Start with a 15–20 minute warm, soapy soak. If food remains baked on, simmer warm water with one or two tablespoons of baking soda for about 8–10 minutes, let the pan cool, then wash gently. For discoloration that remains after cleaning, try a baking-soda paste, a purpose-made enameled cast-iron cleaner, or—where the cookware maker permits it—Bar Keepers Friend. Never use metal scouring pads, harsh abrasives, or a sudden hot-to-cold rinse.
Why enameled cast iron gets stubborn stains
Enamel is a glass-like coating fused to cast iron. It does not absorb food the way bare, seasoned iron can, but overheated oils, caramelized sugars, starches, and proteins can form a tenacious film on the surface. The residue may look brown, black, gray, or dull orange, and it can cling around the cooking surface, rim, or corners.

High heat is a frequent contributor. Heated oils and fats can polymerize or burn onto the enamel, while a dry pan can leave concentrated deposits that ordinary dish soap will not lift. Le Creuset recommends low to medium heat for its enameled cast iron; that advice is a useful prevention rule, although exact heat limits vary by cookware maker and stovetop.

1Clear out junk files and repair common Windows errors2Fix the driver behind crashes, sound loss and screen glitches3Repair Windows errors before they cause bigger problemsNot every dark mark is the same problem. A raised, greasy or crusty patch is usually food residue. A smooth brown film may be heat discoloration. A gray line can be transfer from a utensil or a mineral deposit from water. Cleaning should begin with the least aggressive method because the enamel can be scratched even though it is harder than most cookware coatings.

Before cleaning: prevent thermal shock and scratches
- Cool the cookware to room temperature. Do not put a hot Dutch oven or skillet under cold tap water. The rapid temperature change can stress the enamel and cause damage.
- Use warm, not scalding, water. Warm water softens grease and food without creating a sudden temperature swing.
- Choose a soft tool. A soft nylon pad, natural-fiber sponge, or soft nylon brush is appropriate. Le Creuset Cast Iron Category Manager Sara has said, “I like to use a soft nylon cleaning pad to clean my Dutch oven at home.”
- Keep metal away from the cooking surface. Steel wool, metal scouring pads, razor blades, and abrasive scrapers can leave permanent scratches.
- Avoid harsh abrasive powders and cleaners. A cleaner that is safe for a stainless-steel sink may be too aggressive for enamel. Follow the cookware maker’s care instructions, especially for colored or matte finishes.
Set the cooled pan on a stable surface before adding water. If the residue is loose, wipe away what you can with a paper towel or soft cloth; removing the easy material first means less scrubbing later.
The basic cleaning method for ordinary residue
- Allow the pan to cool fully. Wait until the exterior and handles are comfortable to touch and no longer radiate cooking heat.
- Fill with warm water. Cover the stained area rather than filling the vessel unnecessarily.
- Add mild dish soap. A small amount is enough; excess soap does not make the process more effective.
- Soak for 15–20 minutes. This gives dried sauce, starch, and grease time to hydrate and loosen.
- Clean with a soft sponge or brush. Use gentle, overlapping strokes. Work around corners and the area beneath the rim without pressing hard.
- Rinse thoroughly. Remove loosened particles and all soap residue with clean water.
- Dry completely. Use a clean towel and leave the pan uncovered until the interior and rim are dry.
This sequence is the right starting point for nearly any food stain because it uses time and water rather than force. If the stain remains after one soak, repeat the soak before moving to a stronger method. Repeated gentle cycles are safer than one aggressive scrub.
How to remove burnt or stuck-on food with baking soda
For food that does not release after soaking, Le Creuset gives a specific baking-soda simmer method. It is an active treatment for softened residue, not a license to boil an empty or nearly empty pan.

- Cool the cookware completely. Starting with a hot pan can create the same thermal-shock risk as a cold-water rinse.
- Add warm water. Use enough to cover the stuck-on area.
- Stir in one or two tablespoons of baking soda. The quantity is the manufacturer’s stated guidance for this method.
- Bring the solution to a gentle simmer. Simmer for about 8–10 minutes. Keep the heat controlled; a violent boil is unnecessary.
- Turn off the heat and let the pan cool. Do not drain boiling liquid into a cold sink or immediately add cold water.
- Drain the cooled solution. If softened bits remain, lift them out with a wooden or silicone utensil rather than a metal edge.
- Wash with warm water, mild dish soap, and a soft sponge. The simmer should have loosened the deposit so that light cleaning removes it.
- Rinse and dry thoroughly. Pay attention to the rim, handles, and any exposed iron at the edge.
The eight-to-ten-minute simmer and one-to-two-tablespoon amount are Le Creuset instructions for its cookware. They are practical starting points, not independently tested universal thresholds for every enamel formulation, vessel size, food type, or competing brand. If your manufacturer gives different directions, use those directions instead.
Removing discoloration, heat stains, and dull films
A pan can be clean yet still show a brown or gray film. Heat stains and discoloration often need a mild polishing step after food residue has been removed. Start with the gentlest option and stop as soon as the appearance improves.

Option 1: baking-soda paste
Mix baking soda with a small amount of water to make a spreadable paste. Apply it to the discolored area, leave it for several minutes, and rub lightly with a soft, damp sponge. Keep the pressure modest; baking soda is less aggressive than many scouring powders, but it can still create fine scratches if ground into the surface. Rinse until no powder remains, then dry.
Do not allow the paste to dry into a hard crust that would require force to remove. Add a little water and wipe it away while it is still easy to lift.
Option 2: a purpose-made enameled cast-iron cleaner
Le Creuset lists a purpose-made enameled cast iron cookware cleaner for stubborn stains. Its Pots and Pans Cleaner is sold in an 8.5 fl oz bottle and is described for heat stains, discoloration, grit, grime, and everyday buildup on enameled cast iron and stainless steel. Use any specialized cleaner only according to its label and your cookware maker’s compatibility guidance.
A purpose-made product is optional, not a required first step. It may be useful when a baking-soda paste has improved but not removed a smooth heat film. Because formulations differ, do not assume that a product approved for one maker’s enamel is automatically approved for every colored, matte, or vintage finish.
Option 3: Bar Keepers Friend where the maker permits it
Le Creuset names Bar Keepers Friend as another option for stubborn stains. Check the exact product formulation and the care instructions for your pan before using it. Apply only the amount directed on the label, use a soft non-abrasive tool, and rinse very thoroughly. If the cookware maker excludes powdered or acidic cleaners, follow that restriction instead.

Which method should you choose?
| Problem | First choice | Procedure | Relative effort |
|---|---|---|---|
| Fresh film or ordinary residue | Warm soapy wash | Cool the pan, wash with warm water and mild soap, then use a soft sponge or brush. | Lowest |
| Dried or stuck-on food | Warm soapy soak | Cover the residue and soak for about 15–20 minutes before gentle washing. | Low |
| Burnt food that survives soaking | Baking-soda simmer | Simmer warm water with one or two tablespoons of baking soda for about 8–10 minutes; cool, drain, and wash softly. | Moderate |
| Remaining brown or gray discoloration | Baking-soda paste | Apply a damp paste, rub lightly with a soft sponge, rinse, and dry. | Moderate |
| Persistent heat stain or buildup | Purpose-made cookware cleaner | Use a compatible enameled cast-iron cleaner exactly as its label and cookware instructions specify. | Moderate |
| Stain after gentler methods | Bar Keepers Friend, if approved | Verify the formulation and compatibility, apply lightly, then rinse completely. | Moderate |
Manufacturer guidance does not provide a head-to-head efficacy test showing that one option always outperforms the others. Choose based on the residue and move from soaking to simmering to mild stain treatment rather than starting with the most abrasive product.
What not to do
Do not shock a hot pan with cold water
Thermal shock is one of the most avoidable risks. A hot enamel surface and cold water contract at different rates, which can stress the coating. Cooling the cookware before washing costs time but protects the finish.
Do not use metal pads or sharp tools
Metal scouring pads, steel wool, knives, and razor scrapers can scratch the enamel. Scratches make the surface harder to clean and may expose the underlying cast iron at chips or damaged edges.
Do not attack a stain with harsh abrasives
Heavy abrasive powders and aggressive scouring creams can dull glossy enamel or alter a matte surface. If a soft sponge cannot remove a mark, switch to a controlled soak, baking-soda simmer, or compatible cleaner instead of applying more force.
Do not keep increasing the burner to solve a cleaning problem
Excessive heat can bake oils and sauces onto the surface and may worsen discoloration. Low or medium heat is the safer everyday setting recommended by Le Creuset for its enameled cast iron.

Dishwasher use and hand-washing trade-offs
Le Creuset says its cookware is dishwasher-safe but recommends hand washing to preserve the appearance of the finish. Repeated dishwashing may dull the surface over time, even when it does not immediately damage the pan. Hand washing also lets you treat the stained area directly and avoid contact with hard dishwasher items that can mark the enamel.
If you use a dishwasher, first remove all loose food and follow the cookware maker’s instructions for detergent, rack placement, and cycle temperature. Never put a hot pan directly into a cold dishwasher load. Allow it to cool, and inspect the rim and handles after the cycle; dry any trapped water before storing.
How to prevent stains from returning
- Control the heat from the beginning. Start on low or medium and increase only when the recipe requires it. Enameled cast iron retains heat, so the pan often needs less burner power than a thinner vessel.
- Add sufficient cooking fat for the recipe. A dry surface makes proteins and starches more likely to stick and scorch.
- Deglaze while residue is still warm, but not while the pan is dangerously hot. Use liquid appropriate to the recipe and avoid a cold splash into a smoking-hot vessel.
- Clean soon after cooking. A short warm-water soak is more effective than allowing sauce or sugar to dry overnight.
- Use suitable utensils. Wood, silicone, and other maker-approved tools reduce the chance of scratches and transfer marks.
- Dry the pan completely. Moisture left around the rim can leave mineral spotting and can affect exposed iron.
- Store with protection between pieces. A soft cloth or pan protector can prevent enamel-on-enamel knocks when cookware is stacked.
Troubleshooting by stain type
Black crust on the bottom
Cool the pan, remove loose crumbs, and soak in warm soapy water for 15–20 minutes. If the crust remains, use the one-to-two-tablespoon baking-soda simmer for about 8–10 minutes, then cool before draining and washing. Do not scrape the crust with metal.
Brown film that feels smooth
This is more consistent with heat discoloration than a raised food deposit. Wash first, then try a baking-soda paste. If the film persists, use a compatible purpose-made enameled cast-iron cleaner or another product specifically allowed by the cookware maker.

Gray streaks after using a utensil
Use a soft sponge and mild soap first. If the streak is only transfer from the utensil, a light baking-soda paste may help. Avoid trying to polish it out with a metal pad, which can replace a superficial mark with a permanent scratch.

White spots or a chalky ring
Minerals in water or detergent residue can leave a pale film. Rinse thoroughly and wipe with a soft cloth. If the manufacturer permits a particular descaling or cookware cleaner, follow that instruction; do not substitute a strong household abrasive without checking compatibility.
A chip, crack, or exposed dark patch
Cleaning cannot repair damaged enamel. Stop scrubbing the area, inspect whether cast iron is exposed, and consult the cookware maker about safe continued use. A chip at the cooking surface or rim deserves particular attention because it can expand with further impacts or thermal stress.
A practical cleaning checklist
- Let the cookware reach room temperature.
- Remove loose food without scraping the enamel.
- Try warm water, mild soap, and a soft sponge.
- For stuck food, soak for 15–20 minutes.
- If needed, simmer warm water with one or two tablespoons of baking soda for 8–10 minutes.
- Cool and drain before wiping the softened residue.
- For discoloration, try a baking-soda paste or a compatible purpose-made cleaner.
- Use Bar Keepers Friend only when the exact formulation and cookware instructions allow it.
- Rinse until no cleaner or powder remains.
- Dry the interior, exterior, rim, and handles completely.
- Store without metal tools or unprotected cookware rubbing against the enamel.
When a stain will not come out
Some discoloration is cosmetic and may remain even after all food residue has been removed. Enamel color, finish, water chemistry, the type of food, and the age of the cookware can affect the final appearance. Do not escalate indefinitely: repeated aggressive scrubbing can cause more lasting harm than the original mark.
Recommended Free Tools
If the surface is smooth, intact, odor-free, and no food remains, the pan may be clean even if a faint heat tint is visible. If you see cracking, flaking, a sharp chip, exposed iron, or a rough area that catches a sponge, stop using abrasive methods and seek the manufacturer’s care or replacement guidance.
Bottom line
Cool the enamel completely, soften stains with warm water, and use the least abrasive method that works. A 15–20 minute soapy soak handles most stuck food; a controlled 8–10 minute simmer with one or two tablespoons of baking soda tackles tougher deposits. Treat remaining discoloration with a baking-soda paste or a compatible cookware cleaner, and protect the finish by avoiding thermal shock, metal pads, harsh abrasives, and excessive heat.
