can also change a food’s concentration of taste-active compounds, although the sensory result still depends on aroma, salt, acidity and texture.

This helps explain why cooks often build savory depth in layers instead of relying on one ingredient. A fermented sauce, a mushroom, a tomato base and a small amount of MSG are not interchangeable, but they can contribute to the same broad taste dimension in different ways.

Umami versus kokumi: savory taste and mouthfulness

Kokumi is sometimes discussed alongside umami because it may make food seem fuller, thicker or more continuous. The 2023 perspective by Yamamoto and Inui-Yamamoto proposes that, in complex food mixtures, MSG may facilitate the binding of existing kokumi substances to kokumi receptors. The authors suggest that this could enhance umami and other tastes and contribute to sensations such as thickness and mouthfulness.

This is a proposed explanation, not a settled account of taste physiology. The same article states that the relevant interactions remain poorly understood at the receptor and taste-cell levels. It is therefore more accurate to say that glutamate clearly contributes an umami taste, while kokumi may help explain some broader impressions of fullness in certain foods.

The distinction is useful in the kitchen. If a broth tastes recognizably savory, glutamate-driven umami is a strong candidate explanation. If it also seems unusually rich, lingering or mouth-filling, several factors may be involved: umami, fat, gelatin, aroma, salt balance, texture and possibly kokumi-related effects.

Ways to add umami in cooking

Use whole glutamate-rich ingredients

  • Start a broth with kombu, then add mushrooms, beans, tomatoes or other vegetables.
  • Use tomatoes in soups, stews and sauces when you want acidity, sweetness and savory depth together.
  • Add mushrooms for earthy aroma and a substantial texture as well as umami.
  • Use soy sauce or aged cheese when their salt, fermentation or dairy character fits the recipe.
  • Combine plant ingredients with meat or fish when the dish allows it, taking advantage of complementary umami compounds.

Use MSG as an optional seasoning

MSG can add glutamate without changing a recipe’s volume or adding a large amount of another food. It is especially useful when a dish tastes flat after its salt, acidity and aroma are already balanced. Add it as a seasoning and taste the finished food; the appropriate amount depends on the recipe and the other ingredients. No single dose applies to every dish, and the cited evidence does not establish a universal measurement.

Balance umami with the rest of the dish

Umami does not replace salt, acid, sweetness, aroma or texture. A tomato sauce can contain glutamate yet taste harsh if its acidity is unbalanced. A mushroom broth can be savory but thin if it lacks body. Before adding more glutamate, check whether the actual problem is insufficient salt, missing acidity, weak browning, diluted stock or a lack of aroma.

Is umami the same as “flavor enhancer”?

Umami is the taste sensation. “Flavor enhancer” is a broader cooking or food-science description for an ingredient used to make existing flavors seem more pronounced or balanced. MSG is often called a flavor enhancer because it supplies glutamate and can affect how a complete dish is perceived. That label does not mean MSG creates every aroma in the food or that it replaces the need for good ingredients.

A whole ingredient and isolated glutamate therefore serve different purposes:

Approach Primary role What else it brings What is established
MSG seasoning Concentrated source of glutamate-driven umami. Seasoning effect, but little of the aroma or texture of a whole food. Glutamate’s role in umami is supported by receptor and taste reviews.
Kombu, tomatoes, mushrooms, soy sauce, cheese, meat or fish Food-based sources of glutamate and, in some cases, other umami compounds. Aromas, salt, acidity, sweetness, fat, protein and texture vary by ingredient. The ingredients are recognized glutamate-containing sources; their complete sensory effects are broader than umami alone.
Glutamate plus inosinate or guanylate Potentially stronger umami through receptor-level synergy. The base ingredients’ own aromas and textures. Synergy is described in umami research, but the effect is not a fixed result for every recipe.

How the idea of umami developed

Japanese scientist Kikunae Ikeda is credited with identifying umami as a distinct taste more than a century ago. Subsequent scientific accounts identified glutamate, inosinate and guanylate as important umami substances and investigated the receptors that detect them. This history is reviewed in Umami the Fifth Basic Taste.

Recognizing umami as a basic taste changed how scientists describe savory foods. Instead of treating broth-like flavor as merely a combination of salt and aroma, that framework made it possible to study a specific taste quality, its chemical stimuli and its receptors. That framework also explains why very different cuisines can produce similarly savory impressions using different ingredients.

Common misunderstandings

“Umami only comes from meat.”

False. Kombu, beans, tomatoes, mushrooms, soy sauce and cheeses are among the glutamate-containing foods identified in receptor reviews. Plant-based and fermented foods can provide substantial savory character.

“MSG is unrelated to natural glutamate.”

False. MSG is the sodium salt of glutamic acid and supplies glutamate as a seasoning. Its practical role differs from that of a whole food because it does not bring the same aroma or texture, but it is not a separate taste mechanism.

“More glutamate always makes food better.”

Not necessarily. Umami is one component of a dish’s sensory balance. Excess seasoning can overwhelm other flavors, while a dish that seems dull may actually need acid, salt, aroma or body rather than more glutamate.

“Kokumi is another name for umami.”

No. Umami is a basic taste associated strongly with glutamate. Kokumi is used for impressions such as thickness, continuity and mouthfulness, and its proposed receptor interactions are less firmly established.

What to remember

Food tastes more savory when glutamate activates umami taste receptors. Natural sources include kombu, tomatoes, mushrooms, beans, soy sauce, cheese, meat and fish; MSG is a concentrated seasoning source of the same key taste-active compound. Certain 5′-ribonucleotides, especially inosinate and guanylate, can work synergistically with glutamate, helping explain the depth created by carefully combined ingredients. The fuller sensation sometimes associated with highly savory food may involve kokumi and other sensory factors, but that part of the mechanism is not yet fully understood.
