Read the specific product’s label first. If it says “Keep Refrigerated,” follow that instruction and do not store the can at room temperature. If it gives preparation or cooking directions, follow them. USDA guidance says a product that is both shelf stable and ready to eat does not need cooking directions or a safe-handling statement—but the word “canned” alone does not establish that it is ready to eat.
Check the label before deciding whether to eat it
Look for storage instructions and wording about preparation or readiness. USDA FSIS explains that a product which is shelf stable and ready to eat is not required to have cooking directions, a safe-handling statement, or a “Keep Refrigerated” statement. That absence is consistent with ready-to-eat status for products in this category; it is not a universal test for every canned meat. Follow the exact package directions. USDA’s labeling glossary offers one explicit example: “OVEN PREPARED” means “Product is fully cooked and ready to eat.” Treat that as a defined label term, not as a substitute for reading the rest of the package. USDA FSIS meat and poultry labeling terms.

| What the package tells you | How to handle it |
|---|---|
| Shelf stable and ready to eat | It can be eaten without reheating if the label confirms this status and the can is sound. Follow any other package instructions. |
| “Keep Refrigerated” | Keep it refrigerated; do not treat it as safe to store at room temperature. Some canned products, including some canned ham, require refrigeration. |
| Preparation or cooking directions | Follow the directions on that product. Do not infer readiness from the can itself. |
Commercial canning uses heat processing in sealed, airtight containers; shelf-stable products are treated by heat and/or drying to destroy microorganisms that can cause illness or spoilage. But “canned” does not always mean shelf stable, and commercial-canning guidance should not be used as a substitute for instructions for home-canned meat. USDA FSIS shelf-stable food guidance.

Check the can and contents for warning signs
Do not use a can that is leaking, bulging, or badly dented. USDA also advises against buying cans that are bulging, leaking, rusted, or deeply dented. After opening, discard the food without tasting it if it smells foul or spurts from the container. A normal-looking can does not override a “Keep Refrigerated” instruction or other package directions. USDA FSIS shelf-stable food safety and USDA FSIS canned-food guidance.
Store unopened cans and leftovers safely
Before opening
Keep unopened canned meat in a cool, clean, dry place, unless its label says to refrigerate it. USDA FSIS’s 2024 guidance gives low-acid canned foods such as meat and poultry a best-quality period of 2 to 5 years when stored appropriately and the can remains in good condition. This is a best-quality period, not a guarantee that a damaged or poorly stored can is safe. USDA FSIS canned-food storage guidance.

After opening
Opening the sealed container allows bacteria to enter. Put unused contents in a clean container and refrigerate them promptly. USDA’s 2024 storage chart lists 3 to 4 days in the refrigerator for opened low-acid canned foods such as meat and poultry. USDA FSIS guidance on canned foods and leftovers.
When reheating is for serving rather than safety
A fully cooked product may be heated for serving, even when reheating is not needed to make it ready to eat. Follow its label. For fully cooked ham, USDA’s consumer temperature chart recommends reheating ham packaged in USDA-inspected plants to 140°F and other fully cooked ham to 165°F. These are ham-specific reheating targets, not universal temperatures for all canned meats; use a food thermometer when following reheating directions. USDA FSIS safe temperature chart.
