Put perishables away within two hours—or within one hour if the temperature is above 90°F (32°C)—then refrigerate or freeze bulk food in portions that suit how quickly you will use it.
Set safe refrigerator and freezer temperatures
FoodSafety.gov recommends a refrigerator temperature of 40°F (4°C) or below and a freezer temperature of 0°F (-18°C) or below. Use an appliance thermometer to check the actual temperature; a dial setting alone does not confirm it. The 40°F-to-140°F (4°C-to-60°C) range is the danger zone, where bacteria that cause food poisoning can multiply quickly. See FoodSafety.gov’s food-safety steps.

Refrigerate or freeze perishable groceries within two hours of purchase or preparation. If the surrounding temperature is above 90°F (32°C), shorten that limit to one hour. Avoid packing the refrigerator so tightly that cold air cannot circulate, and store perishable foods on shelves rather than in the door.

Use the refrigerator windows below for food kept at 40°F (4°C) or colder. If a bulk purchase will not be used within its refrigerator window, freeze portions promptly. The freezer ranges are quality guidance from the FoodSafety.gov Cold Food Storage Chart, not safety deadlines: food continuously held at 0°F (-18°C) or below can remain safe indefinitely, though quality may decline over time.

Portion and protect bulk meat
- Separate raw items: Keep meat sealed and away from produce and ready-to-eat foods. Place it where leaking juices cannot drip onto other food.
- Break up large amounts: Divide meat cuts and cooked leftovers into smaller portions or shallow containers so they cool more quickly.
- Label portions: Mark what the food is and when it was stored to make it easier to use within the relevant refrigerator or freezer guidance.
- Keep cold air moving: Do not overfill the refrigerator, and do not store perishables in its door.
These handling practices are consistent with USDA FSIS refrigeration guidance.

Store and prepare produce safely
Bag fresh produce separately from raw meat, poultry, and seafood when bringing groceries home. Refrigerate perishable produce—such as strawberries, lettuce, herbs, and mushrooms—at 40°F (4°C) or below. Refrigerate purchased pre-cut or packaged produce. Storage needs for intact produce can vary; for quality advice about a particular fruit or vegetable, ask the grocer. The FDA’s produce guidance covers selection, storage, and preparation.
