How to Tell Whether Tuna Is Safe to Eat

You cannot prove tuna is safe by smell or appearance alone. Fresh tuna should smell mild and fresh, feel firm, and have no obvious drying or discoloration, but tuna that was warm for too long can contain histamine while still looking and smelling normal. The safest decision combines sensory checks with the tuna’s cold-chain history, package condition, storage time, and cooking temperature.

If you cannot establish that tuna stayed properly chilled, or if it has a strong sour, rancid, ammonia-like odor, damaged packaging, or an uncertain storage history, do not taste it to find out. Discard it.

Use this decision sequence first

Work through these checks before preparing tuna. A failure at any stage is a reason to stop rather than try to rescue the fish.

  1. Identify the product. Fresh or thawed tuna is judged partly by odor, texture, handling, and temperature history. Canned tuna is judged first by the can’s integrity.
  2. Check the cold chain. Perishable seafood should not remain at room temperature for more than two hours, or more than one hour when the surrounding air is above 90°F (32°C). If refrigerated perishable food has been above 40°F (4°C) for four hours or more, FDA storage guidance says to discard it.
  3. Inspect and smell it without tasting. A mild, fresh smell and firm flesh are reassuring signs, not proof that a temperature-sensitive hazard is absent.
  4. Cook correctly when cooking is appropriate. FDA recommends an internal temperature of 145°F (63°C) for finfish. Cooking addresses ordinary microbial risks but cannot make previously histamine-contaminated tuna safe.
  5. When facts are missing, choose the conservative option. Unknown time out of refrigeration, an unexplained warm package, or a damaged can is not a situation for a taste test.
What you find Decision Why
Sour, rancid, fishy, or ammonia-like odor Discard These are spoilage warning signs.
Firm tuna with a mild smell, intact package, and known cold handling Cook or serve according to the product’s instructions The signs support quality, but sensory checks cannot rule out histamine.
Unknown or excessive time warm Discard Histamine can form without obvious odor or appearance changes.
Swollen, leaking, punctured, fractured, deeply rusted, or severely crushed can Do not open or taste; discard The container may no longer protect the food.
Raw or undercooked tuna during pregnancy Avoid; choose fully cooked tuna FDA advises pregnant people to avoid raw or undercooked finfish.

How to assess fresh or thawed tuna

Start with the smell

At purchase and again before cooking, tuna should smell fresh and mild. A pronounced fishy odor, sourness, rancidity, or an ammonia-like smell is a reason not to eat it. Do not confuse a normal marine scent with a harsh odor that makes you pull away; when in doubt, discard the fish.

Open a sealed package in a clean area and allow a brief moment for trapped packaging odors to dissipate. If the tuna itself still has a warning odor, do not rinse it and do not cook it in an attempt to cover the smell. Washing can spread contamination around a sink and does not remove histamine that may already be present.

Check firmness and surface condition

Fresh fillets should have firm flesh. They should not look excessively dry around the edges, darkened in patches, or visibly discolored in a way that suggests deterioration. These signs are useful quality checks, especially when buying from a counter, but they are not a laboratory test for safety.

Fresh tuna can naturally be red. Red flesh by itself is not evidence that tuna is spoiled, and color alone cannot establish that it is safe. Previously frozen tuna may not have exactly the same appearance as fish that has never been frozen; judge it by its smell, firmness, package information, and handling history rather than demanding one particular color.

Look for handling information

If the package has a time-temperature indicator, check it and follow the product’s instructions. Such an indicator can provide useful evidence that the product experienced a temperature excursion, but an apparently acceptable indicator does not guarantee that every hazard is absent.

Ask when the tuna was packaged or thawed, whether it was kept on ice or refrigerated, and whether it spent time in a warm car, kitchen, buffet, or shopping bag. A retailer’s answer cannot prove the complete history, but a clear, continuous cold-chain story is stronger evidence than an assumption based only on the sell-by date.

Why the sniff test is not enough: histamine poisoning

Tuna is among the fish associated with scombroid, also called histamine, poisoning. After a fish dies, spoilage bacteria can produce histamine if the fish is not chilled properly. The toxin can form without the dramatic odor, slime, or discoloration people expect from spoiled seafood.

FDA states that once histamine has formed, it cannot be removed by washing, freezing, or heating. That means rinsing, refreezing, searing, baking, or pressure-cooking cannot turn mishandled tuna into safe tuna. Do not taste a suspicious piece “just to check,” and do not serve it to someone else if you are unsure about its temperature history.

The agency’s 2024 compliance-policy update changed its decomposition criterion from two or more sample units at 50 parts per million (ppm) or greater to one or more sample units at 35 ppm or greater, and it adopted a 200-ppm level based on possible human illness. Those are regulatory criteria used for agency action and processor oversight, not home-testing limits. Consumers do not have a practical kitchen test that can certify a tuna steak or can is below those levels.

An older FDA advisory notes that toxic histamine levels have been generated in susceptible fish after less than six to 12 hours without ice or refrigeration. That observation is industry context, not a safe allowance. It should make an uncertain warm-storage history more concerning, not provide a period during which leaving tuna unrefrigerated is acceptable.

Keep tuna cold from store to plate

At the store and on the way home

Choose seafood that is displayed cold and return home promptly. Carry fresh or thawed tuna in an insulated bag with ice packs if the trip will take time. Do not leave it in a parked car, on a sunny counter, or in a grocery bag while running other errands.

Refrigerate tuna as soon as you arrive. Keep it in a leakproof container on a low refrigerator shelf so juices cannot drip onto ready-to-eat foods. Follow the package’s use-by or preparation directions; there is no single universal shelf-life number that applies to every tuna product, package, and refrigerator.

Use the time and temperature limits

FDA guidance says meat, seafood, and other perishable foods should not sit at room temperature for more than two hours. When the air is above 90°F (32°C), the limit is one hour. This includes time on a counter, at a picnic, in a serving dish, or in a vehicle.

For refrigerated perishables, FDA storage guidance says to discard food that has been above 40°F (4°C) for four hours or more. If a refrigerator fails, a power outage lasts several hours, or you cannot determine how long tuna warmed, do not rely on smell to extend its life. When the time or temperature is unknown, discarding the fish is the safer choice.

Cook tuna to the recommended temperature

For finfish, FDA recommends an internal temperature of 145°F (63°C). An instant-read food thermometer is the most direct way to check. Insert the probe into the thickest part of the fillet or steak, from the side when practical, and check more than one spot if the piece is uneven. Avoid touching the pan, grill, bone, or a hot metal surface with the probe because that can give a misleading reading.

If you have no thermometer, FDA describes visual cues: cooked fish becomes opaque and separates easily with a fork. Those cues are less precise than a measured temperature, particularly for thick tuna or preparations in which the center is intentionally left rare.

A temperature reading tells you whether the fish reached the cooking target; it does not detect histamine and does not compensate for earlier mishandling. If tuna may have been warm for too long, discard it rather than trying to reach a higher cooking temperature.

Raw and seared preparations

Sushi, sashimi, poke, tartare, and rare seared tuna are not made safe merely by briefly touching the outside to a hot pan. They remain raw or undercooked products and require confidence in sourcing and handling. If the cold chain is uncertain, do not serve them.

How to judge canned tuna

For canned tuna, examine the container before opening it. Reject a can that is swollen, leaking, punctured, holed, fractured, extensively and deeply rusted, or crushed or dented so severely that normal stacking or opening is affected.

Do not taste contents from a leaking or damaged can. Put the container in a bag or other leak-resistant material and dispose of it according to local waste instructions. Do not assume that a can is safe because its contents look or smell normal; FDA cautions that food can cause illness even when it does not look, smell, or taste spoiled.

A minor cosmetic dent that does not compromise the seam or prevent normal opening is different from a deep dent at a seam, a puncture, swelling, or leakage. If you cannot confidently distinguish a harmless cosmetic mark from structural damage, choose another can.

Fresh, thawed, and canned tuna: what changes in the decision?

The product form changes what you can inspect, but it does not remove the need to consider handling. With a fresh fillet, odor, firmness, edge drying, discoloration, package condition, and cold-chain information all contribute to the decision. With previously frozen tuna, the appearance may be less revealing than that of never-frozen fish, so mild odor, firm flesh, package information, and temperature history matter more.

A can gives you a different first checkpoint: the container. Swelling, leakage, punctures, fractures, extensive deep rust, or severe crushing are rejection signs before you open it. An intact can still needs normal storage and should not be treated as proof that every food-safety hazard is absent. In either format, normal smell is not a guarantee.

These distinctions also explain why a sell-by date cannot answer every question. A date does not document how long tuna sat in a car, whether a refrigerator failed, or whether a package warmed during delivery. Conversely, a product that was handled continuously in the cold may be acceptable even when its color is not the exact shade you expected. Use all the evidence together, giving the greatest weight to known temperature control and obvious package damage.

What to do when the history is uncertain

Uncertainty is itself useful information. If you do not know when tuna was removed from refrigeration, how long it sat during a power interruption, or whether a delivery arrived warm, you cannot use appearance to fill that gap. Histamine can form without a detectable smell, and there is no practical home test that certifies a safe level.

Do not try to average the risk by cooking one portion and freezing the rest. Heating and freezing do not remove formed histamine. Do not give the questionable portion to a child, a pregnant person, or another diner simply because you are willing to accept the risk. The safe choices are to return the product to the seller when appropriate or discard it.

If a time-temperature indicator shows an excursion, treat that as a serious warning and follow the product or retailer instructions. If the indicator appears normal but the tuna was known to be warm, the known handling failure still controls the decision. When evidence conflicts, the temperature history outranks a reassuring color or odor.

Pregnancy, children, and other higher-concern situations

FDA pregnancy guidance says raw fish, including sushi and sashimi, is more likely to contain parasites or bacteria than cooked fish. Pregnant people should avoid raw or undercooked finfish and shellfish; FDA gives 145°F (63°C) as the finfish cooking temperature.

The same practical rule is sensible when serving young children, older adults, or anyone with a weakened immune system: use fully cooked tuna that has been handled safely, and do not serve fish with an uncertain temperature history. Cooking does not remove histamine, so vulnerable diners should not receive tuna that you would hesitate to eat yourself.

Recognize possible scombroid poisoning

Symptoms can begin within minutes to a few hours after eating affected fish. FDA lists tingling or burning in or around the mouth or throat, flushing or a rash, hives on the upper body, headache, dizziness, itching, nausea, vomiting, diarrhea, a feeling of breathing constriction, heart palpitations, and respiratory distress.

If symptoms follow tuna, contact a medical professional and mention what you ate and when you ate it. Scombroid poisoning can resemble an allergic reaction, and the timing and fish exposure are important information for clinicians. Seek emergency help immediately for severe breathing difficulty, respiratory distress, or rapidly worsening symptoms.

Do not eat more of the tuna to confirm a pattern, and do not offer leftovers to another person. Keep the package or a photograph of its label if doing so is safe, because product details can help a clinician or public-health investigator.

Common mistakes that make tuna decisions less safe

  • Relying only on color: naturally red tuna is not automatically spoiled, while dangerous histamine may leave appearance unchanged.
  • Using cooking as a rescue step: reaching 145°F addresses cooking safety, not histamine formed during poor chilling.
  • Freezing questionable fish: freezing does not remove histamine and can simply preserve a problem for later.
  • Rinsing or marinating to remove danger: washing cannot remove formed histamine, and rinsing can spread raw-food juices.
  • Tasting a tiny piece: a taste test can expose you to the very hazard you are trying to detect.
  • Counting only the final storage time: time in a car, on a counter, in a delivery box, or during a power outage also matters.
  • Treating a can’s normal smell as proof: container damage requires rejection even when the contents seem ordinary.

What evidence is enough to keep tuna?

For fresh or thawed tuna, the strongest practical case is a continuous, known cold history; an intact package; a mild, fresh smell; firm flesh without concerning drying or darkening; and preparation that follows the product directions. These observations support a decision but cannot certify the absence of histamine.

For canned tuna, the decisive first question is whether the container is intact. An undamaged can can still require normal storage and handling, while a leaking, swollen, punctured, fractured, deeply rusted, or severely crushed can should be rejected without tasting.

When evidence conflicts—for example, tuna smells fine but sat warm for an unknown period—the handling history controls the decision. A reassuring smell cannot overrule a known or suspected temperature failure.

Frequently Asked Questions

Can I tell if tuna is safe by its smell?

A sour, rancid, strongly fishy, or ammonia-like odor is a reason to discard tuna. However, a mild smell cannot prove safety because histamine may form without obvious spoilage signs.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Does cooking tuna to 145°F remove histamine?

No. FDA recommends 145°F (63°C) for finfish cooking safety, but histamine that formed during poor chilling is not removed by heating, freezing, or washing.

How long can tuna sit out?

FDA guidance limits perishable food to two hours at room temperature, or one hour when the air is above 90°F (32°C). If refrigerated food has been above 40°F (4°C) for four hours or more, discard it.

Is red tuna spoiled?

Not necessarily. Fresh tuna flesh may naturally be red, so color alone is not a reliable spoilage test. Consider smell, firmness, package condition, and handling history together.

What can damage means canned tuna should be rejected?

Reject cans that are swollen, leaking, punctured, holed, fractured, extensively deeply rusted, or crushed or dented enough to affect normal stacking or opening. Do not taste contents from a damaged can.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Can pregnant people eat raw or rare tuna?

FDA advises pregnant people to avoid raw or undercooked finfish because it is more likely to contain parasites or bacteria. Choose tuna cooked to the recommended internal temperature instead.

What symptoms can indicate scombroid poisoning?

Symptoms may begin within minutes to a few hours and include mouth or throat tingling or burning, flushing, hives, headache, dizziness, itching, nausea, vomiting, diarrhea, palpitations, breathing constriction, or respiratory distress. Contact a medical professional and seek emergency help for severe breathing problems.

The Bottom Line

Keep tuna only when its package is intact, its cold history is known and appropriate, and fresh tuna smells mild and feels firm. Discard tuna with warning odors, excessive or unknown warming, or a damaged can. Cook finfish to 145°F (63°C), but remember that cooking cannot destroy histamine formed during earlier mishandling.
