How to Prevent Cakes From Sticking to Bakeware

For a standard round, square, or rectangular cake pan, line the base with parchment paper and coat the sides with nonstick baking spray. For a Bundt or other intricate shaped pan, thoroughly coat every groove and the center tube with nonstick spray or shortening immediately before adding the batter. These steps create a barrier between the batter and the pan, which is the most reliable way to improve release.

Why cakes stick

Cake batter contains water, sugar, proteins, and starches that set against the hot surface of a pan. If batter contacts the metal directly, part of the baked cake can bond to the surface. A release method works by placing a barrier between the batter and bakeware. Parchment, nonstick spray, shortening, and a shortening-and-flour coating are all ways to create that barrier.

A pan being labeled nonstick does not eliminate the need to prepare it. King Arthur Baking explains that cake batter can still bond to a nonstick surface during baking. Preparation is especially important when the cake is delicate, the pan has a detailed shape, or the coating has begun to wear.

The best default for flat-bottom cake pans

For ordinary layer cakes, the clearest general recommendation is parchment on the bottom and nonstick spray on the sides. King Arthur Baking’s 2022 comparison of a dozen pan-preparation methods identified this combination as its preferred practical method. Wilton also recommends parchment or nonstick spray for cake pans.

Step-by-step preparation

  1. Choose parchment that matches the base. Use a round parchment liner for a round pan. For a square or rectangular pan, cut a sheet to fit the bottom without large folds or exposed gaps.
  2. Place the parchment in the empty pan. It should lie flat across the base. If it curls, press it down before filling the pan.
  3. Spray the sides. Apply nonstick baking spray to the vertical sides and into the corners. The parchment protects the base; the spray protects the exposed sides.
  4. Add the batter according to the recipe. Do not leave a heavily sprayed pan standing for a long time before filling it; this is particularly important with shaped pans, where spray can run and collect.
  5. Release the cake according to the recipe’s cooling instructions. The parchment should separate the cake from the base when the cake is turned out or lifted as directed.

Some bakers spray the pan before laying in the parchment and then spray the parchment as well. That adds another layer of release protection, but it is not required for the basic parchment-on-the-bottom, spray-on-the-sides method.

Fitting parchment neatly

A liner works only where it actually covers the base. Trace the outside of a round pan onto parchment, cut just inside the line, and check the fit before spraying. For a square or rectangular pan, measure the base and trim the sheet so it lies flat rather than buckling up the sides. Large wrinkles can leave an uneven cake edge and make the paper harder to remove cleanly.

Keep the parchment on the base and the spray on the exposed sides unless the recipe gives different directions. If you use the optional extra-spray approach, apply only a light coat before positioning the paper, press the paper flat, and then coat its upper surface lightly. The goal is a continuous barrier, not a pool of fat.

Why parchment belongs on the base

The flat bottom is where a layer cake most often tears when it is removed. A parchment round or accurately cut sheet creates a continuous physical barrier, so the cake can be lifted or inverted without relying only on the pan’s coating. Parchment is less useful on the vertical sides when the cake must climb during baking, so the usual default combines it with spray rather than replacing spray everywhere.

Butter and flour: the traditional alternative

If you do not want to use baking spray, Wilton describes a traditional coating of softened butter and flour. Spread a thin layer of softened butter over the entire interior, including corners and any small crevices. Sprinkle in flour, then tilt and rotate the pan so the flour covers the buttered surface. Tap out excess flour before adding batter.

Work over a sink or sheet of parchment while rotating the pan so excess flour can be returned or discarded. Look at the pan from several angles; shiny butter showing through means that spot still needs flour. Coverage matters more than the particular fat. Any missed corner can become an attachment point. A thick layer can also leave a visible flour residue on the finished cake, especially on exposed sides.

For a chocolate cake, a recipe may specify a dry coating other than white flour. Follow the recipe’s instruction rather than changing the coating solely for appearance. The essential purpose remains the same: cover the surface completely before the batter goes in.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Do not confuse a light, even coating with a thick paste. Excess shortening or flour can collect in corners, while too little leaves exposed pan. If a recipe names a flour-based spray or another release product, use that direction rather than combining several products without a reason.

How to prepare Bundt and other shaped pans

Bundt pans are a separate problem from flat-bottom layer pans. Their flutes, narrow recesses, high sides, and center tube give batter many more places to catch. A coating that looks complete on the broad surfaces may still leave a dry groove unprotected.

Use a suitable pan in good condition

King Arthur Baking recommends a nonstick Bundt pan in good condition. Check that the interior coating is intact and that the pan’s capacity matches the recipe. A substantially larger pan can leave a delicate cake with less support from the pan, making an otherwise sound release method less forgiving.

Before greasing, inspect the tube, base, and every ridge for baked-on residue or worn coating. A clean, intact surface is easier to coat uniformly. If the pan’s instructions specify a particular release product, those instructions take priority over a general rule for flat pans.

Coat every recess

  1. Choose the release coating specified for your pan or recipe. King Arthur Baking recommends nonstick vegetable-oil spray or melted shortening for its Bundt guidance. Wilton’s shaped-cake instructions list solid vegetable shortening and flour, vegetable-oil spray, flour-based spray, or Cake Release as alternatives.
  2. Cover the entire interior. Work around every flute, ridge, corner, and the central tube. Do not stop after spraying the broad outer wall.
  3. Use a pastry brush for intricate designs. A brush can distribute melted shortening into recesses that are difficult to reach with a quick spray.
  4. Grease immediately before filling. King Arthur Baking cautions that spray can run down the sides and pool at the bottom if the pan sits for too long after greasing.
  5. Fill with the correct amount of batter. Use the recipe’s stated pan size or capacity. The right coating cannot compensate for a pan that is a poor structural match for the cake.

Hold a sprayed pan over the sink and turn it slowly so the spray reaches the interior wall and tube. With shortening, use the brush to push a thin film into the deepest grooves rather than leaving visible clumps. Check the underside of each ridge, because a quick pass from above can miss those surfaces.

Should a Bundt pan always be floured?

No single flour-dusting rule fits every shaped pan. Wilton’s shaped-pan directions use shortening and flour and name flour-based spray and Cake Release as alternatives. King Arthur Baking’s Bundt guidance notes that flour can leave a dry coating or release less satisfactorily in some nonstick Bundt pans, and suggests alternatives for that case.

That difference applies to the pan and recipe, not to all cake pans universally. For a particular Bundt design, follow the bakeware manufacturer’s instructions and the recipe’s release method. The important distinction is between a flat pan, where parchment gives the base a clean barrier, and an intricate pan, where complete coverage of every recess is the priority.

Choosing a preparation method

Pan or situation Preferred preparation Coverage concern Cleanup or release note
Round, square, or rectangular layer pan Parchment on the bottom plus nonstick spray on the sides Cut parchment to the base; spray corners and vertical sides Simple, repeatable setup for most flat-bottom cakes
Flat pan without parchment Thin softened-butter coating followed by flour Butter and flour must reach every corner Excess flour can remain on the cake’s surface
Bundt or detailed shaped pan Thorough nonstick spray or melted shortening; use flour only when the pan or recipe calls for it Flutes, narrow grooves, and the center tube require complete coverage Grease immediately before adding batter so spray does not pool
Intricate novelty pan Use the manufacturer’s specified release product or a carefully brushed shortening coating A pastry brush can reach recesses that spray misses Confirm capacity and pan condition before baking

Think of the choice in two parts: the shape determines how completely you must cover the surface, and the pan or recipe determines which coating is appropriate. Parchment is easy to fit on a flat base, while a brush or spray is more practical for a tube pan. There is no controlled comparison proving one product wins for every metal, coating, cake formula, and oven.

Timing, pan condition, and batter choices that affect release

  • Prepare before the batter is ready to pour. Grease a Bundt pan just before filling it. This limits runoff and pooling.
  • Do not treat a nonstick label as a guarantee. Prepare nonstick bakeware, particularly when the coating is older or the cake is fragile.
  • Inspect the surface. A damaged or worn coating is less predictable. A pan in good condition is specifically recommended for Bundt cakes.
  • Match pan capacity to the recipe. The pan affects how much support surrounds the cake. King Arthur Baking cautions that a substantially larger Bundt pan can leave a delicate cake with less support.
  • Follow the recipe’s release timing. Cooling and turning-out directions vary with the cake and pan. Do not force the cake out before the recipe says to release it.
  • Keep the barrier thin and complete. The objective is full coverage, not a thick layer of fat or flour that can alter the cake’s edges.

Have the pan prepared only when you are ready to add the batter, especially for a shaped pan. If you need to pause, recheck the grooves and tube before filling; visible runoff at the bottom is a sign that the coating has moved and needs attention.

After baking: protect the pan and its coating

If you used pan spray on nonstick bakeware, wash the pan in warm, soapy water soon after removing the cake while the pan is still warm. King Arthur Baking notes that spray residue can become tacky as it cools and build up on the surface.

Use a gentle sponge or cloth rather than aggressive scrubbing. Harsh abrasion can damage the finish, making later release more difficult. Remove residue while it is fresh, rinse thoroughly, and dry the pan before storing it.

If a cake has left a stuck patch, soak the warm pan in soapy water and soften the residue before wiping it away. Avoid treating a nonstick surface like bare cast iron or uncoated metal; abrasive tools can shorten the life of the coating. Cleaning promptly is part of release prevention: a film left from one bake can make the next coating uneven.

Common failure modes and fixes

What happened Likely preparation issue Correction for the next bake
The base tore when the cake was lifted The flat bottom had no parchment or the parchment did not cover the base Use a correctly sized parchment round or cut sheet, and spray the sides separately
A Bundt cake stayed in the grooves Spray or shortening missed recesses or the center tube Brush the release coating into every groove and grease immediately before filling
Spray collected at the bottom of a shaped pan The pan was greased too far ahead of filling Prepare the pan immediately before adding batter
The cake stuck even though the pan was labeled nonstick The batter bonded during baking or the coating was worn Use parchment or a complete release coating and inspect the pan’s condition
A dry white film appeared on a shaped cake Flour remained on the release coating Use a thinner coating, tap out excess flour, or follow the pan’s recommended non-flour alternative
Sticky residue built up after several uses Spray residue cooled on the pan and was not removed promptly Wash with warm soapy water while the pan is still warm and avoid abrasive scrubbing

A tested method to avoid

In King Arthur Baking’s 2022 test, pan spray dusted with confectioners’ sugar caused the cake to stick badly. The article attributes the result to cornstarch in the confectioners’ sugar mixing with liquid from the batter and becoming gluey.

This was a test result using Chef Zeb’s Hot Milk Cake in a six-inch round pan, not a universal result for every formula or pan. It is nevertheless a useful caution: do not assume that adding confectioners’ sugar to a sprayed pan improves release. Use parchment, spray, shortening, or a recipe-approved flour coating instead.

What the evidence supports

King Arthur Baking’s article “Baking trials: What’s the best way to prep your cake pan to prevent sticking?” was published August 29, 2022, and compared a dozen preparation methods. Its result supports parchment plus pan spray as a practical default for standard pans, but it does not establish a guarantee for every cake recipe, pan material, pan shape, or oven.

The Bundt-specific recommendations come from King Arthur Baking’s “How to prevent Bundt cakes from sticking,” published January 22, 2017. Wilton’s “Cake Bakeware 101: How to Prepare a Cake Pan and More” supplies the spray, parchment, and butter-and-flour directions, while its shaped-cake instructions describe shortening, flour-based spray, vegetable-oil spray, and Cake Release as options. These sources do not provide a controlled head-to-head result across all bakeware materials and recipes, so the pan type and manufacturer’s instructions still matter.

Frequently asked questions

Do I need to grease a nonstick cake pan?

Yes. Nonstick bakeware reduces adhesion but does not guarantee release; cake batter can still bond during baking. For a flat pan, use parchment on the base and spray the sides. For a Bundt pan, coat every recess and the center tube, even when the interior is labeled nonstick.

Can I use parchment in a Bundt pan?

Parchment is suited to the flat base of a round, square, or rectangular pan. It cannot cover the flutes and center tube of a Bundt pan, so shaped pans require a complete coating of nonstick spray or shortening, applied carefully to every recess.

Is butter and flour better than baking spray?

Neither is universally best. Wilton supports both approaches for cake pans. Butter and flour can work when every corner is covered, while spray is quicker and avoids a loose flour film. For a particular Bundt pan, follow its instructions because flour may leave a dry coating or release less well on some nonstick surfaces.

Why did my Bundt spray run to the bottom?

Spray can move down the sloped sides and pool if the pan sits after greasing. Grease the pan immediately before pouring in the batter. If the design is intricate, use a pastry brush with melted shortening to place a thin, even film in the grooves and tube.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

How much flour should remain after flouring a pan?

Only enough to cover the buttered surface. Rotate the pan to distribute flour, then tap out the excess. A thick leftover layer can show on the cake as a dry white film. If the pan or recipe recommends a non-flour release product, use that instead.

What should I do if spray residue has become sticky?

Wash the pan in warm, soapy water while it is still warm, using a gentle sponge or cloth. Spray residue can become tacky as it cools and build up. Avoid abrasive tools that could damage a nonstick finish.

Does pan size affect sticking?

It can affect how much support surrounds the cake, particularly in a Bundt pan. King Arthur Baking cautions that a substantially larger pan may leave a delicate cake with less support. Match the recipe’s stated pan size or capacity and use bakeware in good condition.

Can confectioners’ sugar replace flour in a prepared pan?

Do not assume so. In King Arthur Baking’s 2022 trial, pan spray dusted with confectioners’ sugar produced severe sticking in the tested cake; cornstarch in the sugar became gluey when mixed with batter liquid. Use parchment, spray, shortening, or a coating specifically named by the recipe.

Quick preparation checklist

  • Is the pan flat-bottomed or intricately shaped?
  • Does the recipe specify a pan size or a particular release coating?
  • For a flat pan, is the base fully covered with parchment?
  • Are the sides, corners, grooves, and center tube completely coated?
  • For a Bundt pan, did you grease immediately before adding batter?
  • Is the pan in good condition and the correct capacity?
  • After removal, will you wash sprayed nonstick bakeware while it is still warm?

For most layer cakes, parchment on the base and spray on the sides is the simplest dependable setup. For Bundt and novelty pans, meticulous coverage—not merely the word “nonstick” on the label—is what determines whether the finished cake can leave the pan intact.
