How Tomato Ripening Works on and Off the Vine

Yes, a green tomato can ripen after you pick it—but only if it has reached the mature-green stage. Full-sized, firm fruit with developed seeds and gel can continue changing color, softening and developing aroma indoors. Small, underdeveloped green fruit may stay hard, turn unevenly colored or decay instead. The most dependable home method is to keep mature fruit at room temperature, out of direct sun, and inspect it often.

Ripening is controlled partly by ethylene, a natural plant hormone. A ripe tomato releases ethylene and can speed ripening in nearby mature-green fruit. Temperature, harvest maturity, humidity, handling and cold exposure determine how well that process works.

What actually makes a tomato ripen?

Ripening is a coordinated set of changes rather than a simple color switch. The fruit’s green color fades as pigments change, firmness decreases, aroma develops and eating quality changes. Ethylene participates in this process: tomatoes produce it as they ripen, and mature-green tomatoes respond to ethylene supplied from outside the fruit. The UC Davis Postharvest Research and Extension Center identifies tomatoes as sensitive to external ethylene and says treatment initiates ripening in mature-green fruit.

That response has a limit. A tomato does not become capable of normal ripening merely because it was picked while green. Internal development must be far enough along first. Commercial maturity definitions include fully developed seeds and gel inside the fruit. Gardeners generally cannot inspect every internal characteristic, so the practical test is whether the tomato is full-sized and firm, rather than noticeably small or thinly developed.

Mature green versus immature green

  • Mature green: full-sized for its variety, firm, and internally developed enough to continue ripening after harvest.
  • Breaker or partly colored: the first color change has begun; this fruit is already ripening and is usually dependable indoors.
  • Immature green: undersized or poorly developed fruit that may never achieve normal color, flavor or texture.

If frost, disease or another problem forces harvest, choose the largest, firmest fruit and any fruit showing its first color change. Very small green tomatoes are better treated as cooking fruit than as guaranteed candidates for a ripe salad tomato.

On the vine and off the vine: what changes?

Factor Ripening on the plant Ripening after harvest
Maturity The fruit continues developing while attached to the plant. It must already be sufficiently mature for dependable ripening.
Ethylene The fruit produces ethylene as its own ripening process advances. The fruit can continue ripening; a nearby ripe tomato can add naturally released ethylene.
Temperature Outdoor temperatures fluctuate and heat can affect color and quality. Stable room conditions generally work better than temperature extremes.
Exposure Fruit remains exposed to weather, pests and plant disease. You can sort, inspect and remove damaged fruit, but handling can cause bruises.

Neither method guarantees superior flavor in every case. The available extension guidance establishes that maturity and handling are decisive, but it does not provide a universal controlled taste comparison showing that all vine-ripened tomatoes beat all off-vine tomatoes. Cultivar, growing conditions and the stage at harvest still matter.

How to decide when to pick

Use visual and physical signs

Pick fruit that has reached its expected size and feels firm. A mature-green tomato may still be uniformly green, while a breaker tomato shows a blush or other first color at the blossom end. If the fruit is much smaller than the variety’s normal size, it is less likely to ripen normally indoors.

Pick before avoidable outdoor damage

Harvest mature-green or breaker fruit when a forecast frost, prolonged rain, cracking, insects or disease makes leaving it outside riskier. Handle each tomato gently; bruises become decay points during storage. Do not wash fruit and then store it wet. If cleaning is necessary, let the surface dry completely before placing tomatoes in storage.

Step-by-step: ripen mature-green tomatoes indoors

  1. Sort by maturity. Separate full-sized, firm mature-green and breaker tomatoes from undersized fruit. Keep visibly damaged or diseased fruit away from sound tomatoes.
  2. Choose a stable location. Use a room-temperature spot away from direct sunlight, heaters, cold drafts and appliances that generate heat. A counter, cupboard or ventilated box can work.
  3. Arrange fruit without pressure points. Place tomatoes in a single layer when possible, or stack them with enough space that one bruised tomato does not press heavily on another. A paper-lined box can cushion handling; the container is not what causes ripening.
  4. Decide whether to accelerate. To encourage faster color change, place one ripe tomato near mature-green fruit in a loosely closed paper bag or box. The ripe tomato releases ethylene. Do not seal wet or damaged fruit in an airtight container.
  5. Inspect frequently. Check at least every day or two for color, soft spots, leaking juice, mold or collapse. Remove fruit that is decaying so it does not contact sound tomatoes.
  6. Separate ripe fruit. Once a tomato reaches the color and firmness you want, move it away from still-green fruit if you want to slow the remaining batch. The ripe tomato is an ethylene source, so sorting changes the local ripening environment.

For a slower process, omit the ripe-tomato accelerator and keep the batch in a cooler part of the home that remains within a moderate, stable range. Temperature swings are more troublesome than the absence of a special ripening product.

Temperature, humidity and light

Home advice is often reduced to “leave tomatoes on the counter,” while commercial facilities use tightly controlled conditions. Those are related but not interchangeable recommendations.

Condition What the published guidance says How to apply it at home
18–21°C (65–70°F) The UC Davis factsheet lists this as a standard commercial ripening range (1997). A comfortable, stable room is usually sufficient; do not attempt to reproduce a commercial ripening room.
20°C (68°F) UC Davis identifies this as the optimum ripening temperature for sensory and nutritive quality. Use it as a reference point, not a requirement for a household thermometer.
Above 25°C (77°F) UC Davis warns that ripening above this range can produce yellower, less-red fruit that softens more. Move fruit away from sunny windows, radiators, hot garages and other warm spots.
About 55–77°F University of Florida IFAS describes this as a favorable ripening span, with red color developing best around 68–72°F. Avoid both intense heat and a cold porch or unheated shed.
About 90–95% relative humidity with air movement UC Davis and NC State Extension describe high humidity and circulation in managed postharvest conditions. These are facility targets, not a demand for a household humidifier. Keep fruit dry on the surface and allow air to circulate.

Light is not a ripening requirement

Tomatoes do not need sunlight to turn red after harvest. Cornell Cooperative Extension states that “Light conditions have very little to do with ripening” and that tomatoes do not require light to ripen; direct sun can heat the fruit enough to interfere with pigment synthesis. Store tomatoes in a shaded place at a suitable temperature instead of putting them on a sunny windowsill.

How ethylene helps—and what it cannot do

Ethylene is a natural signal, not a magic repair for immature fruit. A ripe tomato placed near mature-green fruit can accelerate the process because it releases ethylene into the surrounding air. This is why a mixed bowl can seem to ripen suddenly after one tomato turns red.

Commercial packers may harvest at mature-green or breaker stages and use controlled ethylene treatment for uniform batches. The Florida IFAS handling guidance notes that fruit harvested at the breaker stage or later has already begun ripening and does not require that treatment. Household growers do not need to purchase ethylene, build a sealed chamber or measure gas concentration. A ripe tomato and a ventilated container provide the practical home equivalent.

Cold storage: when refrigeration causes trouble

Cold exposure can slow ripening and, depending on the tomato’s ripeness, the temperature and the duration, cause chilling injury. Symptoms can include poor color, weaker flavor and an unsatisfactory texture after the fruit warms. Florida IFAS warns about impaired color and flavor after chilling, while NC State describes injury as dependent on temperature and exposure time.

That is not the same as saying every brief period in a refrigerator permanently ruins every tomato. The evidence supports a qualified rule: avoid storing unripe tomatoes in very cold conditions, especially for long periods, and expect stage-dependent results. If a ripe tomato must be chilled briefly for a specific meal, bring it back to a moderate temperature before judging its flavor or texture.

How long does indoor ripening take?

There is no guaranteed number of days. Variety, maturity at picking, temperature, bruising and disease all change the timeline. Nebraska Extension gives an estimate of about two weeks for mature-green tomatoes held at 65–70°F; that is an extension estimate, not a promise for every fruit. Breaker tomatoes generally have a head start because visible color change has already begun.

Use the fruit itself as the schedule: inspect often, eat tomatoes as they reach the desired color and softness, and remove any that begin to leak or mold. A tomato that remains hard and unchanged for an unusually long period may have been immature when picked or may have suffered cold or heat damage.

Troubleshooting common failures

The tomatoes stay green and hard

First check maturity. Undersized fruit may never ripen normally. Next check temperature: a cold room slows the process, while excessive heat can disrupt red color. Move sound fruit to a stable, moderate location and place one ripe tomato nearby if faster ripening is needed.

They turn orange or yellow instead of deep red

High temperatures can favor yellower or more orange color and premature softening. UC Davis specifically cautions about ripening above 25°C (77°F). Relocate the batch to a cooler room-temperature area away from direct sun and heat sources. Cultivar genetics also affect the final color, so not every variety is expected to become the same shade of red.

Fruit softens before it colors

Excess heat, bruising, overripe neighbors or decay can all shorten the useful window. Separate ripe fruit, improve air circulation, remove damaged tomatoes and keep the remaining batch out of hot spots. If a tomato is leaking or moldy, discard it rather than trying to ripen it further.

Only some tomatoes ripen

Mixed maturity is the likely explanation. Sort by size and color, and treat mature-green and breaker tomatoes as separate groups. The smallest green fruit may be immature, while the larger fruit continues normally.

Late-season storage and handling

For a large end-of-season harvest, inspect fruit regularly and follow local extension directions for wrapping and longer storage. Iowa State’s “Tips for using Green Tomatoes” recommends wrapping fruit for storage and checking it. The essential household practices are gentle handling, separation of damaged fruit, stable temperatures and repeated inspection; specialized bags or ethylene kits are not necessary.

What commercial practice means for a home grower

Commercial systems coordinate harvest stage, temperature, humidity, ventilation and ethylene exposure so many tomatoes reach market color together. Those systems are designed for volume, transport and uniformity. A home grower’s goal is different: preserve sound, mature fruit and let it ripen gradually where it can be checked.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Commercial figures such as 90–95% relative humidity or an ethylene-treatment room should therefore be read as postharvest handling specifications, not shopping instructions. Reproducing them without controlled equipment is unnecessary and can increase condensation or decay risk.

The practical rule

Harvest at mature green or later, keep tomatoes shaded at a stable room temperature, use a ripe tomato nearby only when you want to accelerate ripening, and inspect the batch often. Maturity at picking matters more than a special container or a sunny windowsill. If fruit was picked too early, overheated or chilled for too long, no household trick can reliably restore the color and flavor it would have developed at the right stage.
