You can ferment fruit scraps into a vinegar-like condiment, but the available university-extension method is for cider made from ripe apples—not a tested scraps-and-water recipe. It does not establish a fruit-scrap ratio, finished acidity, or safe use for preserving food. The process itself has two stages: yeast turns fruit sugars into alcohol, then acetic acid fermentation turns that alcohol into acetic acid.

What you can—and cannot—make from scraps

Apple peels and cores contain sugars that may support fermentation, but the cited instructions from Ohio State University Extension start with clean cider pressed from ripe apples. They do not give a validated fruit-scrap-only recipe, a scrap-to-water ratio, or a reliable way to predict the acidity of a finished batch. Treat a scraps-based version as an experiment for culinary flavoring, not as a proven vinegar recipe.

The underlying fermentation has two stages. Yeast first converts sugars into alcohol; acetic acid bacteria then convert alcohol into acetic acid. The cider method calls for access to oxygen during fermentation, so it uses a breathable cover rather than a sealed lid.

Equipment and ingredients

  • Clean fruit scraps, such as apple peels and cores. These are an experimental starting material, not the extension method’s specified ingredient.
  • A clean, non-metal vessel. Ohio State lists glass, plastic, wood, enamel, and stainless steel as suitable materials; acidic liquid can corrode reactive metal or aluminum.
  • Cheesecloth or filter paper to cover the vessel while allowing air in. Secure it so insects and debris stay out.
  • A clean spoon for daily stirring.
  • Fine cheesecloth, filter paper, or a coffee filter for straining after fermentation.

How to try a scraps-based batch

The steps below adapt the cider method’s handling conditions; they do not supply a tested scraps formula. No specific quantity of scraps or water, guaranteed fermentation time, or finished acidity can be given for this adaptation.

  • 【Upgraded Airlock & Weight System】Our dual-channel airlocks work with the tight-sealing plastic fermentation lids to maintain a stable, low-oxygen environment. The lead-free glass fermentation weights are non-porous and food-safe, keeping vegetables fully submerged for safe, consistent, and flavorful results in every batch.
  1. Prepare the vessel. Wash it and use a non-metal material such as glass. Avoid reactive metal and aluminum in contact with the fermenting liquid.
  2. Add the scraps. Use clean fruit scraps. Because the extension method begins with pressed cider rather than scraps, it does not establish how much water to add or how to calculate a batch size.
  3. Cover for airflow. Keep the opening covered with cheesecloth or filter paper rather than closing it with an airtight lid. In the cider method, containers are filled to about three-quarters capacity.
  4. Manage the fermentation conditions. The cited cider process is kept away from direct sunlight, stirred daily, and held at 60–80°F. These are cider-method instructions, not validated performance specifications for a scraps batch.
  5. Watch for signs of fermentation, not proof of acidity. Ohio State’s cider guidance describes a vinegar-like smell near the end and suggests tasting samples to judge desired strength. Smell, taste, elapsed time, or a visible “mother” cannot verify acidity or make a batch safe for canning.
  6. Strain when you are done. Filter through fine cheesecloth or filter paper; the extension source says a coffee filter can work. Its cider guidance says filtering removes the mother and helps prevent further fermentation or spoilage.

How long does homemade vinegar take?

Ohio State University Extension says its cider method takes about 3–4 weeks for full fermentation. That is an approximate timeline for clean cider made from ripe apples under the method’s conditions, not a reliable promise for fruit scraps. The source advises checking for a vinegar-like smell near the end and tasting samples daily to decide when the cider has the desired strength.

Storage and intended use

The cider instructions recommend capped containers for storage and describe pasteurizing before bottling in sterilized bottles, followed by a hot-water bath, to support long-term storage. They do not establish a shelf life for a fruit-scrap adaptation, so do not assume these steps guarantee one.

Use an experimental batch only as a culinary flavoring if you choose to make it. Do not use it for pickling or canning: homemade vinegar acidity varies, and sensory checks cannot establish the acidity needed for safe preservation.

Why homemade vinegar is not suitable for canning

Penn State Extension says vinegar acidity is inconsistent when made at home. For home food preservation, use vinegar labeled 5% acidity and follow a tested recipe. That 5% label requirement applies to standardized vinegar used in preservation; it is not a measurement or expected result for homemade fruit-scrap vinegar. Penn State’s guidance is direct: “Do not use homemade vinegar or vinegar of unknown acidity in pickling.” See Penn State Extension’s advice about vinegar and its canning and freezing questions and answers.

What the tested cider method says

For a recipe grounded in the extension instructions, use clean cider made from ripe apples rather than substituting scraps. Ohio State University Extension’s method, hosted by Penn State Extension, describes washing ripe apples, crushing them, and straining off the juice. Cultivated yeast is optional and may speed fermentation; the source does not recommend bread yeast. Follow the full directions at Making Cider Vinegar at Home.
