If your recipe includes besan in the gravy, whisk it into the curd gradually until the mixture is uniform. These steps reduce lumps and help limit splitting, though they cannot guarantee curd will never separate.
Why curd gravy gets lumpy or splits
Besan ki sabji, also called gatte ki sabji, pairs gram-flour dumplings with spiced curd gravy. Recipes vary, but two different problems can affect the sauce: dry besan pockets make it lumpy, while adding curd to excessive heat or heating it too abruptly can make it separate. A smooth mixture and gentle, steady heating address those problems at their respective stages.

Dassana Amit’s gatte ki sabji recipe recommends full-fat curd for its version and warns that toned- or skim-milk curd may split more readily. This is recipe guidance, not a universal result established by comparative testing.
How to make the gravy smooth
- Whisk the curd first. In a bowl, whisk it until completely smooth before adding it to the pan. If your version uses besan in the gravy, add the besan gradually while whisking; then whisk in the recipe’s liquid until there are no dry pockets. A related Gujarati kadhi method likewise blends yogurt, besan, and water until smooth. Kadhi and gatte ki sabji are different dishes, but this is a useful technique for a yogurt-besan mixture.
- Cook the spice base before adding curd. Prepare the spices and other gravy ingredients according to your recipe. When the base is ready, turn off the heat before adding the whisked curd mixture.
- Stir, then warm gently. Mix the curd into the base promptly. Return the pan to low heat and stir continuously as the gravy warms. Avoid bringing it to a rolling boil; the specialist NNWA technique notes advise a gentle simmer and steady stirring. Do not add cold water directly to the hot curd gravy.
- Adjust the consistency gradually. Add reserved gatte cooking water a little at a time, stirring after each addition. It can loosen the sauce while contributing starch from the dumplings. If you do not have enough, use water, adding it gradually until the gravy reaches the thickness you want.
- Add the cooked gatte and finish gently. Simmer until the gravy thickens slightly, then stop before it becomes thicker than you want to serve. The cited recipe notes that the gravy thickens further as it cools.
Choose the right adjustment for your gravy
| Choice | What it does | How to use it |
|---|---|---|
| Full-fat or lower-fat curd | The cited gatte ki sabji recipe favors full-fat curd for its version and cautions that toned or skim curd may split more readily. | Use the curd specified by your chosen recipe; this recommendation is not a guarantee against splitting. |
| Besan in the gravy or careful heat handling | Besan thickens a yogurt gravy and can help prevent separation. Heat control and the order of adding curd still matter. | If besan is part of your recipe, whisk it thoroughly into the curd. Keep the heat gentle either way; do not assume there is one universal curd-to-besan ratio. |
| Reserved gatte water or fresh water | Reserved cooking water can add starch and flavor as it loosens the gravy; fresh water also loosens it. | Add either liquid in small amounts and stop at the desired consistency. |
Fix common gravy problems
There are flour lumps before cooking
Whisk the besan into the curd gradually, then add the recipe’s liquid while whisking. If lumps remain, strain the mixture as a practical rescue before adding it to the pan.

The curd is separating in the pan
Lower the heat and keep stirring. For the next addition, take the pan off the heat before adding the whisked curd, then return it to low heat. Besan may help stabilize a yogurt gravy, but gentle heating and the addition sequence remain important.
The gravy is too thick
Stir in warm reserved gatte water or warm water a little at a time until the sauce loosens. Gradual additions make it easier to stop at the right consistency.

Keep gravy texture separate from gatte texture
Hard gatte are a dumpling problem, not a sign that the curd gravy is lumpy. The cited recipe guidance links hard gatte to overworked dough or excessive boiling; it recommends a crack-free, semi-soft dough and cooking the dumplings until they float. Follow the dumpling method in your chosen recipe rather than trying to correct their texture by changing the gravy.
