How to Roast Sweet Peppers in the Oven, on the Grill, or on a Gas Stovetop

For peelable, charred sweet peppers, use a grill or direct gas flame, then cover them briefly so steam loosens the skin. For tender roasted halves, use the oven. The methods below give useful starting times, but use blistering, charring and softness—not the clock alone—to judge doneness.

Choose a method for the result you want

Method Best suited to Approximate guidance
Oven, cut-side down Halved, seeded peppers you plan to peel 425°F for 20–25 minutes, then a 15-minute foil rest; Purdue University Extension, page copyright 2020
Oven, cut-side up Seasoned, tender roasted halves 450°F for about 30–35 minutes; Oregon State University Extension Service / Food Hero, February 2020
Medium grill Whole peppers for charring and peeling About 20–25 minutes, turning occasionally, then a 15-minute foil rest; Purdue University Extension, page copyright 2020
High-heat grill A smaller batch of whole peppers About 10 minutes, turning every 2–3 minutes; The Kitchn, updated August 22, 2022
Direct gas flame One or two whole peppers for charring and peeling About 8 minutes, turning occasionally; The Kitchn, updated August 22, 2022

These timings describe different cuts and heat setups; they are not interchangeable. In every method, look for blistered or charred skin and softened flesh. Oven roasting halves is less hands-on, while grill and flame methods require turning.

How do you roast bell peppers in the oven?

For halves that are easy to peel

  1. Heat the oven to 425°F. Halve and seed the peppers.
  2. Arrange them cut-side down on a foil-lined baking sheet.
  3. Bake for about 20–25 minutes, using blistered skin and softened flesh as cues rather than relying on time alone.
  4. Wrap the peppers in the foil and let them stand for 15 minutes. When cool enough to handle, pull off the skins. This is Purdue University Extension’s 2020 approach for sweet peppers: Purdue Extension’s sweet pepper guidance.

For seasoned, tender roasted halves

  1. Heat the oven to 450°F. Wash four peppers, halve them, and remove the tops and seeds.
  2. Rub the halves with vegetable oil, place them cut-side up on a rimmed baking sheet, and season as desired.
  3. Roast for about 30–35 minutes, until tender and blistered in spots. This is the separate cut-side-up recipe from Oregon State University Extension Service / Food Hero; it is intended to make tender seasoned halves, not to follow Purdue’s cut-side-down peeling method.

How do you roast peppers on a grill?

  1. Heat an outdoor grill to medium. Brush whole peppers with olive oil and place them on the grill rack.
  2. Cook for about 20–25 minutes, turning occasionally, until the skins are charred. Heat and pepper size affect the timing.
  3. Wrap the peppers in foil and rest for 15 minutes. Peel when they are cool enough to handle. These are Purdue Extension’s 2020 directions for whole sweet peppers: Purdue Extension’s sweet pepper guidance.

For a higher-heat approach, The Kitchn’s 2022 method turns peppers every 2–3 minutes until completely charred, about 10 minutes total. It suggests this approach for roughly four to six peppers. That shorter timing reflects a different heat setup than Purdue’s medium-grill guidance; follow the skin’s appearance rather than averaging the times. See The Kitchn’s grill method.

How do you roast peppers on a gas stove?

Here, “stovetop” means placing a whole pepper directly over an exposed gas flame. It is not a dry-pan technique and is not suitable for an electric coil or induction cooktop.

Xyingshine Griddle Pan for Stove Top & Oven, Ceramic Nonstick, Deep Sides
  • EASY FOOD RELEASE: For quick breakfasts, this ceramic griddle pan helps eggs and pancakes lift and turn with less sticking, so delicate food reaches your plate instead of being scraped off the pan. The smooth nonstick surface is made without PFAS, PFOA, lead or cadmium.
  • LESS SPLATTER: When turning food or stirring a saucy dinner, the 2.8 in deep sides help contain oil splatter and keep ingredients in the pan. Enjoy more room to stir with less mess around the cooktop.
  • ONE PAN VERSATILITY: Start dinner on the stovetop, then use the same pan as a roasting pan in an oven up to 428°F. Sear fish or chicken, then finish with vegetables without switching pans. Stainless steel handles, each secured with two rivets, give you two firm points to grip.
  • ROOM FOR MORE: For family dinners and weekend gatherings, the 15.56 x 10.83 in interior and 4.8 QT capacity make this baking pan a roomy choice for casseroles, roasted vegetables, breads and cakes. Bring a generous oven-baked dish to the meal instead of juggling several smaller pans.
  • EASY CLEANUP: After the meal, let the dishwasher handle the pan so you can spend less time at the sink. Four silicone cooking tools help with serving, turning, scraping and brushing; the included black flocked pouch keeps the tools together between meals.
  1. Set one pepper directly over a high gas flame.
  2. Using long-handled, heat-safe tongs, turn it occasionally until the skin is blackened all over. The Kitchn estimates about eight minutes, though burner strength and pepper size vary.
  3. Move the pepper to a heatproof bowl for steaming and peeling, following the steps below.

Expect charred bits and pepper juices near the burner. Use ordinary care around the open flame and handle the pepper with tongs. Illinois Extension also lists open flame as an option for charring thick-skinned peppers: University of Illinois Extension’s pepper guidance. The Kitchn’s direct-flame directions are at The Kitchn.

Can you use the broiler instead?

Yes. Broiling is an oven-based alternative, separate from direct gas-flame roasting. The Kitchn’s 2022 method is intended for four to eight peppers: position an oven rack close to the broiler element, set the broiler to high, arrange peppers on a baking sheet, and turn them occasionally with tongs until blackened—about eight minutes total. Broilers vary; stay nearby and watch the first batch so the peppers do not burn beyond the desired char. Details: The Kitchn’s broiler method.

How to steam, peel and save the juices

  1. While the peppers are hot, place them in a heatproof bowl and cover with a plate, lid or foil. A suitable food-grade bag is another option.
  2. Let them stand for about 15 minutes. Trapped steam helps loosen the skin; Illinois Extension recommends covering or bagging peppers for this rest.
  3. Once cool enough to handle, peel with your fingers. Peel for a smoother texture, or leave some skin on if its texture suits the dish.
  4. Peel over a bowl to catch the juices. Illinois Extension recommends retaining them, and they can be used with the peppers. Avoid rinsing as a default step for sweet peppers; Colorado State’s rinsing direction is part of its specific roasted-chile guidance, not a general requirement for sweet peppers.
